Luckily I had borrowed her cookbook,&nbsp;<i><a href=" to the Grain</a>,&nbsp;</i>from a friend so I had the recipe in hand.<br /> <br /> Her cookbook is organized by the types of whole grain flours she uses in her recipes.&nbsp;Amaranth, barley, buckwheat, corn, kamut, multigrain, oat, quinoa, rye, spelt, and teff. All of the recipes sound amazing, like figgy buckwheat scones, quinoa and beet pancakes, olive oil cake, or apricot boysenberry tarts. It's a great cookbook to bake from and it will get you to buy whole grain flours you haven't used before.<br /> <a href="; imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" src="; /></a>Kim uses whole wheat flour, but I used spelt instead and they still turned out magical. The perfect salty and sweet combination, as my husband says. If you don't own a kitchen aid mixer, don't sweat. A good sauce adds so much flavor to a dish, and I make sure to savor every last drop.<br /> <br /> When I first encountered romesco sauce I was blown away. Where has this bold, smokey goodness been all my life? Roasted bell peppers. Garlic. Hazelnuts. I wanted to (and have) eaten it on everything from omelets to potatoes to <a href="2012/02/polenta-cakes-braised-chard-with.html">polenta cakes</a> to sandwiches to spoonfuls by itself.<br /> <a href="; imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" src="; /></a>I was excited to see that this week's Food Matters Project was a recipe for romesco. Then I generously topped them with romesco before digging into a bowl myself. This is the perfect condiment for an omelet with a side of roasted potatoes and cold brew on a lazy weekend morning.<br /> <br /> <b>Romesco sauce</b><br /> <i><span class="Apple-style-span" style="font-size: x-small;">Adapted from The Food Matters Cookbook</span></i><br /> 2 red bell peppers<br /> 1 medium tomato (or a handful of cherry tomatoes)<br /> 1/4 c hazelnuts<br /> 2 garlic cloves, minced<br /> 1/2 c parsley<br /> 1/4 tsp smoked paprika<br /> 1/4 tsp red chili flakes<br /> 1/4 tsp salt<br /> fresh cracked pepper<br /> 2-3 tbsp red wine vinegar<br /> 2 tbsp olive (or walnut) oil<br /> parsley to garnish<br /> <br /> Preheat your oven to 400. Cut the tomato into wedges (or halve the cherry tomatoes) and drizzle with olive oil, salt, pepper. Add tomatoes to a baking sheet along with the two bell peppers. Roast for about 30 minutes. The bell peppers should be browned and starting to blacken in spots. Remove from oven, put into a plastic freezer bag, and seal. Set aside and let cool. Remove tomatoes from the oven and let cool on the baking sheet.<br /> <br /> Keep the oven on and toss the hazelnuts onto a baking sheet. Bake for 8 minutes or until they start to release their sweet, nutty smell. Remove from the oven and put onto a kitchen towel. Gently cover with the other side of the towel and lightly rub the hazelnuts, so some of their skin will fall off. Set aside.<br /> <br /> After the peppers have had time to cool, remove from the plastic bag and peel their skins off. Remove the stem and the seeds inside. Cut into strips.<br /> <br /> Mix all the ingredients, except the oil into a food processor. Process until smooth. Drizzle in the olive (or walnut) oil and taste for salt. Cherry, sungold, romas, early girls, and a variety of heirloom varieties start to show up at the farmers markets in NC late June.&nbsp;A sun-ripened tomato in the heat of summer is far superior to the ones you find at the supermarket all year long. You can definitely tell a difference in taste and appearance. Tomatoes grown by local farms come in different shapes, sizes, and colors. The store-bought ones lack in flavor as well as vitamins and minerals. I don't purchase tomatoes in the winter unless they're heirloom or organic from Whole Foods or grown in hothouses by local farmers.<br /> <div class="separator" style="clear: both; text-align: center;"> <a href="; imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" src="; /></a></div> I love tomatoes and always have. Eating a tomato sandwich in the heat of the summer sun was one of my favorite sandwiches as a kid. I didn't think much about where that tomato came from, but I knew it was special, since we only ate tomato sandwiches in the summer. As an adult, I pay close attention to where our food comes from. That's why I joined a CSA and support my local farmers markets as much as possible.<br /> <br /> Nicole at <a href=" Giving Table</a> has encouraged food bloggers to raise awareness about the modern day slavery that takes place in U.S. tomato fields. </b><br /> Slavery is not just happening overseas. Chief Assistant U.S. Attorney Douglas Molloy once called Florida’s tomato fields “ground zero” for modern-day slavery in the United States. In the past 15 years, over 1,000 people have been freed from slavery in U.S. tomato fields.<br /> <br /> <b>The Solution</b><br /> 
Recipe for Change–a campaign led by International Justice Mission in partnership with the <a href=" Food Standards Council</a> and the Coalition of Immokalee Workers–is targeting three major supermarket chains this summer (Ahold, Publix and Kroger’s), and asking its CEOs to support the <a href=" Food Program</a>. Corporations that join agree to pay a small price increase for fairly harvested tomatoes (1.5 cents more per pound), and promise to shift purchases to the Florida tomato growers who abide by these higher standards–and away from those who won’t.<br /> <br /> Major fast food companies, like McDonalds and Subway, have already endorsed the <a href=" Food Program</a>, but the largest U.S. supermarket chains have yet to support this collaborative effort to eradicate modern-day slavery.<br /> <br /> <b>Ways to take action</b><br /> Supermarkets can help eliminate slavery and other serious abuses from the tomato supply chain when they join the Fair Food Program. But in order to change its policies, CEOs need pressure from consumers.<br /> <br /> Please take 30 seconds, raise your voice, and <a href=" your name</a> to help ensure that supermarket tomatoes are slave-free! If you like your gazpacho thinner, add half a cup of tomato juice.<br /> <br /> <b>Gazpacho!</b><br /> 2 cups tomatoes, diced<br /> 3/4-1 c watermelon chunks<br /> 1 jalapeño, diced (optional)<br /> half of a red onion, diced<br /> 1 small cucumber with skin, diced small<br /> 1 small bell paper, diced<br /> 1/4 tsp chili powder<br /> 1/4 tsp cayenne<br /> 1/4 sea salt<br /> 2-3 tbsp red wine vinegar<br /> 1 tbsp olive oil<br /> jalapeño slices to garnish<br /> cilantro to garnish<br /> <br /> Put all the ingredients in a food processor, except the olive oil. Blend for 10-15 seconds for a chunkier soup, and longer for a thinner soup. Slowly drizzle in the oil from the top of the processor. Put the bell pepper onto a baking sheet. Roast the bell pepper whole until it's browned all over and starts to blacken in places. This should take 30-45 minutes depending on the size of your pepper. Remove from heat and put into a sealed plastic bag. Once it's cool to touch, remove from the bag, and peel the skin off the pepper. Dice the pepper into small pieces. Do this step ahead of time. It can also be done the day before.<br /> <br /> Heat olive oil over medium heat. When it's warm, add the onion, jalapeño, and salt. Stir often, cooking until the onions are translucent. Add the garlic, chili powder, cumin, oregano, coriander, roasted red pepper, and half of the cilantro. Cook until the spices are fragrant. Add the beans and their liquid (from the can or saved from cooking them). Cook over low heat for 20-25 minutes. Remove from heat and add the remaining cilantro and a squeeze of lime.<br /> <br /> <b>Sauteed summer squash &amp; zucchini</b><br /> 1 tbsp olive oil<br /> 1/4 of a red onion<br /> 1 summer squash, sliced thinly into rounds<br /> <div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"> 1 zucchini, sliced thinly into rounds</div> <div> 2 garlic cloves, minced</div> <div> <br /></div> <div> Heat olive oil over medium heat. There's no escaping it, unless a thunderstorm pops up and cools it down temporarily. It's the type of heat you don't really want to do anything in. I've lived in NC all my life, but the heat still gets to me.&nbsp;These days I cool down with bowls of gazpacho (recipe next week!) and watermelon.<br /> <div class="separator" style="clear: both; text-align: center;"> <a href="; imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" src="; /></a></div> This recipe happened because we found ourselves with two watermelons. Not the enormous oblong variety where you need two hands to hold it, but more the size of soccer balls. I decided to puree half of one of the watermelons, straining out the seeds and flesh, to make juice. From there I topped it with ice, soda, and limes. Cold and refreshing. No additional sugar needed. Fill up an ice cube tray or a small ziplock bag to freeze the rest for a later day.<br /> <br /> This is one of my favorite, easy summer meals when I don't have time to think about what's for dinner. If you have pesto this salad can be made in less than half an hour. We're big pesto fans, so I usually have some made.<br /> <br /> Simply cook Israeli couscous according to the package. When it's done, mix a few spoonfuls of pesto into the hot grains (substitute millet for the couscous to make this gluten-free). Sometimes I mix in sautéed onions, garlic, and diced zucchini, but I think it tastes best eaten cold the next day with a large mixed salad. O post Em assembleia Geral, categoria docente define estratégias para a defesa da Universidade Pública. apareceu primeiro em ADUFPI. ]]> Na manhã desta segunda-feira, 28 de setembro de 2026, a Diretoria da ADUFPI realizou uma Assembleia Geral Extraordinária com pauta única: deliberar sobre ações de enfrentamento à extrema direita e de defesa da Universidade Pública.   A atividade contou com a participação de representantes da base e de coordenações regionais da ADUFPI, que discutiram o atual cenário político e os desafios colocados para a universidade pública, a democracia, os sindicatos e os direitos sociais.   Durante a assembleia, os(as) participantes destacaram a necessidade de ampliar a mobilização da categoria e de fortalecer a defesa da Universidade Pública diante do cenário eleitoral. Esse GT tem o objetivo de discutir as particularidades das universidades/campi que estão em regiões de fronteira ou que têm multicampia. A multicampia se manifesta nas universidades públicas brasileiras de várias formas, e isso tem implicações diretas na operacionalização do trabalho docente, assim como na obtenção e na garantia de direitos inerentes à carreira docente. Nesse contexto, trazer essas discussões para questões que limitam o exercício da profissão e da carreira docente se torna um ponto importante dentro da categoria. Assim, foi apresentado um painel cujo tema era as condições de trabalho sob o olhar do plurilinguismo e as dificuldades do tripé em ensino, pesquisa e extensão. Foram trazidas as dificuldades que os campi/universidades enfrentam sob a questão da linguagem na comunicação e na prática docente, já que as universidades recebem alunos de outros países e outras regiões, mas a universidade, assim como o corpo docente, não está preparada para acolher e, ao mesmo tempo, ofertar uma língua que comunique de forma efetiva. Isso se dá de várias formas, porque, em regiões de fronteira, como ocorre na UNIPAMPA, há dificuldades relacionadas às línguas portuguesa e espanhola e, mais ao norte, na UFRR, há limitações relacionadas aos povos originários em sua diversidade de formas de se comunicar. Os principais problemas abordados estão na falta de professores preparados para lidar com as condições linguísticas. Há também a difícil inserção de perfis de vagas que contemplem a valorização da linguagem originária. Além disso, existe a dificuldade de praticar ensino, pesquisa e extensão nesses campi que estão em regiões de fronteira, já que trabalhar requer deslocamento para outros países, o que passa a ter limitações de aspecto legal (seguro de transporte, por exemplo). Além disso, as zonas de fronteira são caracterizadas também pela violência, que se manifesta de várias formas, e a condição de trabalho docente está submetida a essas formas de violência. Foi discutida também a proposição de um protocolo de desenvolvimento da carreira docente. Esse protocolo é uma proposição de texto para o próximo Congresso do ANDES, que vai acontecer em Curitiba, em janeiro. Por ser uma ação do GT Carreira, a discussão foi conjunta com o GT-MultiFront. Esse encaminhamento de protocolo visa à avaliação das atividades docentes para o desenvolvimento da carreira, devendo sempre contemplar o conjunto de atividades laborais dos docentes, para além da indissociabilidade do ensino-pesquisa-extensão, mas também com vistas à inclusão, à justiça social e ambiental, bem como à ampliação e à socialização do saber e da cultura. Nesse contexto, defende-se englobar as particularidades de todo trabalho nas diferentes realidades, como: atividades indissociáveis de ensino, pesquisa e extensão; atividades de internacionalização, inovação e desenvolvimento institucional; atividades de capacitação, qualificação e formação continuada; atividades de administração, direção, assessoramento, chefia, coordenação e assistência; e, por fim, atividades sindicais, sociais, culturais, associativas e comunitárias. Nessas atividades devem estar contempladas as realidades da prática ou do exercício da docência na multicampia e as diferentes formas que os campi se manifestam. Vale mencionar a valorização de atividades para a efetiva implementação das políticas de acessibilidade e de ações afirmativas dentro das universidades, que passam tanto pelo direito do aluno como também pelo direito dos/as docentes. Quanto ao processo de expansão das IFEs e aos impactos para o trabalho docente em contexto de multicampia e fronteira, foram apresentadas as limitações, os desafios e as consequências que a expansão das universidades causa. A exemplo das dificuldades de permanência de docentes e técnicos, evasão, baixa demanda, estrutura física precária, ausência de servidores e desafios à atividade docente. Tais condições implicam as condições de trabalho docente, que se manifestam pelas dimensões econômica, ambiental, geográfica, de infraestrutura, saúde, segurança, profissional e familiar/afetiva, que conduzem a elevadas rotatividades docentes, concursos esvaziados, pressão sobre o custo de vida, comprometimento de ensino/pesquisa/extensão, riscos à saúde e sobrecarga. Nesse sentido, foram elencadas como propostas de valorização: o adicional de Atividades Penosas — fundamentado no art. 7º, XXIII, da CF/88 e no art. 71 da Lei 8.112/90 (servidores em zona de fronteira ou localidades com condições de vida que justifiquem). O ANDES defende incluir, além da faixa de fronteira, a Amazônia Legal e o Semiárido Nordestino. Hoje, os servidores civis do Executivo são os únicos que não recebem o adicional (MPU, PJ e militares já regulamentaram); progressão/promoção diferenciada na carreira para zona de fronteira e locais de difícil fixação; e Indenização de Fronteira — instituída pela Lei nº 12.855/2013 (R$ 91/dia) e ampliada pela MP nº 1.375/2026, que inclui docentes e técnicos-administrativos, insere a Amazônia Legal como critério. Além dos informes sobre as ações do sindicato, a atividade possibilitou o aprofundamento de questões locais, como a minuta de regulamentação da carreira EBTT, a paridade, Remoção Docente e a regulamentação da Comissão que trata sobre transferência de docentes por decisão judicial ou motivo de saúde  no âmbito da UFPI, além de tratar sobre assuntos inerentes à Casa Docente. Sobre a minuta de regulamentação da carreira EBTT, depois do que fora discutido, foi encaminhado a formação de uma comissão para analisar a referida minuta. A comissão será formada por  professores dos colégios técnicos no âmbito da UFPI para a análise do texto e sistematização das demandas apresentadas pela categoria. A discussão sobre a paridade também esteve entre os temas centrais da atividade. O debate considerou urgente e necessária a ampliação da participação dos diferentes segmentos da comunidade universitária nos processos decisórios da UFPI, tema que envolve a construção de mecanismos institucionais mais democráticos e representativos.  Outro ponto abordado foi o processo dos editais de remoção docente. A discussão destacou a necessidade de revisão da resolução que regulamenta os procedimentos de remoção na UFPI, especialmente para reduzir a margem de discricionariedade nas decisões e estabelecer critérios mais objetivos. A necessidade de aperfeiçoamento das regras de remoção já vem sendo discutida pela ADUFPI. Em reunião realizada anteriormente com a Superintendência de Recursos Humanos da UFPI, o sindicato já havia apresentado propostas relacionadas à definição de critérios claros para os perfis das vagas e à transparência das decisões. Os pontos discutidos em Bom Jesus reforçam a importância da participação das regionais na construção das pautas que chegam às instâncias da Universidade. A Diretoria ADUFPI seguirá acompanhando a tramitação das propostas e buscando garantir que alterações nas normas que afetam a carreira e as condições de trabalho sejam construídas com critérios bem definidos, transparência e participação da categoria. De acordo com a proposta apresentada à categoria, o reajuste previsto é de 5,80%. Durante a reunião, os docentes discutiram o percentual apresentado e sua relação com os serviços oferecidos pela operadora, além da necessidade de buscar uma alternativa que considere a qualidade, a cobertura e as condições de atendimento disponibilizadas pelo plano. Como encaminhamento, após as considerações apresentadas pelos presentes, foi formada uma comissão de docentes que ficará responsável por estudar a proposta, dialogar e elaborar uma contraproposta a ser apresentada. A comissão é composta pela diretoria da ADUFPI, com a Professora Escolástica Santos, presidenta da ADUFPI; Bárbara Johas, vice-presidenta e Kelson Vieira, diretor financeiro como membros titulares e, representando a base docente, Jairo de Carvalho Guimarães, Manoel Vieira de Matos Neto e Ana Beatriz Seraine. Destacamos que a realização desta reunião teve como objetivo manter os docentes informados sobre as negociações e construir coletivamente os próximos encaminhamentos. As informações coletadas contribuirão para identificar perfis, necessidades, dificuldades, barreiras e níveis de conhecimento sobre direitos, além de demandas relacionadas às condições de trabalho, acessibilidade, inclusão, permanência, redução de jornada ou carga horária, políticas de ações afirmativas, combate ao racismo, ao capacitismo, à discriminação, às diferentes formas de violência e ao assédio. O levantamento busca, assim, produzir subsídios para o planejamento e o fortalecimento das ações e pautas de atuação sindical da ADUFPI e do  GTPCEGDS . O formulário abaixo poderá envolver o fornecimento de dados pessoais sensíveis. Por essa razão, todas as informações serão tratadas com sigilo, responsabilidade, acesso restrito e medidas adequadas de proteção, em conformidade com a Lei Geral de Proteção de Dados Pessoais – LGPD (Lei nº 13.709/2018).
