Yakima, Washington is in the middle of the 2026 hop harvest. It’s a busy time at Bale Breaker where not only is the taproom open for business but the hop farms on the property are also picking at full speed. Kevin Smith is the brewmaster and co-founder of Bale Breaker and joins guest host Don Tse on this episode of Drink Beer, Think Beer.

Crafting fresh-off-the-farm brews from the middle of a hop field, Bale Breaker Brewing Company is a family-owned brewery located in the Yakima Valley. SAN DIEGO, CA: Pure Project Brewing has taken another major step in its commitment to environmental stewardship with the installation of a new CO2 recapture system from Dalum Beverage Equipment, a Denmark-based pioneer in craft-scale carbon recovery technology. The state-of-the-art equipment allows the brewery to capture biogenic CO2 produced naturally during fermentation, which is then cleaned, condensed, and reused on-site for producing and serving beer.

Since installing the equipment in February 2026, Pure Project has recaptured and reused 34,000 kg (over 74,500 lbs) of CO2 gas, which would have otherwise been released into the atmosphere. To put this impact in perspective, the reduction is equivalent to the emissions from burning nearly 3,850 gallons of gasoline.

To celebrate this sustainability milestone, Pure Project has teamed up with Dalum and fellow San Diego craft brewery Societe Brewing Company to create Closed Loops, a collaborative hazy IPA brewed with recaptured CO2. The launch of Closed Loops coincides with Societe’s successful integration of Dalum’s CO2 recapture equipment into its own brewing facility, laying the groundwork for a meaningful craft brewing partnership centered on sustainable innovation.

“We’re proud to see our CO2 recovery technology playing a role in a collaboration like this between two staple San Diego breweries,” said Ashley Hanes, U.S. Sales and Service Representative at Dalum Beverage Equipment. “It’s especially rewarding when sustainability work shows up in a beer people are excited to drink. Pure Project and Societe have been great partners in putting the technology to work, and we’re glad to celebrate this release alongside them.” 

The shared commitment to environmental technology inspired the collaboration behind Closed Loops hazy IPA. By recapturing the CO2 on-site, both breweries significantly lower their dependence on commercially produced CO2, further reducing emissions from freight transport and creating a closed-loop system directly inside each brewery’s brewing facility.

“When we started this project, we knew we wanted to do better for the environment, but recapturing over 74,500 pounds of CO2 in such a short window has really shown us what is possible in making brewing operations more sustainable,” said Winslow Sawyer, Co-Founder and Brewer at Pure Project. “Running a true closed-loop system in our own brewery has been a long-time goal of ours, and sharing this moment and win for the planet with local peers at Societe makes it that much more rewarding.”

Closed Loops stands as a liquid celebration of this milestone. Crafted using Tropical Fusion, Mosaic, and Strata Cryo hops, this hazy IPA pours a murky pale yellow color and delivers vibrant notes of grapefruit rind, cherry, and lemongrass, balanced by a soft mouthfeel and a smooth, clean finish.

Closed Loops is now available on draft and in 4-packs to go at all five Pure Project taprooms in San Diego County and at select retailers.

In a first for Wisconsin, New Glarus Brewing has kick-started a program to use treated water from their on campus water treatment facility to irrigate over 30,000 square feet of grass roof on their new Hilltop Addition, using water that would otherwise be wasted and omitting the need to use clean drinking water. The system saves over 2,000 gallons a day, or roughly 22,000 cans of Spotted Cow.

As part of New Glarus Brewing’s commitment to conserving Wisconsin’s natural resources, they operate a Wastewater Pretreatment Facility on site, where production water is pretreated before being released to the village. “This allows us to be good neighbors and not overburden our village’s water management system,” said News Glarus Brewing’s architect and Construction Manager Katherine May, who oversaw an expansion to the Pretreatment facility in 2018.

“Our new addition is built into the hill with the grass and natural landscape pulled over the top of the lowest level, creating a very unique grass roof design. Grass roofs are a well-respected, sustainable step as they insulate the building, lower heating and cooling energy use, diminish stormwater runoff, and improve air quality. We take it a step further by using our facility’s own treated water to irrigate the roof. We will become our own closed-loop sustainable system,” added May

In the process of seeking approval for this program from the Wisconsin Department of Natural Resources, New Glarus submitted nearly fifteen years of water quality test results, demonstrating their long-standing commitment to keeping Wisconsin’s water clean. “It’s always been our priority to brew world-class beer while taking care of our community and state,” added Company Founder, Deb Carey.

Before co-founding Single Hill Brewing, Turner cut his teeth in technical roles at Odell Brewing Co. and Yakima Chief Hops. One beer “gave us a vocabulary that includes the word pilsner for a style of beer, the word pilsner for a type of malt, and the word pilsner for a type of glassware,” observes the Prague-based writer Evan Rail. “No other brewery has had that type of impact,” he concludes. 

He isn’t exaggerating. It’s hard to argue that any other brewery or beer has had a greater impact on the world than Pilsner Urquell, the subject of this episode of One Iconic Beer.
