These are some of my favorite personal growth books that have made a real impact on my life.

Not in a trendy, “fix your whole life overnight” kind of way. More in the small, practical ways that actually matter.

Books that helped me think differently.
Books that helped me build better habits.
Books that helped me take more ownership of my life.
Books that helped me create more peace, discipline, confidence, and direction in different seasons.

Personal growth has been a big part of my story, especially through rebuilding, motherhood, starting over, and learning how to create a life that feels more intentional. I do not think one book changes everything, but I do believe the right book at the right time can shift the way you see yourself, your choices, and what is possible.

I put together a simple Amazon collage with some of the personal growth books I have loved most, so they are easy to browse in one place.

Beyond Orlando theme parks: hands-on, immersive, and surprisingly cool experiences for older kids

Orlando is known for its theme parks but if you’re traveling with teens, you quickly realize they want something a little different. Something interactive. Something they can talk about. Something that feels less like a kiddie attraction and more like an experience.

On our recent mini-vacay in Orlando, we set out to find museums that would actually hold a teenager’s attention and these three completely delivered. If you’re planning an Orlando trip with older kids, I suggest you add these to your list.

1. Titanic: The Artifact Exhibition

This was the museum I knew we had to visit.
My son has been fascinated with the Titanic since he was little—reading about it, watching documentaries, and wanting to understand every detail. He even dressed up as the Titanic captain for Halloween when he was 7… so this wasn’t just another stop for us, it was something he’s been connected to for years. And it absolutely lived up to that.

Titanic museum Orlando historical exhibit on International Drive

Each guest is given the identity of a real passenger, and as you move through the exhibit, you follow their story. For teens, this instantly turns history into something personal, but for us, it hit even deeper.

What makes it stand out:
-Full-scale recreation of the Grand Staircase
-Real artifacts recovered from the Titanic wreck
-Interactive storytelling with live actors in character
-A powerful ending where you discover your passenger’s fate

Why teens (and adults) love it:
It doesn’t feel like a history lesson, it feels real.
Watching my son take it all in after years of being interested in the Titanic made this experience even more meaningful. It’s immersive, emotional, and one of those exhibits that actually stays with you long after you leave.

Tips:
-Best for middle school and up due to the emotional depth
-Take your time, this isn’t a quick walkthrough
-Go early because it gets busy. This will allow you to not feel rushed to move along.

2. Orlando Auto Museum at Dezerland Park

This is one of the most unique (and massive) indoor attractions we visited in Orlando. The Auto Museum at Dezerland is home to one of the largest private auto collections in the world and it’s honestly impressive just how much is inside. It’s not just cars.

As you walk through, you’ll see everything from classic and rare vehicles to motorcycles, military vehicles, and even cars from movies like Batman and James Bond. What makes it even better is how it’s laid out. It is organized into different collections with over 2,000 vehicles, so it feels more like a series of themed exhibits not just one long showroom.

What makes it stand out:
-One of the largest private vehicle collections
-A wide variety of vehicles (cars, motorcycles, military, and more)
-Movie cars that teens will actually recognize
-Organized layout that makes it easy to explore

Why teens might love it:
This one really depends on your teen. If they’re into cars, engines, or anything related to transportation, this place will be fascinating. There’s so much to look at, and the variety keeps it interesting as you move through each section.

Even for teens who aren’t “car obsessed,” it’s still a unique experience to walk through. And even beyond the museum, Dezerland itself has a lot going on…like go-karts, axe throwing, pinball, and other indoor activities, so it can easily turn into a full outing instead of just one stop.

Tips:
-Give yourself more time than you think—you’ll keep finding new sections
-Great indoor option for hot or rainy days
-Pair it with other activities at Dezerland for a full outing

3. Museum of Illusions

If your teen loves taking photos, figuring things out, or just doing something completely different…this is one of the most fun stops in Orlando. The Museum of Illusions is fully interactive from start to finish. It’s not a place where you walk around quietly looking at exhibits; it’s a place where you step into them.

interactive illusions museum Orlando teen-friendly attraction

From the moment you walk in, everything is designed to challenge your perception: what you see, how you balance, and even how your brain processes space.

What makes it stand out:
-The spinning vortex tunnel that feels like the floor is moving under you
-Fun spaces that create wild photo opportunities
-Holograms, optical illusions, and brain puzzles throughout
-This is one of those places where your teen will actually put their phone to use—not just scroll it. Every room becomes a photo or video opportunity, and it’s surprisingly fun trying to figure out how each illusion works. You’ll see people laughing, posing, and re-taking photos to get it just right.

Why teens might love it:
It’s interactive, it’s visual, and it’s something they can share. Whether it’s creating content, solving the illusions, or just experiencing something that feels totally different, this is one of those stops that doesn’t feel like a “museum” at all.

If you want a full recap of what to expect, tips, and our experience, you can read my detailed post about Museum of Illusions here.

unique museums in Orlando for teens including Titanic exhibit and Museum of Illusions

Orlando will always be known for its theme parks but some of the most memorable moments on our trips come from experiences like these.

Each of these museums offered something different, and more importantly, something that actually kept us all engaged. From immersive storytelling to hands-on fun to unique collections, they gave us a way to slow down, explore, and enjoy something together outside of the usual theme park rush.

If you’re planning a trip with older kids, this is your reminder that some of the best experiences aren’t always the ones you expect.

And if you know of (or are part of) a museum or attraction that offers a unique, teen-friendly experience, I’m always looking to discover and feature more places like this as I continue to grow this series.

Looking for Something Different to Do with Teens in Orlando?

If you are like us and other Floridian families, you’ve done the theme parks many times (or maybe you just need a break from them while on a week long vacation), so finding something your teens will actually enjoy can feel like a challenge.

That’s exactly why we added the Museum of Illusions Orlando to our recent Orlando itinerary and it ended up being one of the most fun, unexpected highlights of the trip.

It’s interactive, fast-paced, and honestly… the kind of place where your teens will want to take pictures (which says a lot).

Why Teens Actually Love the Museum of Illusions

Let’s be honest; most teens don’t want to “walk through a museum.” Unless it happens to align with one of their childhood obsessions (like my son being a Titanic fan, so he LOVEd the Titanic Artifact exhibit).

Teenagers almost always want something they can do. And the Museum of Illusions most definitely delivers on that!

Here’s why it works so well for teens:
It’s hands-on – You’re not just looking… you’re interacting with every exhibit
It’s social-media worthy – Every room is basically built for photos and videos
It’s quick and engaging – No long lines, no all-day commitment
It feels different – Not your typical Orlando attraction

We loved working together to figure out how each illusion worked and even more, capturing the photos and videos to prove it. The museum is filled with a mix of rooms and exhibits designed to trick your eyes and your brain.

Museum of Illusions in Orlando | Mandy Carter | Acupful Family Blog

Some of our favorites:

The Vortex Tunnel
Looks simple… until you step inside.
It feels like the floor is moving and completely throws off your balance.

The Ames Room
Makes one person look giant and the other tiny, perfect for the entire family shots.

The Infinity Room
Lights and mirrors create a never-ending effect that’s really cool on video.

Puzzle & Brain Game Section
A quieter area where teens can slow down and challenge their minds.

Located at ICON Park = Make It a Full Day (or Night)

One of the best parts? It’s located at ICON Park, which makes it so easy to turn this into a full outing.
You can pair your visit with:
-Dinner at one of the many restaurants
-Riding The Wheel or Swings for incredible views of Orlando
-Other attractions like Madame Tassauds

It’s one of those places where you can plan a low-stress, all-in-one day or night, which is exactly what I’m always looking for when traveling with my kids.

Tips for Visiting the Museum of Illusions with Teens

Go earlier or later in the day for fewer crowds.
Charge your phone because you’ll take a LOT of photos and videos.
Let your teens lead; they’ll enjoy it more when they explore at their own pace.
Don’t rush it; some of the best moments come from figuring out the illusions.
Plan for about 1 to 1.5 hours inside the museum. It’s the perfect amount of time: Long enough to feel like you did something fun but short enough to keep teens engaged the whole time

Is It Worth It?

Yes! especially if you’re looking for something outside the typical Orlando itinerary.
The Museum of Illusions Orlando is:
✔ Teen-approved
✔ Unique and interactive
✔ Easy to fit into your day
✔ Perfect for capturing some cool images for their social.

Final Thoughts: A Perfect Break from Theme Parks

If your trip to Orlando needs a reset from long lines and all-day parks, this is it. It’s fun, different, and gives you a chance to just enjoy time together….laughing, taking photos, and doing something totally unexpected. And honestly, those are the moments your teens remember most.

One of the most important habits in my daily and weekly reset isn’t loud or flashy.
It’s quiet. It’s simple.
And it has changed my life more than almost anything else.

Reading.

I don’t read to escape my life. I read to lead it better.

Morning reading has become part of how I reset my mindset before a new day begins. Even a few chapters can shift how I think, respond, and show up as a mom, a woman, and a leader.

Last year, I leaned heavily into personal growth books. Some challenged me. Some stretched me. A few completely changed the way I make decisions. Below is a full list of what I read, the books that impacted me most, and what I’m prioritizing this year. Then I included my even longer list of books I plan to read in 2026!

📚 Personal Growth Books I Read Last Year

Here’s the complete list of growth-focused books I worked through last year:

Girl, Wash Your Face
Girl, Stop Apologizing
Lean In
No Excuses
The Compound Effect
Emotional Intelligence
The Total Money Makeover
Crucial Conversations

Every one of these brought something valuable, but a few stood out in a big way.

⭐ The Top 3 Books That Made the Biggest Impact Last Year

1. The Compound Effect, by Darren Hardy

My favorite book of the year and possibly of all time definitely goes to The Compound Effect.
This book completely reframed how I think about success. It reminded me that massive change doesn’t come from dramatic moments. It comes from small, consistent actions done over time. As a single mom, this mindset was everything.

No overnight pressure.
No comparison.
Just daily choices stacking up.

This book reinforced why routines, habits, and consistency matter more than motivation.

2. No Excuses, by Brian Tracey

My second favorite book No Excuses challenged me in the best way. It reinforced personal responsibility without shame. It helped me see where I was unconsciously giving my power away by waiting on perfect timing, perfect circumstances, or perfect energy. This book strengthened my self-trust and confidence in my ability to follow through even when things feel uncomfortable.

3. Crucial Conversations

Crucial Conversations helped me change how I approach difficult conversations, boundaries, and conflict.

As a woman and a single mom, learning how to communicate calmly, clearly, and confidently is a life skill. This book helped me pause, respond instead of react, and protect my peace without shutting down. It’s one I still reference often.

Growth books every female entrepreneur should read | Mandy Carter

📖 My Reading Goal for This Year

This year, I’m being very intentional with my growth.

My goal is to read at least two personal growth books per month.
Not to rush through them, but to actually apply what I’m learning.

I want my reading to support:
Calm routines
Strong habits
Financial confidence
Emotional awareness
Purposeful living
Healthy and Fit Lifestyle

📘 First Book Finished This Year

I already kicked off the year strong by finishing The Let Them Theory by Mel Robbins, and it was the perfect way to start.

This book was freeing, grounding, and empowering all at once. It reinforced the idea that peace often comes from releasing control, expectations, and unnecessary emotional weight.

It helped me refocus on what’s mine to manage and what isn’t. An incredible reset book for a new year or a new season of life.

📚 The Top 3 Books I’m Most Looking Forward to This Year

While my full reading list will grow as the year goes on, these are the types of books I’m prioritizing next:

  1. Books that deepen emotional intelligence and communication
  2. Books focused on habits, mindset, and long-term consistency
  3. Books that support financial clarity and confident decision-making

I’m choosing books that align with the life I’m building, not just the one I’m busy surviving.

On my Goodreads list for this year:
The 4-Hour Workweek, Never Split the Difference, Thinking Fast and Slow, Spark, Start with Why, The 100 Simple Secrets of Successful People, You can Heal Your Life, The Unteethered Souls, Steve Jobs, The Universe Has Your Back, The Secret and Manifest.

The ones I am most excited about are…
1. Start with Why: This one excited me because I’m not just building habits, routines, and structure. I am building a life with intention. This book seems to be all about clarity, purpose, and alignment, which mirrors my reset philosophy and the way I lead as a mom, coach, and content creator.

2. The Untethered Soul: This one is calling to me because I’ve learned that peace isn’t about controlling everything around me, it’s about understanding what’s happening within me. This book focuses on awareness, letting go of mental noise, and creating space between your thoughts and your reactions. It feels like the natural next step after Let Them and aligns deeply with my goal of living calmer, more grounded, and less reactive, especially as a single mom navigating a full life.

3. The 4-Hour Workweek: This book excites me because I’m no longer interested in being busy for the sake of being busy. I’m focused on building a life that allows for flexibility, freedom, and intentional use of my time. This book challenges traditional ideas around work, productivity, and success, and it aligns with my current season of refining how I work, earn, and protect my energy while still building something meaningful.

Why Reading Is Part of My Daily & Weekly Reset

Reading at least 10 pages daily helps me:
-Slow down
-Set intention
-Keeps my mind focused for the day(s) ahead

On Sundays, I read a few chapters instead of just ten pages. It is crazy how just a few chapters can change how the week feels. Growth doesn’t require huge blocks of time. It requires consistency and intention.

Read all about my Sunday Reset Routine that creates a calm and prepared week.

Final Thoughts

Personal growth isn’t about becoming someone else.
It’s about becoming more of who you already are. If you’re building a calmer, more intentional life, start with what you allow into your mind. Books have been one of the most powerful tools in my journey from survival mode to steady, grounded confidence. And they continue to shape how I show up every week.

If you want links to any of these books, I’ve made it easy to grab them all in one place.

A dessert-style recipe that actually supports energy, fullness, and consistency

I’ve never avoided sweets because I don’t like them.
I avoid most of them because I know how they make me feel.

Sugary desserts usually leave me sluggish, craving more, and wondering why I bothered in the first place. And as a busy single mom who wants to feel strong, confident, and energized, I’ve learned that the foods I choose need to work with my life, not against it.

That’s why I love recipes like this one.

This mango chia protein pudding tastes like dessert, but it’s built to support steady energy, fullness, and consistency. It’s indulgent without being heavy and intentional without feeling restrictive.

Even better, it’s something I can prep several days at once, which makes staying on track during busy weeks feel realistic instead of overwhelming.

Why This Recipe Works for a busy mom with fitness goals

This isn’t just a “healthy dessert.”
It works because it’s built around balance.

• It tastes like dessert without the crash
• It keeps me full and satisfied
• It supports steady energy instead of spikes
• It’s easy to prep ahead and grab when life is busy

This is the kind of recipe that helps you stay consistent without feeling like you’re constantly starting over.

The PFF Formula (Protein • Fiber • Fat)

One of the reasons this mango chia protein pudding actually works is because it follows what people refer to as the PFF formula. When meals include protein, fiber, and healthy fats, they tend to keep you fuller longer, support steady energy, and help reduce constant cravings.

Protein
This recipe combines protein from high-protein yogurt and chia seeds, which helps support muscle, keeps hunger in check, and makes this feel like real fuel instead of a snack that disappears too fast.

Fiber
The fiber from chia seeds slows digestion and helps stabilize blood sugar. That’s a huge reason this pudding feels so balanced and keeps you satisfied well past the initial bite.

Healthy Fats
Chia seeds provide plant-based omega-3 fats, which support overall metabolic health and help with inflammation. Healthy fats also play a role in satiety, meaning you feel satisfied instead of searching for more.

When all three are present, food works with your body instead of against it.

Mango Chia Protein Pudding Ingredients

• 1 cup high-protein yogurt, divided (I use Ratio coconut)
• 1½ tablespoons chia seeds
• ½ cup frozen mango, blended
• Unsweetened almond milk (to thin as needed)
• Additional blended mango for topping
• 1 tablespoon unsweetened coconut flakes
• Ratio granola for crunch

How to Make Mango Chia Protein Pudding

  1. Blend the frozen mango with a splash of unsweetened almond milk until smooth.
  2. In a bowl or storage container, mix half of the yogurt with the chia seeds and a portion of the blended mango.
  3. Add more almond milk if needed to reach your preferred consistency.
  4. Let the mixture sit in the fridge for at least 30 minutes, or overnight, so the chia seeds fully absorb and thicken.
  5. When ready to eat, top with additional blended mango, coconut flakes, and granola.

That’s it. Simple, flexible, and easy to adjust.

Make-Ahead Tip

I usually double or triple this recipe and portion it into containers for the next few days. Having something ready that feels like a treat makes it so much easier to stay consistent, especially during busy weeks.

FYI- Chia Seeds Are the Secret Ingredient

Chia seeds might be small, but they do a lot of heavy lifting in this recipe. They’re incredibly nutrient-dense and absorb liquid as they sit, which gives this pudding its thick, creamy texture without needing added sugar or fillers.

Chia seeds are also a complete plant-based protein, meaning they contain all nine essential amino acids. That matters because protein plays a big role in keeping you full and supporting muscle maintenance, especially as we get older.

They’re also packed with fiber, which slows digestion and helps support steady blood sugar levels. That’s a big reason this pudding keeps you satisfied instead of hungry an hour later.

And finally, chia seeds are rich in omega-3 fatty acids, which support heart health, inflammation balance, and overall metabolic function. That combination of protein, fiber, and healthy fats is exactly why chia-based recipes feel so grounding and satisfying.

As a single mom with a 12- and 14-year-old, mornings don’t come with the same chaos they did when my kids were younger, but they still carry weight. There are early alarms, school schedules, sports bags by the door, and the quiet responsibility of being the only adult setting the tone before everyone heads out. I’ve learned that a calm morning routine for moms isn’t about doing more — it’s about creating steadiness.

For a long time, I treated mornings like something to push through. If everyone made it out the door on time, that was success. But I started noticing how much the energy of the morning affected the rest of the day. When mornings felt frantic, everything felt harder. When they felt calm, the day unfolded more smoothly.

A Calm Morning Routine for Single Moms With Older Kids

What changed things wasn’t a strict routine. It was shifting my focus from productivity to presence. I stopped trying to cram everything into the early hours and started paying attention to how I wanted our mornings to feel. That small change created a morning rhythm that works for real life, not an idealized version of it.

Most mornings, I wake up before my kids, even if it’s only by fifteen or twenty minutes. As a single mom, that quiet time matters more than I realized at first. It gives me space to arrive in the day grounded instead of reactive. Sometimes that looks like sitting with coffee, stretching a little, or stepping outside for fresh air. Nothing elaborate — just enough to settle my nervous system before the house wakes up.

Movement has become part of that grounding, but I keep it intentionally simple. I’m not chasing a full workout first thing in the morning. Instead, I focus on consistency. Some days it’s a short walk, other days it’s light stretching or a few minutes of mobility. Starting the day connected to my body helps everything else feel more manageable.

What Our School Morning Routine Looks Like With Tweens and Teens

With older kids, a school morning routine is less about managing every step and more about holding the tone of the space. At 12 and 14, my kids are largely independent, but they still thrive on predictability. We keep wake-up times consistent, breakfast options simple, and the flow familiar. I don’t hover or rush them. I stay present and calm, knowing that steady energy does more than reminders ever could.

One of the biggest shifts I made was removing pressure that didn’t belong in the morning. I stopped overloading that time with decisions and rushing for things that weren’t truly urgent. Being the only parent means my energy sets the tone, and protecting my calm has become part of caring for my kids too.

Simple Tools That Support Calm Mornings for Busy Moms

A few simple choices support this rhythm and help mornings feel lighter — not because they’re fancy, but because they reduce the number of decisions that need to be made first thing in the day. I’ve learned that keeping things simple and budget-friendly makes it easier to stay consistent.

Budget-Friendly Morning Essentials I Use or Recommend

  • Simple planners and calendars for busy moms
  • Soft-glow lamps and lighting options for early mornings
  • Easy breakfast tools for quick school-day routines
  • Comfortable everyday basics that make mornings easier

As kids move into the tween and teen years, mornings become less about logistics and more about emotional tone. When mornings feel steady, conversations come easier, transitions are smoother, and everyone leaves the house in a better headspace. I’ve noticed that when I show up grounded, my kids walk out the door feeling more settled too — even on busy days.

Not every morning is calm. Some are rushed. Some feel heavier than others. But intention has changed the overall rhythm of our days. I no longer aim for perfect mornings. I aim for steady ones. And that shift has made a bigger difference than I ever expected.

If mornings feel draining right now, you don’t need to change everything at once. Start small. Wake up a few minutes earlier. Simplify one decision. Create one quiet moment that belongs just to you. Calm is built gradually, through small choices that add up over time.

If Mondays feel heavy, it’s usually not Monday’s fault.
I realized it was actually how my Sundays went that played a big role in the week…

For a long time, I treated Sundays like a recovery day from life. I’d rest, scroll, procrastinate, tell myself I’d “get it together this week,” and then wonder why the week felt chaotic before it even started.

Everything shifted when I stopped seeing Sunday as the end of the week or a rest day that didn’t count in the week’s plans and started seeing it as the foundation.

This isn’t about being perfect or productive all day long.
It’s about doing a some very intentional things that make the rest of the week feel calmer, lighter, and more supported.

Here’s what my Sundays look like and how you can make it work for your life too.

1. A Sunday Workout Sets the Tone for the Week

I don’t work out on Sundays to punish my body or “earn” anything.
I do it because my Sunday workout sets the tone for how I show up all week.

When I move my body on Sunday, Monday doesn’t feel optional. My energy is better, my mindset is stronger, and consistency feels natural instead of forced.

This doesn’t need to be intense. Though, I must admit this is my longest and hardest workout all week because I now prioritize Sundays as a self-care day and workouts are my personal favorite self-care activity.

But you can choose any level of movement that fits your goals: A walk, a lift, a cardio class, or a quick workout at home all count. The goal is simple: show up with deep intention.

2. I Prepare Healthy Meals While I’m Already in Gym Clothes

This one changed everything for me. When I’m already in gym clothes, because it reminds me not to snack while cooking, I go straight into cooking something healthy for the week. Nothing fancy. Just one or two meals and a snack that make it easier to eat well when life gets busy.

This removes decision fatigue during the week and keeps me from reaching for convenience food that doesn’t support how I want to feel. Healthy eating becomes easier when it’s prepared, not when it’s perfect

3. I Stock the Fridge With Intention on Sundays

I don’t aim for a fully stocked Pinterest fridge. Though that is my daughter’s goal.
I aim for a supportive fridge.

On Sundays, I make sure I have enough:
-Easy protein options
-Fresh produce I’ll actually eat
-Simple grab-and-go snacks
-A plan for lunch and dinners, even if it’s a loose one

When the fridge supports my goals, my week flows better. When it doesn’t, everything feels harder than it needs to be.

4. I Write My Priorities, Not Just My To-Do List

This is a big one. Instead of dumping a massive to-do list, I write:
-My top 3 priorities for the week
-What actually matters
-What can wait

This clears mental clutter and helps me focus on progress instead of pressure. When everything feels important, nothing gets done. Clarity really does create calm.

5. I Review My Schedule on Sundays Before the Week Starts

I take a few minutes to look at the week ahead so nothing surprises me.

I check for:
-Early morning meetings
-Late evening events
-Unusually busy days
-If any days I’ll need to find extra support

This allows me to prepare emotionally and practically. It turns reaction into intention.

6. I Read a Few Chapters of a Growth Book

On Sundays reading helps me reset my mindset before the week begins. I read daily each morning, but just a few pages. I use Sunday to knock out a few chapters!

I don’t rush it. I don’t force it. I slow down and enjoy it.

Even a few pages shifts how I think, how I react, and how I show up. Growth doesn’t happen in giant leaps.
It happens in quiet moments of consistency.

My goal for 2026 is to read 2 Personal Growth books a month! I set up a GoodReads account to keep track of my reading this year for the first time ever.
Check out my list of Personal Growth Books I read last year and goal for this year.

7. I Go to Bed Early So Monday Starts Calm

This might be the most underrated habit.

I protect my Sunday night sleep so Monday morning doesn’t feel rushed, chaotic, or exhausting. Waking up at 5am feels easier when I’ve honored rest the night before. Peace starts the night before.

Extra Tips to Make This Easier (Especially as a Busy Mom)

If Sundays feel overwhelming, here’s what helps:

  • Keep it simple. You don’t need to do everything.
  • Pick 3 habits and start there.
  • Stack habits together, like workout then cook.
  • Create routines you can repeat, not reinvent.

Consistency beats intensity every time.

My Favorite Products That Help Me Prepare Without Overwhelm

These are tools I genuinely use to simplify my Sundays and support my week:

  • A monthly / weekly planner to map priorities clearly. I am a write it down type of person. This is my favorite planner of all time.
  • Meal prep containers that make leftovers effortless. These are my favorite containers because there are so many sizes. They do not leak and you can microwave them and put in the dishwasher.
  • Fitness tools that remove excuses: power tower pull up and abs station, thick yoga mat, and adjustable dumbells
  • Simple kitchen essentials that save time: nutri-bullet , processor, and my panini grill

👉 I linked all of my favorites here so you can grab what supports your routine, not someone else’s.

Final Thoughts about My Sundays

This isn’t about discipline. But discipline is necessary to make it happen week after week.
THis is about learning to be fully prepared for your week.

When I started using Sundays to support my future self instead of avoiding the week ahead, everything shifted. My mornings became calmer. My weeks became lighter. And I stopped feeling behind all the time.

Preparation creates peace.
And peace is something you build on purpose.

If you want more support creating a Sunday reset that actually fits your life, I’m here. You don’t have to figure it out alone.

If you’re looking for an easy, affordable family getaway where everything is conveniently in one place, Embassy Suites Sunset Walk in Kissimmee, Florida, should be on your radar. We recently stayed here for a quick summer escape, and it checked all the boxes: water fun, family-friendly amenities, and great value.

Here’s why this spot makes a perfect family weekend away:

H2O Water Park Is Right Next Door — And Included!

The biggest win for families? Access to the Island H2O Water Park is included in your hotel stay if you book that package (which was only $10 more than standard rate on the weekend we went). This water park is packed with slides, a lazy river, splash zones, and plenty of space to relax while the kids burn energy. And it is so close to the hotel. The parking was $20, which I wish I would have just made the kids walk but it would have been a hike after a day in the sun! The ease of having the water park right next door took the stress out of planning our days. We didn’t have to rush or pack a full “day bag.”

Full Embassy Suites Perks = Major Value

If you’ve stayed at an Embassy Suites before, you already know: their complimentary breakfast is top-tier for families. We’re not talking muffins and bananas — think hot breakfast with made-to-order omelets, bacon, potatoes, sausage, pancakes, oatmeal, fruit, assorted breads & muffins, sodas, milk or juice, and plenty of coffee for tired parents.

And every evening, they offer a complimentary Happy Hour Reception. Yes, that means drinks (including wine, beer, and cocktails) and snacks are free for guests. My kids loved the variety of mocktails they offerred – especially the Mango Shirley Temples! It’s a great way to wind down after a long day of swimming or exploring without having to budget for one more meal or stop.

Spacious Suites That Actually Work for Families

One of the things I loved most about this stay was how much space we had. The suites are designed with families in mind.
✔ Full kitchen (fridge, microwave, dishwasher — so helpful with kids)
✔ Separate bedroom with a door (hello, privacy)
✔ Living room with a pull-out sofa for extra sleeping space
✔ Large balcony for some fresh air and extra room to spread out
✔ Huge bathroom with both a spacious shower and a separate soaking tub — ideal after a long day at the water park

It’s rare to find hotel rooms this well-equipped without paying for a full condo or resort suite. Having this much space made a quick weekend away feel like home. The kids didn’t want to leave because they said it feels like a home.

Access to Margaritaville Resort Perks

Staying at Embassy Suites Sunset Park gives you access to Margaritaville Resort amenities, so you get the best of both worlds. While we didn’t spend much time at Margaritaville this visit, we walked around the property (which is beautiful) knowing we had access to their beautiful resort grounds, restaurants, and pools is a huge bonus for longer stays.

Close to More Family Fun

If your crew likes a little variety (or if you’re staying longer than a weekend), there are other fun spots nearby. Just a short drive or even walk away:
Escapology (escape rooms) – we did the Haunted Mansion one- Escaped with 6 minutes to spare!
Game Time (arcade and family entertainment center)
Plus, endless shopping and dining options at Sunset Walk.
We took advantage of these during our stay to break up our water park time and give the kids a little variety.

Perfect for a Short, Stress-Free Getaway

What I loved most: This staycation didn’t require over-planning or over-packing. Everything we needed was right there; food, entertainment, relaxation, and plenty of options to keep both kids and adults happy.

Whether you’re a Florida family like us looking for an easy weekend escape, or you’re visiting the Orlando area and want something less chaotic than the big theme parks, Embassy Suites Sunset Park + H2O Water Park is an easy win.

If there’s one thing I’ve learned in my 40s about fitness, it’s this: progress isn’t just made in the gym or on the road; it’s made in recovery. As a mom who runs, strength trains, and prioritizes her health, I’ve come to realize that recovery is not a luxury… it’s a necessity.

In my twenties and even into my thirties, I could power through tough workouts, barely stretch, and somehow bounce back the next day. But now? Recovery takes intention. It takes tools, habits, and products that support my body where it’s at, not where it used to be.

That’s exactly why I started using Hurt Skurt as part of my fitness recovery routine, and honestly, I wish I’d found it sooner.

Hurt Skurt | Fit over 40

Why Recovery Looks Different in Your 40s

Let’s just start with the obvious: your body changes.
Muscle soreness lingers longer. Knees, hips, and joints start to speak up a little louder than they used to. The recovery window that once felt optional now feels mandatory if you want to keep moving without injury—or burnout.

As a single mom who’s juggling kids, work, and my own goals, I don’t have time for injuries. I don’t have time to be sidelined by soreness. My workouts aren’t all about aesthetics anymore, they’re about staying strong enough to live fully, to stay healthy for my kids, and to feel good in my body for decades to come.

That mindset shift made me rethink my approach to recovery. It’s no longer something I do when I “feel like it.” It’s something I prioritize right alongside my workouts.

How I Use Hurt Skurt in My Routine

I first discovered Hurt Skurt while looking for recovery products that didn’t require me to sit still awkwardly holding an ice pack in place. If you’ve ever tried icing a sore knee or wrapping something with a towel and hoping it stays put. I needed something better.

Hurt Skurt is a hot or cold compression wrap that’s designed to fit comfortably around the areas we need it most like knees, calves, hamstrings, quads. It’s like a recovery sleeve but better because you can use it both heated and frozen, and it stays cold longer than any ice pack I’ve tried. Plus, it’s flexible. I can move around, stretch, or even chase my kids while wearing it. For a busy mom who’s always multitasking, that’s a win.

My fitness routine isn’t extreme but it is consistent. I run, I strength train, I prioritize my health because I want to enjoy life with my kids and (someday) grandkids. That means supporting my body after the workout matters just as much as the workout itself.

1. Post-Run Recovery:
Running, especially long distances, can leave my knees and calves screaming. I pop my Hurt Skurt in the freezer before I head out, and when I’m back home, it goes on immediately. I love how it gives targeted relief without the mess of ice packs or bags of frozen peas.

2. After Leg Day (Hello, Quads and Hamstrings):
Leg days aren’t getting easier with age, but I’m not backing down either. The Hurt Skurt helps me recover faster by soothing sore muscles with either heat or ice, depending on what my body needs that day. I alternate based on soreness and stiffness.

3. For Those “Aging Joints” Days:
There are days when my knees ache not because of a workout but because of, well… life. Age. Weather. Hormones. Whatever it is, having a recovery tool like Hurt Skurt that stays cold, stays put, and actually helps makes all the difference.

Hurt Skurt makes recovery practical, effective, and honestly—more enjoyable. I don’t have time to sit still, and this product lets me keep living life while still taking care of my body.

I love that it’s versatile enough for heat or ice because sometimes what you need isn’t always the same from week to week. Sore muscles? Ice it down. Stiff joints? Heat them up. Hurt Skurt gives you the flexibility to heal your way.

Recover your way—with heat, with ice, wherever, whenever.

My Honest Mom-to-Mom Takeaway

If you’re reading this and thinking recovery isn’t a priority because you “don’t have time”—trust me, I was there. I used to skip the stretching, the icing, the recovery days… and I paid for it with injuries, burnout, and slower progress.

Now, I’ve learned better. Recovery tools like Hurt Skurt aren’t just “nice to have.” They’re part of the strategy that keeps me moving forward. They help me show up for my kids, my career, and myself without being sidelined.

Because staying strong isn’t just about how much weight you lift or how far you run—it’s about how well you recover so you can do it again tomorrow.

If you’ve ever considered a cruise for your next family vacation but hesitated because of the mixed reviews on Carnival Cruise Line—this one’s for you.

I recently returned from a week-long adventure aboard the Carnival Mardi Gras with my two kids, and I’m here to tell you: this trip was packed with fun, filled with unforgettable moments, and absolutely made for families. In fact, it may just be our favorite vacation yet.

Let’s start with the logistics—because as parents, we know travel planning isn’t just about the destination. It’s also about how smoothly you get there. We chose to sail out of Port Canaveral, and it was a game-changer. Compared to the heavy traffic and hustle of Miami or Fort Lauderdale, the drive to Port Canaveral was surprisingly stress-free. We avoided major city congestion and enjoyed scenic stretches along the way.

Once we arrived at the port, everything from parking to check-in felt organized and efficient. Plus it was a super quick process! And then? The magic began.

The Carnival Mardi Gras isn’t just a ship—it’s a floating resort. With its bold design, endless amenities, and creative layout, it’s built to entertain all ages. My kids were in awe from the moment we stepped on board. And honestly? So was I.

Built for Fun (and Kids!)

The Mardi Gras isn’t just a cruise ship—it’s a mega ship with six themed zones, each offering its own vibe, dining experiences, and activities. Everything is laid out in a way that encourages both exploration and ease. As a parent, I appreciated how accessible everything felt—yet the ship still had that exciting “wow” factor around every corner. There’s a reason Carnival calls itself the “Fun Ship” line—and while some might assume that means it’s all about nightlife or adult activities, our experience proved otherwise. Carnival’s brand of fun is incredibly kid-focused.

One of the biggest hits for my kids? The Ultimate Playground area. Picture a massive water park with racing slides, splash zones, and mini water dumps—right in the middle of the ship. Add in BOLT, the first-ever rollercoaster at sea (yes, seriously!) and you’ve got a recipe for excitement that kids—and their thrill-seeking moms—can’t get enough of.

The ship also features SportsSquare, an active outdoor area with ropes courses, mini-golf, basketball, and more. They spent hours challenging each other and laughing together. It was screen-free family time at its finest.

Spaces Just for Kids

Carnival knows that kids need their own space—and that parents sometimes need a breather too. The Camp Ocean kids’ club offered age-appropriate activities, arts and crafts. My kids are older and found their group at the Circle “C” lounge, filled with games, music, and social time (without mom hovering, of course). They even made some friends the first night that the kept hanging out with throughout the week!

Dining for Everyone

Let’s talk about food because it’s a big part of any vacation, especially when you’re traveling with kids who have strong opinions and interesting appetites.

Carnival Mardi Gras knocked it out of the park with a fabulous variety of options. From Shaq’s Big Chicken (which became my daughter’s go-to lunch spot),  Guy’s Burger Joint with the best fries at sea, the pizza, panini and taco stands to the large Lido buffet- there were so many casual, kid-approved options. And there were traditional sit down restaurant options from the formal dining room to contemporary options like ChaBang!

There’s also something magical about dressing up for dinner on a cruise. Even my kids looked forward to “fancy night,” where we all got dressed up, took photos, and dined on a delicious over-the-top three course meal!

Entertainment & Shows: More Than Just a Bonus

If you’ve ever cruised before, you know that entertainment can vary widely by ship. But on the Mardi Gras, it’s a major feature—and truly impressive.

Every night brought something new, and we never once felt bored. Here are just a few of the standout experiences:

  • Family Feud Live – Carnival’s hit game show experience brings the classic show onboard, and it’s every bit as fun as the original. Families can even audition to participate!
  • Deal or No Deal – A high-energy, audience-participation show that got everyone involved. My kids loved shouting out which briefcase to pick!
  • Vegas Nights – One of Carnival’s signature Productions shows, blending some cool stunts, beautiful costumes and vegas-style performances. It was a fun experience that kept even my teen interested.
  • Comedy Club – With both family-friendly and adult-only shows, there’s something for everyone. We all enjoyed the early clean comedy shows, which were genuinely funny without crossing the line.
  • Dive-In Movies – Watching movies on the big screen by the pool at night was a favorite for all of us. Carnival provides popcorn, lounge chairs, and blankets on cooler nights.

Plus, live music, themed nights (like 80’s on the pool deck), and pop-up performances kept the energy high throughout the cruise. Whether you wanted to laugh, dance, or simply be entertained, Carnival had you covered on this sailing.

Big Ship, Big Smiles

I know Carnival has occasionally gotten a bad rap in some circles, but our experience on the Mardi Gras couldn’t have been more positive. The crew was kind and attentive, the ship was clean and well-maintained, and the entire vibe was welcoming. Not once did I feel like this wasn’t a safe or enjoyable space for my family. Quite the opposite.

In fact, what I saw on this ship were hundreds of families just like ours, laughing, exploring, and making memories together. Carnival makes cruising affordable for families, and they deliver fun in a way that’s approachable, inclusive, and full of heart.

Ready to Set Sail?

If you’re planning summer travel or thinking ahead to a fall break getaway, don’t overlook cruising, especially with Carnival. The Mardi Gras offers something for everyone and gives your kids a chance to try new things, see new places, and spend meaningful time with you, away from the noise of everyday life.

For us, the trip wasn’t just about sunshine and sea views. It was about reconnecting. Laughing. Adventuring. It was a week where I didn’t have to say “no” as much, and instead got to say “yes” to ziplining over the ocean, staying up past bedtime for the dive-in movie, and snorkeling in the turquoise waters of the Dominican Republic! Carnival made it easy. And unforgettable.
