This green goddess dressing is RIDICULOUSLY easy to make and goes with pretty much anything. Veggies, pasta, chicken, fish, the list goes on.   • 2 tablespoons olive oil
  • ½ yellow onion, finely diced
  • 2 large carrots, finely diced
  • 1 celery stalk, finely diced
  • 4 garlic cloves, minced

  • 28 ounces canned whole peeled tomatoes (San Marzano style)
  • ½ cup beef broth
  • ½ cup dry red wine (I used a cabernet sauvignon)
  • 1 tablespoon Herbs de Provence or Italian seasoning
  • 1 lb pappardelle pasta (or other wide ribbon pasta)

  2. Add the onion, carrots, and celery to the pot and sauté until softened, about 3 to 4 minutes.

  10. Meanwhile, bring a large pot of generously salted water to a boil. Cook the pappardelle pasta to al dente according to box instructions. Reserve ½ cup pasta water, then drain.
  11. Gently scald the heavy cream in a small saucepan over low heat or in the microwave just until hot and steaming (do not boil). This helps prevent curdling when added to the sauce.
  12. Stir the warm heavy cream and freshly shredded Parmesan into the sauce. Taste and adjust with additional salt and ground black pepper as needed.

It has that traditional bakery flavor and texture, but I've tweaked it for real home kitchens. Same results, no stress!

  2. Large star piping tip (Ateco #826 or Wilton 1M) - A large metal star tip makes piping much easier and creates those classic ridges that help the cookies bake evenly and hold their shape.
  3. Parchment paper or silicone baking mat - Both prevent sticking and promote even browning. Parchment is quick and disposable, while a silicone mat is reusable (either works well for this recipe though I almost always use a Siplat baking mat).

Tips and Tricks

  • Butter type matters.
    Do yourself a solid and grab some european butter. I used Kerrygold Irish Unsalted Butter. European butter has to have 82% milkfat or higher whereas American butter only has to have 81%.
  • Use a sturdy piping tip and strong piping bag.
    The dough is thick, so a large metal star tip and a bag that won't easily rip makes piping much easier.
  • Chill if needed!
    If your dough feels soft or your kitchen is warm, chill piped cookies for 15-20 minutes before baking.
  • Bake just until set.
    These cookies should stay pale on top. Look for lightly golden edges (overbaking dries them out).

How to store them

  • Room Temperature: Store baked cookies in an airtight container for up to 5 days
  • Freezing (Baked): Freeze fully cooled cookies for up to 2 months
  • Freezing (Unbaked): Pipe dough, freeze until solid, then store in a freezer bag and bake from frozen (add 1-2 minutes to bake time)

Frequently Asked Questions

Why is my dough hard to pipe?

This dough is intentionally thick. If it's too stiff, your butter may be too cold or you may have added too much flour. Use a teaspoon of the reserved egg white at a time to help loosen it up. Do NOT add milk!

Can I make these without a piping bag?

Short answer? Yes. Should you? Probably not. Piping gives the best texture and appearance, but a sturdy zip-top bag with the corner snipped will work in a pinch.

Can I skip the almond extract?

  1. Once cookies are completely cooled, melt the chopped semi-sweet chocolate with the heavy whipping cream using a double boiler or a microwave: 
    • Double boiler method: Place chocolate and cream in a heatproof bowl set over gently simmering water. Stir until smooth.
    • Microwave method: Place chocolate and cream in a heatproof bowl. Microwave in 15 to 20 second increments, stirring after each, until fully melted and glossy.
  2. Dip half of each cookie into the chocolate and, if desired, top immediately with sprinkles, sanding sugar, or shredded coconut. Let the chocolate set completely at room temperature (about 1 hour) or in the refrigerator for 15-20 minutes.

Notes

European-style butter makes a difference - European-style butter (like Kerrygold) has a slightly higher fat content and less water than standard butter.   • 1 lb potato gnocchi*
  • 2 tablespoons olive oil
  • 1 lb Italian sausage*
  • ½ yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 10 ounces butternut squash (fresh or frozen, about 3 cups)
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup butternut squash puree*
  • 1 cup kale or spinach (fresh or frozen), diced
  • 2 cups chicken broth
  • 1 cup skim milk
  • 1 tablespoon fresh sage, minced
  • 1 ½ cups mozzarella cheese, shredded
  • ¾ cup parmesan cheese, shredded
  • Coarse salt, fresh ground pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. In a dutch oven or large oven-safe pot, heat olive oil over medium heat. Add sausage and cook until browned, about 5 minutes, stirring frequently.
  3. Stir in the onion and cook 3 to 4 minutes, until softened.
  4. Stir in garlic and cook for 30 seconds, until fragrant.
  5. Add diced butternut squash and kale or spinach. Cook 4 to 5 minutes, stirring frequently, until softened.
  6. Stir in crushed tomatoes, butternut squash puree, chicken broth, milk, and sage. Bring to a boil, and reduce to a simmer.
  7. Stir in gnocchi and continue to simmer for 2 to 3 minutes, stirring occasionally. Remove from heat.
  8. Add in half of the mozzarella and parmesan. Stir until completely combined. Sprinkle the top with remaining cheeses.
  9. Do a quick taste test! Add salt and pepper as desired.
  10. Place on a middle rack in the preheated oven. Bake for 15 to 20 minutes, until cheese is golden and sauce is bubbling.
  11. Remove from heat. Garnish with extra sage or parmesan. Enjoy!

Notes

Use shelf-stable potato gnocchi for best results. Frozen gnocchi tends to soften too much in the sauce!

Spicy or mild Italian sausage both work great. Use whichever you prefer!

To start off the season this year, I whipped up a batch of these Halloween ghost meringues and toted them down to a kid-friendly brewery meetup. Let me tell you - they disappeared faster than candy on trick-or-treat night! Both kids and adults devoured them (my three-year-old included). They're crisp, sweet, and just the right amount of silly and spooky. Best part? They only need a few simple ingredients, and you can bake them ahead!
