]]>In recent years, cookware marketing has taken a sharp turn toward fear-based marketing. Words like non-toxic, PFAS-free, forever chemicals, and chemical-free now dominate packaging, ads, and influencer videos. But while those phrases spark consumer interest, they often come with distorted proof, and some have ended up in class-action lawsuits.
A recent New York Times opinion piece (October 8, 2025) explored this growing phenomenon, calling it “the nonstick panic.” The author argued that brands have increasingly hijacked legitimate environmental and health concerns to sell products, leveraging fear rather than data. The question every home cook should ask is: what’s actually in my pan, and what does the data show?
At ‘Cookware Brand’, we decided to find out — not just for ourselves, but for the entire category.
There’s a reason “non-toxic” sells. It speaks to our most primal instinct: protecting our health and our families. But the cookware market has learned to exploit that instinct.
Some brands build their entire identity around what’s not in their products, rather than how their products perform. Buzzwords like “PFAS-free” are circulating widely, often without any reference to testing standards, detection thresholds, or what those compounds even mean in context. Some companies list dozens of science-sounding compounds that wouldn’t be in cookware in the first place when showing the list of chemicals their cookware is free of. Their goal is to deceive consumers into thinking they have the safest product out there.
The result is that many consumers feel anxious, even guilty, about using products in their home. As the New York Times op-ed noted, “We’ve replaced Teflon trust with Teflon terror.”
That fear-based marketing cycle creates confusion rather than clarity — and drives a wedge between perception and science.
To cut through that noise, we commissioned third-party ISO 17025-accredited laboratory testing on both our own cookware and leading competitors — including HexClad, Caraway, and Our Place. For transparency, we funded the testing (about $300 per test per pan); however had no part in the implementation. We simply bought the products from Amazon and shipped them to the labs.

The testing focused on two areas of consumer concern:
Each product was tested by Light Labs using FDA-modified methods for precision and reliability. The pans were sent in late September 2025, with the results coming back early October 2025.
Here’s what we found.
Across all brands tested, the data was remarkably consistent — and far less sensational than the marketing might suggest.

In short: the data shows that virtually all high-end cookware brands are equally safe and non-toxic by scientific standards. HexClad was the only one to show elevated levels of lead in their pan, however the test with HexClad was not perfectly apples-to-apples with the others. HexClad’s pan came with a glass lid, unlike the other pans.
Here was the note from the lab:
I wanted to share some context around the heavy metals result, specifically for HexClad that are about to be pushed out.
Because this was a cookware leaching test, we ran it following FDA guidelines, which means testing with the lid on (since it’s considered part of the product). The lid here had exposed glass and metal, so it could have influenced the elevated results.
HexClad’s pans are worth retesting without a lid and warrant further investigation around lead.
From the Lab, how PFAS is tested: Per and polyfluoroalkyl substances (PFAS) are extracted after either a heated migration from the pot, pan, or plate into water, or scrapings of two 1-inch by 1-inch squares of the coating of the pot or pan, which is then collected with a Kimwipe saturated with methanol. PFAS are then extracted from the water or saturated Kimwipe sample with buffered acetonitrile using the QuEChERS methodology. The resulting extract is cleaned up with MgSO4, PSA, and GCB, further cleaned up with polymeric weak anion exchange solid phase extraction (SPE), then analyzed by LC-MS/MS. Isotopically-labelled internal standards are used to correct for potential matrix effects.
And how Heavy Metals were tested: Pans were filled with 4% acetic acid solution (food simulant) and simmered for 2 hours, followed by cooling and continued leaching for a total of 24 hrs. The data in this report corresponds to the concentrations of analyte measured in the leachate.
Here’s the irony — the data doesn’t support the fear.
Brands that market themselves most aggressively as “non-toxic” often rely on emotional appeal, not scientific distinction. They highlight what’s absent in their products without acknowledging that competitors’ products are already held to the same safety benchmarks.
Furthermore, they may cut corners on the actual product build, using aluminum rivets that come in contact with food. An irony is that aluminum cooking surfaces are something that consumers are trending away from due to their linkages to health issues.
The conversation shouldn’t be about buzzwords. It should be about data transparency and performance integrity.
When lab reports show a result as “below LOQ” — short for Below the Limit of Quantitation — it means the substance was not measurable even at the lowest sensitivity of the testing method.
In practical terms:
It doesn’t mean the compound is absolutely zero (no test can ever prove absolute zero), but it does mean that any trace amount, if present at all, is far below levels that pose a known risk or can even be reliably measured.
If you’re shopping for cookware and care about safety, here’s what matters more than marketing copy or influencer posts:

The store inventory will change, yes, but not as much as you might think. We’ve had a long and strong relationship with Zwilling (Miyabi, Demeyere, Staub) since the first year we opened and there’s a strong possibility that you’ve bought a Zwilling product from us.
Zwilling will operate the store and Cook Culture will have nothing to do with the location after the transition, however, the wonderful staff that you know for top-notch service will remain.

]]>When I say all, I mean that every type from every brand made anywhere in the world. And yes, even the fancy expensive ones.
I’ve been selling cookware for a long time. Over the decades I’ve sold many of the most well know brands and one thing became clear; after a few years we started to see returned cookware due to the surface degrading.
In 2016 I became fully aware of the impact of chemicals used to make Teflon. I decided then to completely stop selling anything with a chemical coating, even bakeware or waffle irons.
It was at the same time that I doubled down on selling cast iron, carbon steel, and stainless steel as the only material that would last. I quickly realized that Cook Culture had to be a resource to help educate people on how to use and maintain their lifetime cookware. After a little while it became clear that everyone could cook anything with traditional cookware and there was absolutely no need for coated cookware.
Along the way I became fully aware that we toss out millions of pans per year in Canada and that most of them end up in the landfill. Because I’d realized that non-stick pans were unnecessary it led me to understand that we, as Canadians, were creating a massive garbage issue for no reason.
I did the math and figured that in Canada we throw out the equivalent mass of used pans that would fit into the cabins of 24, 747 Boing Airliners – EACH YEAR.
This is shocking but lots of things we do to negatively impact our environment is shocking. The difference here is that I can do something about it, so I did.
This is why I started our annual Fry Pan Trade In. To take old pans into our shop where I can be sure they’re recycled properly, and give people a great deal on a new pan they’ll have forever.

]]>Why was I baffled? It wasn’t about a bunch of entitled men who were invading a foreign land to secure its natural resources for themselves. No, I was baffled that a major military decision, which ended up with the death of thousands of people, was based on this shaky logic.
There is no doubt that there are things that we don’t know, and that there are unknowns that we don’t know yet. This is simple to understand, however, when data and science can unequivocally prove something to be true then at that time it is only logical to understand the science. Doing something because you’ve convinced yourself that it’s right when the science does not support the action is how bad mistakes happen.
This is my position on non-stick cookware. For all cookware made in the world, out of all the brands, there isn’t a coated cookware that will last anywhere close to stainless steel, carbon steel, or cast iron. This is a simple fact proven by science that all non-stick cookware will become garbage. Hopefully, some of it will be recycled. My industry keeps reinventing fancy non-stick cookware and selling it to us as the next best thing. Over and over, each of these brands do not last.
Stick to the science
When science proves to the best of its ability that something is a certain way I have a tendency to believe it until rigorous science proves otherwise.
I’ve observed that all non-stick-coated cookware will wear out in a relatively short amount of time. There is no gray to this. It’s completely black and white. This does not mean that one day some smart person may make a coating that will last, and hopefully not come with health concerns. This would be a great invention and I would sign up to be the first to test it. Making cooking easier is my goal while we also care for our planet. Those two things must go hand-in-hand.
Cookware that will last forever does not need to be expensive. I know of loads of people that have found great cookware at second-hand stores or estate sales. Cast iron, carbon steel and stainless steel cookware last forever, so 10 or 20-year-old cookware should still be like new.
I have a strong opinion about this subject and have listened to loads of people that have tried to tell me that they must have a non-stick pan. To me, the reasons they give fall short when disposable cookware contributes to global environmental issues. This is proven by science.
Make a simple choice
I have no issue being called biased on this topic. If someone thinks that I am being unfair to tell them that their consumption is unnecessary then that is their opinion.
Many people ask me: do you drive a car, do you use bags at the grocery store, do you go on a plane? Yes, I do all those things, but I’m doing what I can to do those things less and am reducing or eliminating where I can. Cookware seems like an easy choice compared to the difficulty of driving a car in certain situations.
Non-stick cookware is unnecessary and there are easy replacements. They may not work exactly the same but with a tiny bit of effort, the results can be better while we dramatically reduce the amount of cookware that is thrown into the landfill every year.

]]>More and more we’re getting asked, ‘when are you going to restart cooking classes?’.
I realize that many people depended on us for cooking education and entertainment but after 10 years of teaching, with hundreds of thousands of people through our kitchens, I’ve decided that I want to change how we do things.
This is for a few reasons:
So what now?
I’ve spent a lot of time understanding the complexities of our food system. What has been known for quite a while is that a diet similar to a Mediterranean diet (based on the food available in your area) is probably the most health-promoting lifestyle known. Fortunately the consensus among all ‘health promoters’ is that processed foods, and any 1 macronutrient in excessive amounts, is not ideal for health.
Michael Pollen hit the nail on the head when he wrote, “Eat food, not too much, and mostly plants”.
As you may know, I’ve been working on improving my understanding of engaging videos. I can see through the analytics what people like and what they don’t. This has allowed me to develop a business plan to restart classes. At first, this will be digital, where I develop a library of plant-forward micro classes that will help anyone who is willing/wanting to cook in a plant-forward way.
To be clear, my goal is not to try and convert people into Vegans. From a health perspective, the science does not show us that 100% plants based, or veganism, is the healthiest way to live. Many of the healthiest and longest-lived people eat some animal products, just not that much and mostly from the sea.
That said, I don’t believe that it’s my calling to teach people how to cook salmon or tuna. There are others out there doing a much better job at that than I ever could/would. My passion is to help you rely on plants as the foundation of your cooking. There are entire populations that do this incredibly well and are shown to have the best health outcomes on the planet.
As we transition to an updated format I’m devoting my energy to building content and will not be rebuilding the in-store cooking class program at this time. Depending upon what develops we may or may not be back to live classes in 2022.
It was rewarding to see so many people enjoying something that I dreamt up but that also encourages me to step out of my comfort zone and follow my passion to do it again. I’m really excited for the future and hope you join us.

]]>Due to my advocacy, almost daily I hear from someone that tells me that seed oils are toxic. I tried to read the data for myself to figure out what people meant but it was overwhelming as there are very opposing, and logical, sides to this subject. Some people believe that seed oils are the reason that so many North Americans are heavier and sicker than they were 100 years ago.
Fortunately, I’m not the only one that is interested in this. I heard that a debate was being held specifically on seed oils and heart disease. It was a marathon of a debate lasting 3.75 hours. I keenly watched it but I was left a bit confused.

The overwhelming data shows that seed oils do not create disease or obesity and are actually health promoting but I wanted to know more about why there is sooooo much confusion. I was lucky that one of the participants lives in Vancouver so I reached out to see if we could discuss the outcome.

The science is pretty clear that the health outcomes of consuming seed oils vs saturated fat is positive (look for the study links in the notes of the video).
Seed oils have been unfairly vilified and the argument that they are health negative is unfounded. A balanced intake of Omega 6 oil is health positive but unfortunately most highly processed foods contain loads of seed oil, and the science is clear that processed foods are health negative, and I bet that everyone can agree on that.

]]>Induction cooktops look a lot like glass top halogen, or electric under glass. Sometimes they are built into a stove and other times it’s just a range.
Induction cooking uses electric currents to directly heat pots and pans through magnetic induction. Instead of using thermal conduction (a gas or electric element transferring heat from a burner to a pot or pan), induction heats the cooking vessel directly almost instantly.
Induction has been around for a long time. The process was developed decades ago and induction cooking has been widely used in Europe for a long time. Why? Cost savings.
How does induction compare to other cook types?
Speed and cost savings.
It’s said that on average induction will boil 50% faster and the temperature controls are much more precise.
It’s also said that induction is almost 90% efficient compared to 60% for gas – on average that is.
Induction can be 100% green, depending upon how your local electricity is made. In BC, where we live, all of our electricity is Hydro Electric. Being that we live in a temperaturate rain forest, this is 100% clean, renewable energy.
Gas is struggling these days, due to the cost and the simple fact that burning gas in your home introduces toxic fumes, such as carbon monoxide and nitrogen dioxide. This has been shown to affect respiratory issues in young kids and older adults.
The gas industry states that these concerns are overblown and a good fan will easily carry the fumes out of the kitchen. Furthermore, the gas industry says that the electricity proponents are using this unjustified scare tactic unfairly and that the threat is overhyped. Even if this is true it seems that the gas industry is losing this battle as most large news outlets are promoting the narrative that gas from your stove is going to hurt you.
The gas industry has also stated that gas is cheaper but that too is changing.
Are there disadvantages to Induction
There is certain types of cooking that require a flame, like, wok cooking. To achieve the elusive ‘hok hey’ you just have to have gas. Other people will swear about their special dish that must be cooked over an open flame.
Induction cooktops are glass, and glass can scratch and break. I have personally had to replace cooktops that overzealous chefs broke but it does seem that the newer ones are stronger.
They can be another gadet. Induction cooktops are digital, which means the controls are touch screens on glass. While most people have become familiar with this technology I do find it’s a complaint I hear.
The learning curve
Induction cooking is super precise. This can be an issue when you are accustomed to your heat slowly moving up and down and you expect your food to continue to cook as the pan cools. Or, on the other hand, you are familiar with the pan slowly coming to temperature so that you can hear and smell the food reaching the perfect ‘doneness’. At first, this all is much more difficult to estimate with induction as the heat goes like a speed train to the temperature you set and stops like it hit a tree when you turn it off.
The Control
As stated above, induction is the method of heating the vessel. This means that nearly all of the energy goes directly into the cooking and there isn’t a radiant heat source. As soon as the energy is cut the pan temp starts to plummet The surface of the cooktop will stay relatively cool, only heated by the heat of the cooking vessel..
What is the best cookware?
The best way that I have found to manage the drastic cooking temperature of induction is to use heavyweight iron cookware or cookware that was engineered for induction. This allows me to manage the heat process as the pans hold the heat so incredibly well. I recommend using all carbon steel and cast iron, enamelled or not, and my #1 cookware for induction is Demeyere, specifically the Atlantis/Proline with their Triplinduc technology. Demeyere is a high end-choice, but cast iron can be relatively inexpensive.
Other stainless steel brands can work well too and weight matters. The more conductive material the better for managing the heat.
What about warping?
Warping is a thing with induction. I have gone down the rabbit hole on this and as far I can understand there is not 1 defined reason for warping. That said, I have a hunch, and here it is.
Nearly all the time, people complain of warping carbon steel. Compared to cast iron, carbon steel is nearly all iron, with a very small amount of carbon. It’s made thinner and bendable. Cast iron, on the other hand, is stiff and can crack instead of warping or bending.
I’ve spoken to industry experts, brand representatives, and dozens and dozens of people who have warped their cookware. The common issue that I have come to find is the type of induction cooktop.
The main culprit
It seems to me that inexpensive induction cook plates are mostly to blame. Almost all the time I find that people who have warped their pans are using an induction cook plate that costs under $100.
The conclusion
Induction is on the rise. In some places, gas in new homes is being outlawed and electricity is the alternative. Induction is the most expensive alternative but it is the best performance, by a long way. I expect induction to become the first choice for most new purchasers.

The ten-inch frying pan is a kitchen cornerstone. Whether you’re searing meats, sautéing veggies or making a sauce, it’s an easy and dependable utensil, especially if you’ve invested in quality. But what makes a great pan great? Why go from better to best? Read on as Shaw TV “Island Chef” Michael Williams and I test out a couple of Cook Culture’s most popular brands to find out which comes out on top.
All-Clad has been one of Cook Culture’s core brands for a long time, and their made-in-the-USA d5 collection is the top of the heap with its five layer construction and stainless steel core. That core helps prevent the warping you sometimes see on older All-Clads and enhances the conductivity of the aluminum inner layers for faster, more even heating. The d5 series is also induction-optimized, making it ideal for the new generation of highly-efficient, super quick stovetops.
However, the growing popularity of induction ranges has inspired other manufacturers to enter the market, not least of which is Zwilling J.A. Henckels. After their purchase of Belgian cookware pros Demeyere in 2008, Zwilling developed a new line of affordable pots and pans based on Demeyrere’s cutting-edge metallurgy. This new “Sensation” collection fits neatly between the great value of All-Clad and the high-end Demeyere products, making it a new favourite here at Cook Culture. Both of these brands have seen plenty of use in the Cook Culture test kitchen, but never head-to-head, so we were eager to find out if the Sensation pan held up to its higher price tag.
Before turning on the burners, Chef Michael picked up a pan in each hand and tested their heft. “A good frying pan, or pot for that matter, has to have weight to it,” he said. “If it doesn’t, that means it’s really thin gauge metal, the heat is not going to distribute evenly and you’re going to be much more likely to burn your food. Someone might think they’re a shitty cook, but they’ve just got shitty pots and pans and that’s why they’re always failing.” That definitely helps explain a lot of my own kitchen nightmares — or at least, it’s a handy excuse.

Next, Michael demonstrated his “chef flip”. One of the big selling points for the Sensation pans is their shot-blasted handles; the finish provides better grip, and the join is welded on instead of riveted for easier cleaning. “The handle has to be comfortable for sure,” said Mike. “This is a little bit sleeker, more stylish, it has a nice feel to it when you pick it up. It feels slightly heavier than the All-Clad, a little more weight to it, maybe a slightly heavier gauge. First impressions are the Henckels is a little bit higher quality.”
For our first test, Michael quickly cut up an onion. “I just want to see how it cooks and caramelizes, see if there’s any sticking going on, if I can do it with relatively little oil without it starting to burn and stick.” The trick to stick-free stainless steel cooking is to pre-heat your pans on low or medium heat, then add the cooking oil and allow it to warm up before adding any ingredients. This way you get a non-stick surface without the chemicals and short half-life of Teflon or other typical non-stick pan.

In went the onions. After only a half a minute or so, it was already clear to see some of the pieces in the All-Clad stay in one spot. “This one is starting to stick already as the oil is being absorbed into the onions, whereas this one isn’t quite as bad,” he said. “Even though that oil is gone it’s still moving around, whereas in this one it’s starting to burn. First test goes to Henckels hands down.”
One of the best parts about stainless cookware is how easy they are to clean after use. After clearing out the onions we put both pans in the sink, and a little splash of water had already cut channels in the char on the Sensation. “That’s a good sign, it’s leading me to believe that one will be pretty easy to clean.” After some scrubbing and a round with steel wool, the All-Clad was back to its shiny finish. In contrast, the Sensation pan needed only a splash of water before all the browning lifted right off. Part of the Sensation package is the electro-chemical Silvinox treatment, originally created for the Demeyere cookware. The Silvinox process removes iron atoms from the top layer to produce a smoother, higher finish, and in this test its effectiveness was clear.


Next, we tried a basic breakfast, starting with a simple egg over hard. Mike laughed. “I can’t help seasoning them!”

Surprisingly, the All-Clad let go of the egg completely, allowing Michael to make a perfect flip, while the Sensation’s egg fell apart. “That came up real nice, but this one actually stuck more!”


Something seemed a little off, but we moved on to trying a few strips of lean bacon with no oil. On both pans the bacon left a healthy char, though there was slightly more crust left on the Sensation pan. “Pretty much the same, very close,” said Mike. “The no oil, lean bacon test, slightly to the All-Clad.”

Though Chef Michael was pressed for time prepping for his Winter Salads and Braised Meats class, he couldn’t resist running the egg test again. For a second time, the Sensation egg fell apart, while the All-Clad’s stayed easily flippable. Mike’s brow furrowed. He wiped out the pans, turned up the heat slightly on the Sensation and waited a few extra seconds before cracking a final egg into each.
This time, the Sensation performed as expected, keeping the delicate egg white unstuck from the stainless surface and allowing Mike to make a neat over-hard. So keep that in mind: the higher end pans may need a little more preheating thanks to their thicker, more consistently heating construction. You can always check your pans temperature before adding oil by flicking a bit of water on it; the water should bead and run around before evaporating, otherwise it maybe be too hot or cold.

So that we are clear, Teflon is one brand of non-stick coating for cookware, and the biggest in the industry by a long long way. There isn’t a good choice when it comes to chemical based non-stick cookware; it simply doesn’t happen. If you have expensive Diamond or Titanium cookware we are sorry, but it’s just as bad. The non-stick element in this type of cookware is chemical based.
Also, many non-stick manufacturers were quick to change the chemical composition of their non-stick coatings to eliminate PFOA, however what they replaced it with (which is very similar) has not been studied and reported on by an independent third party.
Can we do better? Yes, we can. Cook Culture has been selling alternatives for years. Here are our top picks:
#1 – Don’t buy a new one; that old pan you already have will work just fine. Yes, most of us have one. #2 – Rolled Iron – There are a few great brands on the market; we carry de Buyer, but also Mauviel makes an excellent rolled pan. #3 – Any Cast Iron, enameled or not. – We prefer Staub Cast Iron for its design, function, and longevity, but all good quality cast iron will work well for years, Like American made Lodge
#4 – Any quality Stainless Steel Pan (without a coating) – You probably have one but if you don’t look for something with weight, a general rule of thumb when you’re choosing cookware is that heavy is better. We recommend Sensation Cookware by Zwilling as the best all around cookware for your buck.
