I just finished writing an in-depth article about elderberry toxicity, and the safety of under-ripe berries for the Jan/Feb issue of The Essential Herbal Magazine. I can’t publish the article here on the blog until at least March. The short answer is yes, they are safe, although, being under-ripe, I’m not sure how effective the syrup would be.

Only one of the five plants provided black berries. The other 4 plants grew only deep red berries with a few bright red umbrels. Do you recommend these as safe to process for syrup? I harvested in November, and they haven’t darkened after washing and drying inside. Thank you!

And Wal-Mart says they don’t use slave labor.
