]]>About Bale Breaker
Crafting fresh-off-the-farm brews from the middle of a hop field, Bale Breaker Brewing Company is a family-owned brewery located in the Yakima Valley. Backed by four generations of hop farming experience, Bale Breaker started in 2013 and has grown to become one of the largest independent craft breweries in Washington.
Hops are in the family’s DNA: the great-grandparents of sibling-owners Meghann Quinn, Kevin “Smitty” Smith, and Patrick Smith first planted hops in the Yakima Valley in 1932, the year before Prohibition ended. Now, Meghann, Smitty, and Meghann’s husband Kevin Quinn are crafting brews that celebrate the world-class hops grown in their backyard, while Patrick and their dad run the family’s two hop farms, Loftus Ranches in Moxee and Tributary Farms in Granger.
With a 30-barrel brewhouse at a 27,000 square foot facility, Bale Breaker crafts eight year-round canned beers, including the widely celebrated Topcutter IPA, and a diverse offering of seasonal beers in cans and on draft. They have two taprooms: one onsite at the Yakima brewery; and another in Seattle’s Ballard Brewing District. Bale Breaker beer can be found in retailers and bottleshops throughout Washington, Oregon, and Idaho and limited distribution in Colorado.

Our Tropics yeast is based on a London Ale strain, but we added a new gene to its genome that codes for a unique thiol-releasing enzyme. The enzyme converts the precursors in barley to free thiols that smell and taste like passionfruit and grapefruit. It’s super clean. No off-flavors like burnt rubber or other sulfurous notes. Just tropical aromatics. You don’t have to do anything unusual either, like mash hopping. Just pitch dry Tropics and supercharge your hazy IPA.

]]>The post Brewing Sustainably: Pure Project Recaptures Over 74,500 Pounds of CO2 with On-Site CO2 Recovery System first appeared on All About Beer.
]]>Since installing the equipment in February 2026, Pure Project has recaptured and reused 34,000 kg (over 74,500 lbs) of CO2 gas, which would have otherwise been released into the atmosphere. To put this impact in perspective, the reduction is equivalent to the emissions from burning nearly 3,850 gallons of gasoline.
To celebrate this sustainability milestone, Pure Project has teamed up with Dalum and fellow San Diego craft brewery Societe Brewing Company to create Closed Loops, a collaborative hazy IPA brewed with recaptured CO2. The launch of Closed Loops coincides with Societe’s successful integration of Dalum’s CO2 recapture equipment into its own brewing facility, laying the groundwork for a meaningful craft brewing partnership centered on sustainable innovation.
“We’re proud to see our CO2 recovery technology playing a role in a collaboration like this between two staple San Diego breweries,” said Ashley Hanes, U.S. Sales and Service Representative at Dalum Beverage Equipment. “It’s especially rewarding when sustainability work shows up in a beer people are excited to drink. Pure Project and Societe have been great partners in putting the technology to work, and we’re glad to celebrate this release alongside them.”
The shared commitment to environmental technology inspired the collaboration behind Closed Loops hazy IPA. By recapturing the CO2 on-site, both breweries significantly lower their dependence on commercially produced CO2, further reducing emissions from freight transport and creating a closed-loop system directly inside each brewery’s brewing facility.
“When we started this project, we knew we wanted to do better for the environment, but recapturing over 74,500 pounds of CO2 in such a short window has really shown us what is possible in making brewing operations more sustainable,” said Winslow Sawyer, Co-Founder and Brewer at Pure Project. “Running a true closed-loop system in our own brewery has been a long-time goal of ours, and sharing this moment and win for the planet with local peers at Societe makes it that much more rewarding.”
Closed Loops stands as a liquid celebration of this milestone. Crafted using Tropical Fusion, Mosaic, and Strata Cryo hops, this hazy IPA pours a murky pale yellow color and delivers vibrant notes of grapefruit rind, cherry, and lemongrass, balanced by a soft mouthfeel and a smooth, clean finish.
Closed Loops is now available on draft and in 4-packs to go at all five Pure Project taprooms in San Diego County and at select retailers.

]]>The post New Glarus Brewing Entering First in the State Water Conservation Pilot Program first appeared on All About Beer.
]]>As part of New Glarus Brewing’s commitment to conserving Wisconsin’s natural resources, they operate a Wastewater Pretreatment Facility on site, where production water is pretreated before being released to the village. “This allows us to be good neighbors and not overburden our village’s water management system,” said News Glarus Brewing’s architect and Construction Manager Katherine May, who oversaw an expansion to the Pretreatment facility in 2018.
“Our new addition is built into the hill with the grass and natural landscape pulled over the top of the lowest level, creating a very unique grass roof design. Grass roofs are a well-respected, sustainable step as they insulate the building, lower heating and cooling energy use, diminish stormwater runoff, and improve air quality. We take it a step further by using our facility’s own treated water to irrigate the roof. We will become our own closed-loop sustainable system,” added May
In the process of seeking approval for this program from the Wisconsin Department of Natural Resources, New Glarus submitted nearly fifteen years of water quality test results, demonstrating their long-standing commitment to keeping Wisconsin’s water clean. “It’s always been our priority to brew world-class beer while taking care of our community and state,” added Company Founder, Deb Carey.

]]>Before co-founding Single Hill Brewing, Turner cut his teeth in technical roles at Odell Brewing Co. and Yakima Chief Hops. Today, he uses that background to brew expressive, hop-forward beers right in the heart of Washington hop country. Harvest is where Single Hill’s farm connections come alive, he says. Zach and his team drive directly to nearby fields to collect freshly picked hops, rushing wet cones straight to their mash tun-turned-hopback and even pelletizing kilned whole cones themselves to capture the freshest flavors possible.
This collaborative, community-focused approach has brought Single Hill some grateful recognition—including being named Washington Brewery of the Year, alongside medals at GABF, the World Beer Cup, and the Fresh Hop Ale Fest.

]]>He isn’t exaggerating. It’s hard to argue that any other brewery or beer has had a greater impact on the world than Pilsner Urquell, the subject of this episode of One Iconic Beer. Among the first golden lagers ever made, it would soon spark a wave of imitators that would spread around the world, a legacy we can see in every pub and store that servers beer.
How did a brand-new brewery located in a small Bohemian town with no history of making lagers pull off this trick? And what was so special about the original pilsner that has allowed it to flourish for nearly two centuries?
We’ll hear from Rail, who has written more extensively about Czech beer than any English-language writer, about the breweries origins and its development over decades filled with revolution, war, and turmoil. We also hear from Kamil Ruzek, a brewer who has spent the past 24 years at the brewery. He takes us into the brewery and shows us how things work.
Join us for the remarkable story of the world’s most influential beer on this episode of One Iconic Beer.
