Chickpea flour, the protein, fiber and iron-rich flour made of ground garbanzo beans, is the perfect ingredient for making vegan quiche. When mixed with water and oil, it performs somewhat similarly to the egg and cream foundation of traditional quiche, solidifying into a sort of custard when baked at a high temperature.
This quiche comes together quite quickly once you’ve roasted your vegetables, and I’ll even go as far as saying that it’s much easier to prepare than its traditional counterpart.It’s studded with roasted winter roots to embrace the season, and made delicious with invigorating, flavor-building spices like turmeric, smoked paprika and black pepper. And if you, like me, are a lover of socca or farinata (the large chickpea pancake originating from Provence and Liguria), this recipe is for you, as the quiche is reminiscent of a plumper, more substantial version of socca.
This quiche would make for an excellent, nutritious addition to your holiday table or any other meal, served alongside a green salad or soup.
Note: You can use an equivalent amount of just one or two types of root vegetables instead of all three in this recipe.

]]>One bite of this perfect vegan dessert and you’ll never look at cheesecake the same way again. It’s made with all natural ingredients for a delicious treat that won’t weigh you down. As the name implies, this no-bake lemon cheesecake recipe doesn’t require you to heat up your oven so it’s ideal for warm weather. The citrus flavor of lemons complements a creamy texture for a dessert that’s ready to impress anyone, whether or not they’re vegan.
For a gluten-free crust, I used a combination of almonds, shredded coconut, flaxseed meal and gluten-free rolled oats. These healthy ingredients are packed with dietary fiber to support your digestive system. Flaxseed meal is a plentiful source of plant-based omega-3 fatty acids, which reduce inflammation. I also added lemon juice for moisture and maple syrup for sweetness. Within less than a minute in the food processor, these ingredients come together to make a delicious crust. Unlike typical cheesecake crust, there’s no need for butter or baking. Your no-bake lemon cheesecake recipe is nearly half-way done by this point. Now on to the filling.
Most vegan desserts rely on cashews for the cheesecake filling, however, I used a mixture of macadamia nuts and slivered almonds that turned out exceptionally well. Macadamia nuts have a creamy texture and mild flavor that lend just the right consistency to the cheesecake. They provide an excellent source of heart-healthy monounsaturated fats and antioxidants. Rich in fiber and B-complex vitamins, macadamia nuts offer a great way to incorporate a broad range of nutrients into your diet. Combined with slivered almonds, the cheesecake is packed with healthy fats, minerals, and vitamins.
I added canned coconut cream to the cheesecake filling but if you can’t find this item, you can also get it from canned coconut milk. First, chill a can of coconut milk in the fridge for at least 24 hours. After it’s been chilled, open the can and use the creamy white portion that sits at the top. This is the coconut cream and it’s an excellent source of lauric acid, a fatty acid that supports the immune system and may improve metabolism.
Feel free to add lemon zest to the cheesecake. The lemon flavor will be even more intense, plus it will look prettier when you’re finished. I actually froze some of the cheesecake batter in 3 oz dixie cups, as well. My kids love popsicles but I always make my own because they are healthier and more economical. Once you pour the cheesecake filling over the crust, your work is done. All you need to do now is wait for the cheesecake to set in the freezer.
If you want to mix things up next time, you could make a key lime cheesecake version by using key limes instead. The result will be just as delicious. I’ve made this version in the past and my family loves it. For now, I hope you enjoy this easy take on lemon cheesecake. This no-bake recipe makes a wonderful dessert for gatherings or just to have at home.

]]>I love making simple and delicious vegetarian lunches for my kids to take to school. When I’m busy and don’t have time to cook, I can count on these easy quinoa veggie wraps. This recipe is one of my family’s favorites. For a quick and healthy dinner, I serve the wraps with a fruit smoothie or trail mix on the side.
These veggie wraps are packed with high-quality protein thanks to the quinoa. This naturally gluten-free grain is considered a superfood because it’s a powerhouse of nutrition. Quinoa contains all nine essential amino acids, and lends seven grams of hearty protein per serving. For digestive health, quinoa is rich in dietary fiber and provides nearly twice as much fiber per serving as any other grain. It also has over 25 percent of the daily recommended value for energy-boosting iron. Even though it’s actually a seed, the texture of quinoa is fluffy and grain-like, making it a staple of many gluten-free diets.
My kids really enjoy having the wraps with hummus inside, and the creamy consistency helps the quinoa stay in place. Alternatively, you can use mayonnaise, but hummus is my preferred choice as it’s a delicious dairy-free option that adds extra protein and fiber. For gluten-free diets, you can use gluten-free tortilla wraps.
Modify the recipe to your liking by using the vegetables of your choice. It helps to change things up from time to time. My go-to wraps include fresh spinach, sun-dried tomatoes, and shredded carrots. The satisfying crunch of fresh vegetables complements the creamy hummus and fluffy quinoa, which all come together in an easy-to-make wrap. Just a few sun-dried tomatoes bring a rich tomato flavor with a gourmet touch. They’re also highly concentrated in fiber, and vitamins A & C.
Making these quinoa veggie wraps is super easy and healthy. You can conveniently pack them for work and school, or prepare them for dinner any night of the week. ]]>If you’re looking for new and creative ways to use quinoa, you’ll love this easy, protein-packed recipe. My healthy quinoa fritters are a quick dinner you can prepare on a busy weeknight, and they also make great leftovers for lunch throughout the week. Naturally gluten-free and vegetarian, these versatile fritters can be prepared to accommodate different special diets.
Traditional fritters are deep-fried, but my quinoa fritters are baked in the oven for a healthy variation. This also makes things easier and cleaner because you don’t have to worry about dealing with hot oil.
I love incorporating quinoa into meals because it’s a nutrient powerhouse. Most notably, quinoa is a complete protein because it provides all 9 essential amino acids. Essential amino acids are the building blocks of protein that we need to consume in our diet every day since our bodies cannot produce them naturally. Getting high quality protein sources is important for any diet, and quinoa provides a hearty seven grams of protein per serving.
Quinoa is also a good source of dietary fiber, which is beneficial to a healthy digestive system, and it’s rich in antioxidants that fight excessive inflammation in the body. When you eat quinoa, you’ll be getting plenty of iron; a single serving provides over 25% of the daily recommended intake for this mighty mineral. Aside from the impressive health benefits, quinoa has a light, fluffy texture that makes it look and feel more like a grain. It’s actually a seed, though, so quinoa is suitable for gluten-free diets.
For even more protein, fiber and iron, I added black beans to the mixture. The beans also add flavor, improve texture and help the fritters keep their shape. The recipe also calls for gluten-free rolled oats, which act as a binder and provide an extra nutrient boost. I made sure to use only wholesome, nutrient-dense ingredients in this recipe so you’ll feel full and satisfied after the meal.
To give the fritters some extra flavor, I sprinkled in cumin powder but you can use any seasonings that you’d like. I wanted to keep the mixture simple but you can always get creative and add more veggies. From previous experience, tossing in chopped mushrooms and green peppers works very well.
I’ve made these fritters several times before, and sometimes turn them into burgers by baking them a little longer so that they can firm up more. My kids love them so much that I doubled the batch and froze some to save for later. When it comes time to bake them, I just take them out of the freezer and bake them an extra 2 minutes on each side.
If you would like to make this recipe vegan, you can use a “flax egg” instead of a regular egg. To make the flax egg, whisk together 1 tablespoon of flaxseed meal with 3 tablespoons of water until combined. Place the mixture in the fridge, let it set for 15 minutes, and then use it in the recipe to replace the regular egg. This is also a good option for anyone with egg allergies, or for those following a low cholesterol diet.

]]>Overnight oats are a breakfast staple in my household. Mornings can be hectic as everyone’s rushing to get ready for work and school, so preparing the oats the previous night saves a lot of time. Making sure my family eats a healthy, well-balanced breakfast is easy with this simple overnight oats recipe. There’s no cooking required. It’s also vegan and gluten-free, making it a great option for those following special diets.
Gluten-free rolled oats provide this morning meal with a good source of dietary fiber. The fiber content of rolled oats includes both soluble and insoluble fiber. Soluble fiber helps stabilize blood sugar levels and lower harmful cholesterol. Insoluble fiber is essential for a healthy digestive system and also gives you a sense of fullness.
Coupled with chia seeds, overnight oats are a fiber powerhouse. Chia seeds are also an excellent plant-based source of omega-3 fatty acids, which protect against inflammation associated with heart disease and other chronic conditions. The combination of rolled oats and chia seeds makes overnight oats a great pre-workout snack that can help sustain energy levels. Since chia seeds absorb up to 10 times their weight in water, they also prolong hydration.
I have made several different kinds of overnight oats before, but my kids seem to love this strawberry and banana version the best. You can use fresh or frozen fruit, which both provide high levels of vitamins and antioxidants. The great thing about this recipe is that you can make endless variations, so you’ll always have something new and exciting for breakfast.
I added chopped walnuts to increase the protein content, but you can also mix in nut butters or even Greek yogurt, for a nut-free version. I tossed some shredded coconut over the top before serving because it lends a nice texture and mild coconut taste. Overnight oats also work well as an on-the-go snack; I’ve taken it to work in a sealed container several times for an energizing boost during the day. I usually make a big batch for my family to enjoy throughout the week.

Capture the tastes of the holiday season with this cranberry-pecan chutney. This recipe combines the flavors of cranberries, pecans, apricots, cinnamon, and apple cider. Sounds divine, right?
