Salad
2 cups cooked and cooled spaghetti or spaghettini
1 red pepper thinly sliced
2/3 cup cabbage thinly sliced
1 bunch green onions thinly sliced
1 cup fresh peas
1 cucumber sliced into matchsticks
handful spicy basil
handful cilantro
handful chives
1/2 cup cashews or peanuts, we used black pepper cashews
1/4 cup olive oil or vegetable oil
1 lime squeezed
1/3 cup peanut butter
a few tablespoons of Siracha depending on taste
1 clove garlic crushed
1 tablespoon fish sauce
Combine the noodles and vegetables and toss with dressing 10-15 minutes before serving.
For the meat, the longer you marinade the steak, the tastier it will be. I thinly sliced a striploin against the grain and marinaded it in teriyaki sauce for 2.5 hours. When it ready to cook, remove from fridge for a few minutes and toss on the bbq on high heat for 2 minutes/side. Let rest for 5 minutes. Once it is ready, toss the cashews into the salad, plate and place meat over the salad.

Asian Shredded Short Rib Noodles with Garlic Bok Choy and Fried Egg (think the title is too long?)
Shredded Short Ribs
1 cup broth
1/2 cup soy sauce
1/4 cup hoisin sauce
2 chilli peppers halved
1 stalk lemonstalk, halved and “pounded”
3 garlic cloves smashed
1 onion halved
1 inch nub ginger roughly chopped
4 beef short ribs, seasoned with salt and pepper
water, enough to cover ribs
Garlic Bok Choy
1 lbs Baby Bok Choy, cleaned and chopped roughly
1 tbs garlic and ginger minced.
1 tbs sesame oil
1/4 cup beef broth
3 tbs corn starch
4 fried eggs
4 cups cooked rice noodles
1 bunch green onions sliced
Sriracha sauce for garnish
Preheat oven to 300 degrees.
Sear seasoned short ribs on medium high on each side until the juices are sealed in and the meat is browned.
Add in all the other ingredients, and throw the whole thing in the oven for 2.5 hours. Sit back and enjoy the smells.
After the meat is done, remove from oven and let cool slightly. Strain sauce into a bowl and put back into pot/dutch oven, adding in corn starch. Bring to boil and simmer over low-medium heat and cook until about half of the liquid is left.
Once the meat has cooled, shred with two forks and return to pot with sauce. Turning heat off.
Fry chopped bok choy with garlic/ginger until garlic is quite fragrant. Add in broth, cover and reduce heat to low.
Cook rice noodles and toss with a few spoonfuls of sauce from the meat. Add into a bowl to plate, adding in bok choy, shredded short ribs and sauce and finally the egg. Use the Sriracha sauce and green onions as the garnish.

]]>Vietnamese Pho: Beef Noodle Soup

1 onion halved
3 inch nub of ginger, halved lengthwise
2-3 pounds of good beef bones, I used rib bone, knuckle and leg
1 package of Pho Spices (1 cinnamon stick, 1 tbs coriander seeds, 1 tbs fennel seeds, 5 whole star anise, 1 cardamom pod, 6 whole cloves in cheesecloth mesh bag)
1 tablespoon kosher salt
1/4 cup fish sauce
1 lbs rice noodles
1/4 lbs beef, thinly sliced
2 limes sliced
3 hot chilli peppers, sliced thinly
Big handfuls of cilantro, basil and mint
2 cups bean sprouts
Hoisin and Sriracha sauce
Char the onions and ginger under the broiler for about 7 minute on each side or until blackened slightly. This will really bring out the flavour of both ingredients.
Parboil the bones to remove the impurities so they don’t end up in your broth. Bring a large pot of water to a boil, add your bones and boil vigorously for 10 minutes. Dump water, rinse bones and pot.
Now for the good stuff! Add those cleaned bones back into your pot and fill with 3-4 quarts of water. Add in the spice bag, salt and fish sauce, bring to a slight boil and turn down to simmer. Simmer the broth for at least 2 hours up to 3 hours.
I boiled the broth the night before so I ended up putting the broth into the fridge overnight so I could skim off the fat that hardens when it cools.
To assemble to soup. Add cooked noodles to the bottom of the bowl. Carefully place the thinly sliced meat on top of the noodles. I ended up freezing the meat for 15 minutes to make it much easier to slice, make sure to slice against the grain of the meet.
Ladle boiling hot broth over the noodles/meat and finish by adding in the herbs, sprouts, hot peppers and sauces.
And enjoy, this one is a keeper!

Serrano Ham & Manchego Cheese Quiche with Asparagus
1 pie crust or 1 tart dough: Pate Brisee courtesy of smitten kitchen
1 shallot, thinly sliced
1 bunch asparagus, woody stocks removed, half chopped and half sliced thinly lengthwise keeping tip’s integrity
1/2 cup serrano ham, thinly sliced
1/4 cup manchego cheese grated, 1/4 cup old cheddar cheese grated
2 tablespoons chopped fresh thyme
1 tablespoon butter
4 eggs, separated
3/4 cup half and half cream
3/4 cup milk
salt and white pepper
Preheat oven to 375 F.
In medium saucepan, melt butter over medium-high heat. Add shallots and chopped asparagus and cook, stirring for 3-4 minutes. Add ham and cook for an additional 1-2 minutes or until ham begins to slightly brown. Remove from heat and set aside to cool.
In large bowl, beat egg whites until they are at least double in size. Add in eggs, milk, cream, thyme and salt and pepper and beat until thoroughly combined. Stir in cheese, cooled ham/veg mix and salt and pepper
Pour egg filling into the pie crust and carefully place sliced asparagus around the top like the spokes of a wheel. Slightly cover the edges of the crust with tinfoil and bake in hot oven for 25-30 minutes. Remove tinfoil of edges and cook for a remaining 15-20 minutes or until the pastry is golden brown and the quiche is slightly wobbly (it will continue to set while resting). Let sit for 10 minutes before cutting.
Enjoy and remember to take a picture before eating it, I most definitely forgot to do that!

Chocolate Cupcakes with Peanut Butter Frosting
Thank you Gimme Some Oven for this wonderful recipe, I followed it line by line, you can find it here! I omitted the mini peanut butter cups in the cupcakes as they were going on top as part of the hat.
For the graduation hats you will need;
Twizzlers Pull and Peel Licorice, each “strand” cut into 2 inch long pieces with one end sliced a few time to resemble the tassel on a graduation cap.
Reese’s Mini Peanut Butter Cups
Flat chocolate bar with large squares pieces, you could also use thin mints
M&Ms, I used dark chocolate M&Ms
Decorative Icing
To transform these into little hats. Place one dot of icing on top of the chocolate square and press the non tasselled end of the licorice into the icing with the M&M. Stick that piece on top of the peanut butter cup with a drop of icing and voilà, a graduation cap! Push these into your cupcake icing and there you have it.

Middle Eastern Steak and Squash Quinoa Pilaf
1 1/2 cups roasted vegetables (I had squash, sweet potatoes, mushrooms and red onions)
3/4 cups chopped cooked steak
1 bell pepper, sliced
2 green onions. chopped
1/4 cup parsley, chopped
1/2 cup cashews, pan roasted on medium heat for 5 minutes – don’t burn them!
1 cup quinoa
1 cup water & 1 cup stock
1 bay leaf, 1 spring thyme
1/2 teaspoon cinnamon, smoked paprika and ground coriander
salt and pepper
1/4 cup olive oil
2 cloves garlic
1 tablespoon lemon juice
2 tablespoons tahini
Prepare tahini dressing by combining the lemon juice, garlic, tahini and salt and pepper. Slowly add olive oil while whisking constantly until thoroughly combined. Set aside
Bring the water/stock combo to a boil over medium-high heat in a small saucepan and add in herbs and spices. Once boiled, add in quinoa, cover and reduce heat to low. Cook undisturbed for 15-18 minutes or until liquid is absorbed. Remove from heat for 5 minutes and fluff with fork when done.
Meanwhile, heat 1/2 tablespoon oil in frying pan over medium heat. When hot, add in bell pepper and sauté for 5-7 minutes. Add in roasted vegetables and steak for a few minutes just to warm them up.
Time to put it all together! Mix in the green onions, parsley, quinoa, cashew and veg/steak mix, tossing lightly (at this point, I also added more lemon juice to the mix, totally optional!). Drizzle tahini dressing over the bowl and dig in, it is best enjoyed warm.

Poulet à l’estragon served with Rice Pilaf and Green Beans
From the Daniel: My French Cuisine, Adapted for 2.
Poulet à l’estragon
9 golf ball-size tomatoes
1/2 tablespoon butter
1 tablespoon olive oil
6 pieces of chicken, bone in and skin on (mix of breast, thigh)
freshly ground white pepper
2 large shallots, sliced
5 ounces pearl onions
1 tablespoon tomato paste
1 1/2 tablespoon flour
1/4 cup tarragon vinegar (I didn’t have tarragon vinegar so I let 2 tablespoons chopped tarragon in with 1/4 cup champagne vinegar and let sit for 2 hours)
1 cup chicken stock
1/4 bunch tarragon
Bring a large pot of salted water to a boil and set a bowl of ice water on the side. Score an X on the bottoms of the tomatoes and pearl onions. Boil them separately for a few seconds or until the skins loosed on the bottoms. Strain and peel under cold running water; set aside.
In a braising pan over medium-high heat, melt the butter with the oil.Season the chicken on all sides with salt and pepper.
Add the chicken to the pan skin side down and sear until golden brown on both sides, about 10 minutes in total. Transfer the chicken to platter, set aside and drain all but 1 tablespoon fat from the pan.
Reduce the heat to medium and add the shallots and onions to the pan. Cook, stirring, until the shallots are soft. Add the tomato paste and flour and cook, stirring for another minute. Add the vinegar, bring to a simmer, then stir in the chicken stock. Bring to a simmer, making sure to scrape the bottom of the pan. Return the chicken to the pan with the tarragon. Cover and simmer for 10 minutes, stirring occasionally. Add the tomatoes, cover and simmer for another 20 minutes or until the chicken is cooked through.
Rice Pilaf
3/4 cup basmati rice
1 tablespoon olive oil
1/2 shallot minced
1 tablespoon butter
1 1/4 cup chicken stock
1/2 teaspoon salt
1 bay leaf, 1 spring thyme and 1 spring tarragon
Rinse the rice with cold water until it runs clear. Heat oil in medium saucepan over medium heat. Add the shallot and cook, stirring, until translucent. Add the rice and stir to coat. Add the butter, stock, salt, bay leaf, thyme and tarragon and bring to a simmer. Cover and cook undisturbed over low heat for 10-15 minutes. Turn off the heat and rest covered for 5 minutes. Remove the lid and fluff the rice with a fork.
Bean Fricassée
Salt
1/2 pound green or yellow wax beans, trimmed
1/2 tablespoon butter
freshly ground white pepper
1/4 bunch tarragon, leaves chopped
Bring a large saucepan of salted water to a boil. Add the beans and boil for 4 minutes, or until tender. Strain, return the beans to the pan over medium-low heat and toss with butter. Season with salt and pepper and toss in tarragon leaves just before serving.
]]>Warm Zucchini Quinoa Salad
1 tablespoon olive oil
1/2 medium zucchini, halved and sliced thinly
1/2 small red onion, halved and sliced thinly
1 bell pepper, sliced thinly
1 jalapeño, sliced thinly (completely optional, still great without it!)
1/4 cup basil leaves, chiffonade
2 cups baby spinach, chopped
1/2 cup pistachios, chopped
1/4 cup olive oil
2 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
1 cup quinoa, I used a mix of regular and black quinoa
2 cups liquid, could be stock or water or a mix of the two
1 spring thyme and 1 bay leaf
salt and pepper
In small saucepan, bring 2 cups of liquid to a boil with salt and pepper. Add thyme, bay leaf and quinoa and bring to a boil. Cover and simmer undisturbed for 15-18 minutes. Remove from heat once all liquid as been absorbed and let sit for additional 5 minutes. Fluff with fork.
Meanwhile heat oil in frying pan until hot. Add zuchinni, bell pepper, onion and jalapeño and fry until onion is translucent, about 5 minutes. Set aside.
Prep vinaigrette by combining lemon juice, salt and pepper, olive oil and garlic.
Once quinoa is cooked, combine vinaigrette, veggies with basil, pistachios and spinach, gently tossing. Enjoy or chill in refrigerator for a cold more portable salad.
