Truman Capote threw “a little masked ball” for 540 of his closest friends on November 28, 1966.  When Capote summoned his pals for a night of dancing (and chicken hash at midnight), he was as famous as he would ever be, and flush with the profits from his critically acclaimed best-selling nonfiction book “In Cold Blood.”

I was always intrigued by Capote’s selections for his midnight dinner at such an extravagant affair which included the very all -American and very homey, chicken hash. It may give us insight into the genius of Capote. This is a beautifully balanced dish that is surprisingly like nothing I have tasted. The red peppers along with the tomato paste are the stars that makes this dish zing. Capote was on to something when he placed it on the menu.

Ingredients

2 whole (4 split) chicken breasts, bone-in, skin-on (see Note below)

16 basil leaves

Olive oil, kosher salt and freshly ground black pepper

Six T unsalted butter, divided

2 lbs boiling potatoes, peeled and large diced

2 red onions chopped

2 large red bell peppers

3 garlic cloves minced

2 tsp fresh thyme leaves

1 tsp paprika

1 T tomato paste – Note: I used 2 T

4 minced scallion, white and green parts

1/4 cup chopped fresh leaf parsley

Sour cream, cheddar and sliced lemons for serving

Note: I used 4 boneless, skinless chicken breasts and baked them for 12 minutes at 425 F.

Directions

Preheat oven to 350 degrees F. Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached. Place 4 basil leaves under the skin of each chicken breast. Pull the skin over as much of the meat as possible so the chicken won’t dry out. With your hands, rub each piece with olive oil and sprinkle very generously with salt and pepper. Bake the chicken for 35 minutes until the skin is lightly browned and the chicken is just cooked through. Set aside until cool enough to handle, then remove the meat from the bones. Cut the chicken in large dice pieces and set aside.

Note: I used boneless, skinless chicken breasts and baked them for 12 minutes at 425 F.

Melt 4 T of the butter (saving 2 T) in a large saute pan. Add the onions and cook for a few minutes and then add the potatoes, 1 t salt and 1/2 t pepper and saute over medium heat for about 10 minutes until evenly browned and cooked through – but not mushy.

In a separate saute pan, melt the remaining 2 T butter and add the red pepper, garlic, thyme, paprika, tomato paste, 1 t salt and 1/2 t of pepper and saute over medium heat for about 5-7 minutes, until the edges of the peppers are seared.

Add the chicken and pepper mixture to the potatoes and heat through. Add the scallions and parsley, toss together and place on a serving platter. Finish with sour cream, cheddar and sliced lemons.

Adapted from Deborah Madison – Greens Cookbook 1987

A friend who lives in Ireland wrote me recently to tell me that she had made a dish from our time together in the San Francisco Bay area. Back in the 80’s, we had a lot of fun cooking, listening to music and dancing with an occasional glass of wine thrown in. This post is for you, Maire.

If the title doesn’t make your mouth water (unless you are not an eggplant/aubergine lover), the recipe will convince you to try this. I made the mistake once of throwing an elaborate dinner party that took me all day to prepare with the main course being an eggplant dish from the New Orleans Chef, Paul Prudhomme. Unfortunately, not all my guests liked eggplant and there was a lot of moving it around on their plates.

The original recipe calls for frying the eggplant, using cream in the custard and adding Gruyere cheese. This is a new twist – Madison revamped it in 2017 with her cookbook: In My Kitchen. This version is sleeker but as Madison says “better for it.”

Eggplant Gratin, Serves 4, Gluten Free

2 lb small glove or larger oblong eggplants

olive oil

1 small red onion

1 plump clove garlic, minced

1/2 tsp herbes de Provence

2 1/2 lb ripe full sized tomatoes peeled and chopped

Sea salt and freshly ground pepper

2 eggs

1 cup ricotta

1/4 cup whole milk

1 good pinch saffron threads crumpled and soaked in 1 tbsp hot water

1/2 cup freshly grated Parmigiano-Reggiano

10 large basil leaves torn into pieces

Step 1 Heat oven to 400 F

Step 2 Cut the eggplants in half lengthwise. If you have one large eggplant, cut it in quarters. Slice each piece crosswise about 1/2 inch thick. Brush the slices lightly with the oil, set them on a sheet pan, bake until the bottom sides have just started to brown (about 15 minutes). Turn them over and brown the second side (about 8 minutes). When the eggplant is done, remove from oven and reduce the heat to 350.

Step 3   To make the tomato sauce, peel and chop the tomatoes. Warm 2 tablespoons olive oil in wide skillet, when hot add the onion, garlic, and herbes de Provence (crushed between your fingers). Stir to coat and reduce heat to medium low and cook slowly until soft, 12 to 15 minutes. Add the chopped fresh tomatoes, raise the heat and cook stirring occasionally until the liquid has cooked off and the sauce is fairly thick. Season with salt and pepper.

Step 4 To make the custard, whisk the eggs and stir in the ricotta, milk, saffron and Parmigiano-Reggiano. Season with a few pinches of salt and some freshly ground black pepper.

Step 5 Choose an earthenware casserole with 2 inch sides and an 8 cup capacity. An oval dish 8″ wide and about 12″ long allows the ingredients to spread to a thin layer along with the custard topping.

Step 6 – Final Step Spread a cup of the sauce in the dish and set down an overlapping layer of eggplant. Scatter half the torn basil over the surface and season with salt and pepper. Dab about 1/4 cup of the sauce over the eggplant and then maker another layer of eggplant and torn basil and cover with the remaining tomato sauce. Pour the custard over all and bake until it has gently swelled and is browned in places, about 40 minutes. Remove from oven and let cool for at least 10 minutes before serving. If there is any left over, it is good at room temperature or cold.

Madison grew up first on a dairy farm in upstate New York, then in a walnut orchard in Davis, California. She put her passion for cooking into motion at the San Francisco Zen Center where she was a student for eighteen years. After eating her first meal at Chez Panisse in 1977, she immediately went to work there until opening Greens Restaurant in 1979. Greens was one of the earliest Bay Area restaurants to have a farm-driven menu as her nearby farm, Green Gulch, provided beautiful, organically grown vegetables to cook with. She is truly one of the pioneers of vegetarian farm-to-table cuisine. An Onion In My Pocket, her latest work is scheduled to come out in September 2020. It is not a cookbook – it is a food memoir.

Chicken Divan In All It’s Glory

Chicken Divan is a creamy, mustardy chicken casserole with lots of vegetables. It is usually served over egg noodles and is designed to use leftover chicken. I did not have leftover chicken so I roasted chicken breasts and I don’t think it needs noodles. I added carrots and frozen peas to the original recipe but it lends itself to using any vegetable you have on hand. You can easily leave out the chicken and make a vegetarian version.

This dish is from Martha Stewart’s Everyday Food with my additions, deletions and personal tips. Don’t be intimidated by the long list of ingredients. I have made it twice now, and even after just two tries, it was much easier. The key is to prep everything and have it ready to go.

Prep: 45 mins Total: 1 hr 35 mins Yield: Serves 6 to 8

INGREDIENTS

  1. 1 bunch broccoli (cut into florets – about 5 cups or 1 1/2 pounds) I like the stalk too so I peel the skin from the stalk and use it.
  2. 1 1/2 pounds boneless skinless chicken breasts
  3. 1 small onion finely chopped (1 cup)
  4. 8 ounces of cremini or button mushrooms sliced (about 2 1/2 cups
  5. 2 medium carrots chopped
  6. 1 cup of frozen peas (or more if you like)
  7. 3 tablespoons all purpose flour
  8. 3 cups whole milk (preferably room temperature)
  9. 9 ounces shredded sharp cheddar (3 cups)
  10. 2 teaspoons Dijon mustard
  11. 2 teaspoons Worcestershire sauce
  12. 1/4 teaspoon cayenne pepper
  13. 1/2 cup sour cream
  14. 1 cup Panko breadcrumbs
  15. 2 tablespoons melted butter

INSTRUCTIONS

Preheat oven to 400 degrees. Toss your chicken breasts in a little oil (grapeseed or olive) and add salt and pepper to taste. Roast on a sheet pan covered with tin foil for 15 minutes and wrap in the foil to cool, saving all the juices.

In a large pan, add broccoli and simmer until crisp tender, about 4 minutes. Drain and transfer to a large bowl.

In a large skillet, melt 2 tablespoons butter, add onion, mushrooms and carrots. Cook stirring occasionally until tender and mushrooms start to brown, 6 – 7 minutes.

Add flour and cook stirring 30 – 45 seconds. Slowly add milk, reduce heat to medium and cook stirring constantly until mixture is thick enough to coat the back of a spoon, about 9 minutes.

Add 2 cups of the grated cheese, Dijon, Worcestershire, cayenne and sour cream. Stir until combined. Add cheese sauce to bowl with the broccoli. Cube your chicken and add to the bowl along with any accumulated juices. Toss to combine.

Transfer to a 2 1/2 quart baking dish.

In a small bowl, combine 2 tablespoons of melted butter to the Panko and add the remaining 1 cup of cheese. Sprinkle over the broccoli mixture.

Bake until bubbly and golden, 20 – 25 minutes. Let cool 15 minutes.

If there any leftovers, it microwaves beautifully.

While we are in our homes during these uncertain times, we find ourselves cooking more than ever but we are also finding a sense of comfort and accomplishment.

This super flavorful ultra-comforting fish stew should keep everyone in the family happy. An added benefit is that you can prepare the whole recipe in advance except for adding the fish. Then reheat the stew and add the seafood minutes before you sit down to eat. Goa is on the southern coast of India and is tropical where coco palms and fresh seafood are abundant.  Goans use a local flat fish called pomfret, similar to sole.  Because I live in Los Cabos, my fish of choice is Perico, a beautiful white snapper that is so clean tasting. I purchase it fresh from my local fish monger whenever it is in season. This stew is flavored with hot peppers, lime juice, coconut milk, ginger, spices and garlic – all good for our immune systems.

INGREDIENTS:

2 pounds fish fillets cut into 1-inch pieces (Shrimp would also work for this dish)

¼ cup fresh lime juice

1 teaspoon salt (divided in two parts)

2 cloves garlic

4 teaspoons of chopped fresh ginger

1 can unsweetened coconut milk

½ Tablespoon ground coriander

1 teaspoon ground cumin

1 teaspoon brown sugar

½ teaspoon fresh ground black pepper

1 teaspoon ground turmeric

¼ teaspoon cayenne

3 Tablespoons cooking oil (I like grapeseed)

1 large onion chopped

1 large tomato chopped

1 serrano minced – seeds and ribs removed  Note:  If you like spicier foods, add more serrano to taste

¼ cup of water

DIRECTIONS:

Step 1:  In a glass container, combine the fish, lime juice and ½ teaspoon of salt.  Let marinate at least 20 minutes.

Step 2:  In blender puree the garlic and ginger with the coconut milk, coriander, cumin, brown sugar, black pepper, turmeric and cayenne.

Step 3:  In a large saucepan, heat the oil over moderate heat.  Add the onion and serrano:  cook stirring occasionally until golden – about 5 minutes.  Add the tomato and cook stirring occasionally until soft, about 5 more minutes.  Add the coconut mixture, water and ½ teaspoon of salt and bring SLOWLY ALMOST TO A SIMMER, stirring frequently.  Note:  At this point you can turn it off and add the fish when you are ready to eat.  Just bring it up to a simmer before adding the fish.

Step 4:  Add the fish and the lime juice it has been marinating in.  Bring to a simmer until fish is just done – about 2 minutes

I like to serve over rice.

I am not a lazy cook but there are days when I just want something easy and not messy. I also love to experiment with new recipes and I do like a challenge.

I have been a lover of Indian food after living in London years ago. I remember cold, foggy nights when my husband and I would dash out in the rain to our neighborhood Indian. The moment we walked through the door it was like stepping into another world. It was warm, cozy and the scent of the food was intoxicating. Naan bread was one of the first things to be placed on the table and it has always held a very special place in my heart. I never thought I could actually make it.

Chris Scheuer and her husband, Scott, are the team behind the Cafe and she came up with this recipe and he took this beautiful photo.

The recipe looked too easy to be real but I loved the idea of eating warm Naan and I had everything in my kitchen to make it without going to the store. So I thought – why not give it a try? I am so excited about it that I had to post (I have not posted anything in over a year). I hope you enjoy making it and eating it as much as I do.

Warm Naan Sprinkled with Flaky Sea Salt and Herbs

INGREDIENTS

For the Dough:

2 cups all purpose flour

2 1/2 teaspoons instant dry yeast not active dry yeast (1 packet)

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt (kosher if possible)

2 tablespoons butter

2/3 cup whole milk

1/2 cup full fat Greek yogurt – cold

To Finish:

2 tablespoons melted butter

1/4 cup finely chopped herbs like parsley or cilantro

Flaky sea salt (optional)

Instructions:

1. Combine the flour, instant yeast, sugar, baking powder, baking soda and salt in a large bowl.  Stir well to combine.

2. Combine 2 tablespoons butter and the milk in a microwave-safe measuring cup.  Microwave on high for about 1 minute or until butter is almost completely melted.  Whisk in cold Greek yogurt until well combined.

3. Make a well in the middle of the flour and add the yogurt mixture.  Stir with a sturdy spoon until the flour is incorporated and the dough comes together.  Drizzle a little oil over the dough and turn to coat.  Cover tightly with plastic wrap and place in a warm spot to rise until doubled in bulk – 60 to 90 minutes.

4.  Turn out the dough onto a generously floured work surface.  Flip the dough over several times to completely coat it with flour.  Divide the dough into 6 equal pieces and form each one into a ball on the floured work surface.  Cover the balls with a clean kitchen towel and let them rest for 15 minutes.

To Finish:

  1. Heat a 9 – 12 inch nonstick saute’ pan over medium heat. While the pan is heating, roll out the Naan into ovals approximately 8 x 6 inches. (I used a measuring tape.). Stack the Naan on top of each other as you roll them.
  2. Set up a work area with the stack of Naan, the 2 tablespoons melted butter and a small pastry brush, the chopped herbs (if desired), a small bowl of water, a clean kitchen towel and a metal spatula for flipping.
  3. When the pan is nice and hot, brush one Naan with water (or use your fingers to lightly coat one surface with water) and place it in the dry pan – no oil – wet side down.
  4. Immediately cover the pan (if you have a glass lid it works best so you can see what’s happening) and allow the Naan to cook about 30-40 seconds or until bubbles appear over the top surface and the bottom is golden brown.
  5. Uncover and flip the Naan to the opposite side. Cook for another 20-30 seconds until the bubbles on the bottom are deep golden brown.
  6. Remove the Naan from the pan to the clean kitchen towel, brush lightly with melted butter (and sprinkle with fresh herbs and flaky sea salt – if desired).
  7. Repeat with remaining Naan.
  8. Serve immediately.

My Notes: I don’t know what kind of yeast I had because it was in my freezer in a jar and I didn’t have the label but I actually do not think it was instant yeast. It rose beautifully but the recipe does call for instant yeast.

Here’s a tip for the rise: I put a small jar filled three-fourth of the way with water and brought it to a boil. I then put my bowl with the dough in it along with the jar of hot water into the microwave and closed the door. The hot jar of water creates a warm moist environment for the dough to rise.

Now for some ideas for different ways to enjoy the bread. Of course, the first would be if you were making a curry but you can also use it with hummus and or tzatziki, eating it Mediterranean style with a plate of olives, red onion, feta cheese, grilled aubergine and tomato. My husband likes it with honey.

Over the years that I have been writing for Baja Beat, I am always so impressed by the people we are surrounded by in our Baja community.  Marco Ireta is no exception – another amazing young professional that we are blessed to have living and working here.

Marco Ireta is a Physiotherapist recognized nationally and Internationally for his clinical experience in the implementation of technologies in Neuro-rehabilitation.  His approach is based on MOVEMENT as the main strategy for the treatment and prevention of neurological and muscular skeletal injuries.  He was invited to come to Los Cabos from Mexico City to work on a project developing a physical therapy clinic.  His partner, Lorena Gonzalez, is also a Physiotherapist specializing in sports therapy and exercise.

Marco and Lorena are starting a new project called Baja Healing Collective, currently in two locations: one in the Finisterra Building and the second one at La Choya, La Playita, specializing in Neuro-rehabilitation (stroke, spinal injuries, multiple sclerosis, cerebral palsy, anything that affects the brain that is related to movement) and musculoskeletal rehabilitation (pain that affects the muscles, ligaments and tendons, and bones caused by trauma to an area (jerking movements, auto accidents, falls, fractures, sprains, dislocations, and direct blows to the muscle)  They are also focusing on home care therapy which means going into people’s homes and taking care of  people for post-surgery and for preventive care.  These people are not necessarily in pain but they need to move – perhaps therapeutic exercises and stretching or maybe some specific strengthening program.

The clinical approach they use is guiding the patients during the pain and rehabilitation process securing all the components so that they can move in a safe way.

For example, Marco is working with a couple who are in their 80’s and 90’s.  He has regular sessions with them twice a week.  They lay down comfortably on mats and he stretches their muscles (depending on assessment), hamstring, glute, groin, lower back, chest and shoulders.  That is considered relaxing stretching because it feels good.  He spends 20-25 minutes doing full body stretching and then does something called activation exercises that are easy to achieve.  It’s a combination of exercises coming from yoga, Pilates and wellness depending on each person’s requirements.  At the end, there is a little challenge.  Right now, because he is working on balance and coordination, they do a small dance, steps to the side, back and front. Because they are artistic, it’s fun and comfortable for them while engaging them to do exercises that they like.

On the first assessment they structure a daily plan that might include fall prevention. Then there is the creation of a safe environment which is so important to lessen the risk of falling.  The next stage is mobility and posture.  In some cases, it can be as simple as having enough flexibility to pick something up from the floor or reach up and grab something.  This is called functional activity.  Strength and coordination are incorporated so if you slip, you have the reaction to control rather than fall.  A personal plan is designed if there is a need to improve balance and posture, practicing exercises that require balance, coordination and strength.

Neuro-rehabilitation can be difficult because patients sometimes are depressed but motivation is the key to everything.  They are working with a patient who had a stroke and when he first started, he was having a hard time standing by himself, and now the patient is walking on the beach by himself and this week he is going in the water. 

This type of exercise is so much better than being in a room just lifting your arm or lifting your leg. The patient is very motivated and he is making amazing progress because he is training and has an objective and he likes a challenge.  He is walking in a small marathon and he has been working hard for that. 

Marco said that his work is rewarding and he realizes what is valuable in life.  “Sometimes we don’t appreciate standing up and grabbing a cup of coffee.  The day that you can’t, that’s when things get depressing.  If I can give help to that person to be independent, I really enjoy doing my life’s work. When I meet the people and get them moving again, we become friends.  Sometimes I spend 1-2 hours per day with a patient and I give thanks to life that I can help them.

Expat911 is a smartphone app that covers you for all types of emergencies when at home, on the road or out for a night on the town.  It utilizes GPS location services which allow the operators to target your exact location.  Many of us may have the capability to say our home address to Mexico’s Spanish speaking 911 operators, but what happens when we are in an unfamiliar area?  How can you explain where you are when you have no idea what the names of the streets are in the area during your emergency?  Also, how will you explain in detail about the type of emergency you are having?

Expat911 is an app that works on Android and iPhone devices.  Within the app you have a profile with information that will speed up the process when reporting an emergency.  You have a basic medical profile which has your blood type, allergies and sicknesses.  There is also a contact area where users can add 1 US/Canada contact and 2 Mexico contacts.  Expat911 will immediately and simultaneously notify your contacts after your emergency has been reported to Mexico’s 911 on your behalf.  This way your family back home will know about your situation and so will the people that you trust here in Mexico.  The Mexico contacts can be neighbors or local doctors that speak English.  Many times our neighbors can come to our aid while we are awaiting the emergency services to arrive.  The Mexico contacts can also be used for our insurance agents or medical air evacuation plans that we may have in place.

So how does Expat911 work during an emergency?  You only have to click on one of the 3 emergency buttons.  There is a button for Police, Ambulance and Fire.  Within seconds an English speaking operator will call your phone and verify the emergency.  If you do not pick up, then they will assume that this is a serious emergency and report to Mexico’s 911 on your behalf.  If you answer, they will verify some quick details about your emergency and then call Mexico’s 911 to report the emergency.  Once the emergency has been reported, they will then confirm this with the user.  At this time they will stay on the phone with you if you request them to, or they will start calling your emergency contacts.  So it is very simple to use during an emergency and all you have to do is click a button.  They will take care of the rest.  They also record all calls so that there is a record of the emergency being reported to Mexico’s 911 and the call with the user as well.

Expat911 does have a cost to use their service.  It is important to understand that this is a 3rd party service who worked directly with Mexico’s C4 and C5 offices around the country.  C4 and C5 are the agencies that handle all 911 calls in Mexico.  Expat911 has a direct line of communication with all local C4 and C5 offices nationwide.

Expat911 was asked by C4 and C5 to open their services to Mexicans because of the GPS factor. Since they do not have those capabilities, they explained that Mexican Nationals may be interested in Expat911 services as well. They mentioned that the Expat911 app was far beyond the technology of their state used apps. Expat911 is now signing up Mexican Nationals for this same reason.

It is also important to realize the value of this service.  An alarm in your home has a cost of thousands of pesos to install.  Then we pay an average of 250 pesos per month to have the service in case the alarm goes off.  So the yearly fee of an alarm in Mexico is 3,000 pesos on average.  This alarm system will only cover your home and you while you are at home.  There are no translation services included with your alarm company and you are only covered for police emergencies.  This is why I see the huge value in Expat911 which has a cost of $99.00 per year.  That cost is close to 2,000 pesos per year and will cover you everywhere within Mexico as long as you have a signal on your cell phone.  Plus Expat911 has the added benefits of being 100% English spoken and contacting your friends and loved ones during your emergency.

Expat911 has recently implemented a couples plan (or family plan).  The first user pays the full amount upon registration.  They will then contact Expat911 to ask for a coupon code which will be used to set up their spouse or family members.  The user will be provided with a 50% off coupon code for any other family members that wish to use the service.  So it is not just limited to your spouse and can also be used for your children, and brothers and sisters who may also be here in Mexico with you.  All additional accounts have a fee of $49.50 which is 50% of the original rate.

Expat911 is already serving a large number of people in Mexico.  They have active users in 11 states and are growing daily.  It is a great service for those of us who have not been able to develop a strong command of the Spanish language.  It is also great for those of us who do speak Spanish well enough but might worry about the stress during an emergency hampering our ability to speak another language.  It is also a great aid when we are traveling to an area that is unfamiliar to you.

I spoke to Management about the possibility of using the Green Angels Roadside Assistance and this is their response:  ” We have told clients that we would help them with roadside assistance. However, we would deal with local 911 offices who would then report to the Green Angels. The Green Angels use 078 for calling and we do not have the local numbers for each Green Angels office. With 911 we do not call 911, we actually call the local C4 and C5 offices directly. With the Green Angels, we do not have those direct local numbers as we did not work directly with them. However, if we report to the local C4 and C5 offices, they can pass the report over to the local Green Angels offices.”

Please follow these steps in order to properly set up your Expat911 Application and Services for your smartphone.  At the bottom of this step by step guide, you will also find links to tutorial videos should you need any assistance with this guide.  The videos show every one of these steps visually which may help you if you come across any issues.

  1. Download app.  Click here to download Android App.  Click here to download iPhone App.
  2. Install Application which will create a logo for Expat911 on your smartphone home page.
  3. Click logo for Expat911 on homepage to open app.
  4. Click on Sign Up link on App’s Log In page when App opens.
  5. Enter First Name, Last Name, Email and Phone Number.  Then click Next.
  6. Enter Date of Birth, Street and Number, Town, Colonia, State, Zip Code and Password.  Then Click on Sign Up button to finish registration within App.
  7. Check your email that you used for registration.  You will receive an email from info@expat911.mxwhich has an activation link.  The email should arrive within 5 minutes.  If you do not find it by then, please check your spam or junk mail folder.  Click activation link within email to receive a notification that your email has been successfully activated.

  9. Visit this link Expat911.  Use the same information to log in that you used when registering your account on the app.
  10. Now click on Orders which is shown on the left side of the page.  Then click on the Go Shop button. Now choose Add To Cart which is right under the $ 99.00 subscription for our services.  Now please click View Cart. Then you will click on Proceed to Checkout.
  11. Please enter your billing information on the next page.
  12. Please read the Terms and Conditions and tick the box that says I have read and accept these terms and conditions.
  13. Now click Continue to Payment.  We use Stripe to process our payment securely for our clients.  We found it better than Paypal because you do not have to have an account with Stripe.  You will just enter your credit card information and click submit.
  14. Now that the payment has been processed, please open the app and log into the app with your information that you used to create the account.  You may receive a pop up at this point which says “Allow Expat911 to access this device’s location?” Please click allow as this is very important for when you report your emergencies.
  15. Now you will finish your profile so that we have all of the information necessary on file when reporting your emergency.  Click on the top left corner of the app to open up the menu. Now click on My Profile. Now click on the top right of the page to edit your profile.  Please fill out any information that is blank such as Medical Information and Emergency Contacts. When finished, please click Save Changes at the bottom.  Now review all of the information in your profile to be sure that all is correct. Also, a quick tip while filling out your contacts. If you are using an iPhone, there will be a small plus sign next to the first contact. If you press this plus sign, it will allow you to add two more contacts.
  16. The last step once finished with the profile is to send two tests.
  17. The first is with the chat. At the bottom of the home page on the app, you will see a chat box. Click on the chat box to open up the keyboard. Now type the word “test” into the chat box and click the arrow on the right side of the chat box to send the chat.
  18. Now click on Police and then click Send. This will send a test police alert. We will respond within the app with the word confirmed.
  19. Once we have confirmed these two tests, you will be added to the main network. We do this to ensure that our users know how to use the app during a real emergency.
  20. In a real emergency, you would just press the corresponding alert button and send. We will take care of the rest.

All further chats and alerts will go directly to our emergency operators.  So after the test has been confirmed, please only use those features for real emergencies.
