“I use onions in everything. I absolutely love them,” says Telina.

“I love the smell of onions. It’s so nostalgic. A Bunnings sausage sizzle is one of my favourite things, but do you know why? It’s not the smell of the sausages cooking, it’s the onions!”

Since starting an apprenticeship at age 17, Telina’s career has soared. Telina has won multiple awards, cooked for the Royal Family and is now Executive Chef at the Hotel Esplanade and mentors chefs across 28 venues.

Telina is a strong advocate for elevating everyday ingredients, and onions are top of their list.

“I want to challenge food service professionals to look at onions in different ways and think creatively,” said Telina.

 

Reimagining the humble onion

At the heart of Telina’s cooking philosophy is Telina’s understanding that onions have far more potential than most chefs give them credit for.

“We need to look at onions in a different way,” says Telina. “They are such a good price and such a versatile ingredient. Rather than using them as a base, we need to treat them as a star, like on a barbeque, roasting them and steaming them and using them as fillings for things like dumplings.”

“Onions can be used in everything and not just savoury dishes, but sweet ones too. You can use pastry as a vessel and use them to make something like a delicious tarte tartin.
They can be fried, used in sauces, like a soubise, or used for their sweetness. They can be cooked low and slow in milk and salt. You’ll be amazed at the flavour you get out of the onions – they have many layers, no pun intended!”

 

Onions at Fine Food Australia

Telina’s commitment to championing onions extends beyond the kitchen. At this year’s Fine Food Australia event, Telina joined a talented team of chefs from the Hotel Esplanade’s Mya Tiger and the Garden State Hotel’s Tippy Tay for the ‘Anything Goes…with Onions’ masterclass as part of the Hort Innovation Onion nutrition education program.

There, they showcased the remarkable versatility of onions with their take on a French dip sandwich, French onion toastie, Xiao-Long Bao dumplings filled with onion and onion xo dipping sauce as well as pasta made from onions.

“It’s important to show the range of what onions can do – how they can be a main component rather than just a supporting player,” says Telina. “We’re also highlighting the hard work of the producers who grow them. People don’t often realize how much effort goes into bringing onions through the journey from paddock to our plates, yet they remain so affordable.”

By using Australian-grown onions and bringing attention to their versatility, Telina hopes to inspire other chefs to treat onions as a centrepiece rather than just a side dish. “We need to look at onions in a different way. They are not just a base; they’re a hero ingredient. And they’re so affordable, we need to celebrate that too.”

The systematic review and meta-analysis, published in Clinical Nutrition, included the review of 14 randomised controlled trials (RCTs), published between years 2007 and 2020.

The RCTs involved onion supplementation as onion extract, onion peel extract, onion juice, onion peel extract powder or steamed onion. Quercetin was the bioactive ingredient in the supplementation.

The results showed onion supplementation significantly improved cardio-metabolic parameters including improved body fat percentage, HDL, LDL and total cholesterol and systolic blood pressure.

Subgroup analysis revealed that prolonged interventions (lasting more than 12 weeks) significantly altered weight, waist circumference, body mass index and both systolic and diastolic blood pressure.

While higher intakes of onion supplementation (more than 300mg/day) were found to significantly improve anthropometric measurements/indices of obesity and hepatic health. Specifically, weight, waist circumference, BMI, body fat percentage, HDL, LDL and total cholesterol, aspartate and alanine aminotransferases, systolic and diastolic blood pressures.

The SLR has some limitations due to the differences in the administration of onion, such as method, dosage, and the part of the vegetable used (e.g. peel, stem, juice).

This research continues to build on the growing evidence supporting the weight management and heart health benefits associated with onion consumption.

Practice tips

A systematic review and meta-analysis of five clinical trials (using onions and onion skin) found body weight, body mass index (BMI), waist circumference and triglyceride levels were all significantly reduced in those who consumed onions compared to placebo groups who did not.

Onions (including both bulb and peel) appear to be a promising natural agent for the prevention of obesity, with supportive in vitro and in vivo evidence. The objective of this study was to perform a meta-analysis and systematic review of the anti-obesity health benefits of onions in well-designed randomised-controlled clinical trials involving a total of 147 subjects across five studies.

Three studies into the anti-obesity effect of onions reported a statistically significant decrease in body weight and BMI in the onion-supplemented group, and two reported a decrease in waist circumference. In all studies, statistically significant reductions in body weight and waist circumference were confirmed, compared with the placebo group.

The lipid-lowering effect of onion was also analysed, and there was a statistically significant reduction in triglycerides compared to the placebo group.

It is speculated that the key component that reduces blood triglycerides is the onion peel. Onion peels are known to contain high levels of quercetin, a type of flavonoid that has preventive effects on chronic metabolic diseases due to its high antioxidant activity, inhibition of lipid accumulation, lipid metabolism regulation and anti-inflammatory effects. However, in this study, there were no significant changes in other blood lipid parameters except for triglycerides, so this should be interpreted with caution.

In addition, since only trials conducted on obese subjects were selected for this study, additional analysis targeting subjects with dyslipidemia is warranted to verify the effect on blood lipids.
This study found convincing evidence that onions are effective not only in reducing body weight and body fat, but also in reducing blood triglyceride levels, and this effect was particularly pronounced with onion peels which have a high quercetin content.

Increased oxidative damage is a major factor responsible for the occurrence of age-related neurodegenerative disorders, including Alzheimer’s disease (AD). As with many health-related conditions, oxidative damage increases with age.

The flavonoid compounds in onion root extract, especially quercetin, could provide a protective effect against neurodegeneration and mitigate the effects of AD by improving antioxidant capacity and regulating gene expression patterns.

There is increased interest in using natural products – such as plant polyphenols – against AD because of their high antioxidant capacity, minimal side effects and relative safety. This study aimed to investigate the protective effect of onion and garlic root extracts on brain damage due to AD in rats.

Brain cell apoptosis is one of the primary hallmarks of AD and affects memory function in the hippocampus. Several studies have shown that onion flavonoid intake, specifically quercetin, protects brain tissues against ageing by inhibiting apoptosis which causes brain degeneration.

Quercetin extracted from onion is linked to the prevention of intracellular ROS (reactive oxygen species) generation in the brain tissues of rats with AD. ROS induces oxidative stress by causing damage to the basic building blocks of brain cells including DNA, protein and lipids. It seems quercetin is a potent scavenger for ROS and hence protects the body against oxidative stress.

The study found that supplementation of the AD rats with onion root extracts mitigated symptoms such as brain lesions, alterations in the expression levels of the apoptotic genes, DNA damage and intracellular ROS generation in brain tissues.

The protective role of onion root extract against AD might result from its content of flavonoid compounds such as quercetin that improve the antioxidant capacity and regulation of gene expression patterns.

  • Quercetin is commonly found in plant foods, and onion is one of the top quercetin-containing foods in the Australian diet. Half an onion (75g) contains on average 30mg of quercetin

However, fresh onions are high in FODMAPs (fermentable oligosaccharides, disaccharides, monosaccharides and polyols), which may be problematic for people with Irritable Bowel Disease (IBD). Eating fermented onions may reduce FODMAP problems and increase the availability of bioactive compounds, especially quercetin. This could help those with IBD enjoy the wonderful flavours of onions in everyday meals, while potentially reducing symptoms of IBD and improving gut health.

Onions are high in fructans, one of the FODMAPs that has been shown to have negative effects on IBD due to its poor absorption in the small intestine, leading to symptoms of Irritable Bowel Syndrome (IBS) in IBD patients.

Fermentation of onions has been shown to enhance onion’s antioxidant activity and the availability of bioactive compounds such as flavonoids and short-chain fatty acids (SCFAs). Diets containing a high content of fermented foods have been shown to increase microbiome diversity and decrease inflammatory activity.

Therefore, fermentation of onion may reduce onion’s FODMAP characteristics and improve IBD. This study aimed to evaluate the effect of fermented onion on gut health in rats induced with IBD. The results showed that fermented onion treatment significantly reduced the mucosal damage by inducing a significant increase in the goblet cell number and the thickness of the mucus layer. Fresh onion, on the other hand, caused a considerable reduction in goblet cells.

In this study, the rats that received the fermented onion showed significantly less intestinal damage compared to the control group that received fresh onion. The fermented onion group also had a higher number of goblet cells, which help to maintain the integrity of the intestinal epithelium by secreting mucin, which contributes to the ongoing replenishing of the intestinal mucus layer. This appears to be the first study that reports the effect of fermented onion on mucus production.

Major immunoglobulins that constitute mucosal immunity are IgA and IgG. IgA is the main antibody generated within the intestines, while IgG is the most prevalent antibody in the peripheral blood. Previous research has shown that patients with IBD had higher levels of serum IgG in the intestinal lumen, as well higher IgA due to impaired mucosal barriers. In this study experiment, IgG and IgA levels in the rats that received fermented onion were significantly reduced, and this group showed improvement in inflammation factors.

The differences in effects between fermented and fresh onions on gut health might be due to the degradation of FODMAP compounds by fermentation, which results in an increase in butyrate in the fermented onion groups, as butyrate has been shown to control oxidative stress in numerous studies. The differences in the chemical compounds of fresh and fermented onions may be another factor that might play a role in the different effects of these two types of onions.

Those that consume onions most frequently may decrease their risk of hip fracture by more than 20% versus those who never consume onions.

For years, calcium plus vitamin D supplementation and exercise have been recommended for reducing bone loss, however studies have indicated only marginal improvement. Laboratory experiments have indicated a possible role for plant-derived phytochemicals in bone remodelling – specifically the role they play in increasing the rate of bone deposition by osteoblasts and decreasing the rate of bone breakdown by osteoclasts. At least three of these compounds have been isolated from onions – quercetin, kaempferol and F-L-glutamyl-trans-S-1-propenyl-L-cysteine sulfoxide.

The researchers performed an analysis of the National Health and Nutrition Examination Survey (NHANES) 2003-2004. The bone density analysis was limited to perimenopausal and postmenopausal non-Hispanic white female participants who were 50 years or older, because bone mineral density declines after age 50 years, and white women have a higher hip fracture risk than African Americans, Hispanics, or Asian/Pacific Islanders.

The 507 study participants were asked about frequency of onion consumption and were grouped according to how frequently they consumed onions as follows: less than or equal to once a month, twice a month to twice a week, three to six times a week, and once a day or more.

The study found that bone density increased as the frequency of onion consumption increased, and individuals who consumed onions once a day or more had an overall bone density that was 5% greater than individuals who consumed onions once a month or less.

The researchers concluded that consumption of onion or onion extract may be a useful addition to other treatment modalities for the prevention of osteoporosis. It is recommended that future research should focus special attention on the association between onion consumption and fracture risk in the hip and lumbar spine.

In the treatment of chronic diseases, the potential effects of vegetables and their phytochemicals have been studied extensively for many years.

Onions are a source of various biologically active phytochemicals such as phenolic acids, thiosulfinates, and flavonoids including quercetin and kaempferol.

A number of in vivo and in vitro studies have evaluated the possible effects of onions and their components on chronic diseases. Some of the more interesting studies include:

Obesity
One randomised, double-blind, placebo-controlled study with overweight and obese individuals, found onion peel extract (containing 50mg of quercetin, 65mg of total flavonoids and 119.2mg of total polyphenol per capsule) prevented fat accumulation in various body parts and had beneficial effects on obesity.

Diabetes
An experimental study using kaempferol, one of the important beneficial components in onions, showed blood glucose levels decreased in diabetic rats.

Cardiovascular disease
Onion juice extracted from fresh onion has shown a hypolipidemic effect on rats, with decreases in plasma total cholesterol, triglyceride and low-density lipoprotein cholesterol levels.

Cancer
Quercetin, an important flavonoid in onion, acts as a chemoprotective agent in cancer due to its effects on signal transduction in angiogenesis and cell proliferation. Other onion phytochemicals (quercetin and its glycosides, flavonoids, polyphenols, organosulfur compounds, anthocyanins, ferulic and gallic acids) also have potential anti-cancer effects such as inhibiting mutagens, carcinogens, free radicals and apoptosis.

Scientific research has found an association between cognition and dietary flavonoids which have anti inflammatory and antioxidant properties. This study investigated flavonoid in foods – including quercetin found in onions, as well as myricetin, kaempferol and isorhamnetin – and their effect on cognitive performance.

The study involved 961 subjects between the ages of 60 and 100 years, who were followed for around seven years. Cognitive performance was assessed annually and their flavonol intake was also measured.

The research showed that a higher dietary intake of total flavonols and flavonol constituents was associated with a slower rate of cognitive decline. The observed associations were independent of other factors such as cardiovascular condition and lifestyle.

The cognitive score of those who ate the most flavonols declined 0.4 units per decade more slowly than those who ate the fewest flavonols. These results were maintained, even after adjusting for other factors that can affect memory, such as age, gender and smoking.

Although the mechanisms are not fully understood, the antioxidant and anti-inflammatory properties of flavonols may have the ability to diminish or even prevent cellular damage, extending to the brain.

In addition, the antioxidant characteristics of dietary flavonols may allow them to prevent and/or reduce oxidative stress from reactive oxygen species and free radicals.

The study’s findings suggest that dietary intake of total flavonols and flavonol constituents may slow the rate of decline in global cognition, and in several cognitive abilities including episodic memory, semantic memory, visuospatial ability, perceptual speed and working memory.

The choice of cooking method can cause substantial changes to the physical structure of onions and, in turn, affect how much of their beneficial phenolic compounds we absorb into the blood stream during digestion.

Cooking processes may induce substantial changes to the physical structure of foods, which in turn have a  softening effect due to the heat-induced breakdown of the vegetable structure.

As a result, the extractability of phenolic compounds may increase after cooking due to the cell walls rupturing, which releases more of the fibre-bound phenolic compounds they contain.

On the other hand, cooking may also negatively affect the stability of phenolic compounds, as some phenolic structures may be degraded by heat during cooking.

To exert their positive health effects, phenolic compounds should be bioavailable, that is, they need to be absorbed into the blood stream via the gastro-intestinal tract during digestion. Since bioaccessibility is highly dependent on the phenolic compound’s extractability, different cooking procedures can have a major impact on their bioaccessibility.

This study set out to assess the effect of the four most common cooking methods (baking, boiling, frying and grilling) on the stability, bioaccessibility and antioxidant activity of phenolic compounds from two onion varieties: yellow-skinned and red-skinned onions, after cooking and in vitro gastro-intestinal digestion. (Yellow onions are equivalent to brown onions in Australia).

The effect of cooking on phenolic compound stability is dependent on a fine balance between their degradation, reaction with other food matrix components, and the increased extractability due to the matrix softening effect.

Baking, frying and grilling resulted in an increased number of phenolic compounds in comparison with the raw onion samples. In red onion varieties, anthocyanins were always degraded independently of the thermal treatment, but with different intensities, depending on the cooking method used.

Of all the cooking methods analysed, baking was the method that produced the greatest number of phenolic compounds available for digestion.

Baking and grilling resulted in an increased gastro-intestinal availability of quercetin, which has been reported to have beneficial effects against colon cancer. After in vitro digestion, baking for both onion varieties – and grilling for red onions – significantly increased the bioaccessibility of phenolic compounds in onions.

These research results suggest baking and grilling should be the top recommended cooking methods for onions, to maximise the bioaccessibility of health-promoting phenolic compounds from onions.
