The post Fourmage appeared first on Cheese News.
]]>This cheese creation is a one of a kind masterpiece developed in Holland. It is a uniquely delicious mixture that harnesses the layers of flavors introduced by the four different milk types. This cheese is creamy velvet, partially in thanks to the rich buffalo milk. It reaches sweet notes from the sheep milk. Brings a fresh break through from the goat’s milk. The cow milk brings back the reassuring Gouda flavor. The unique Buffalo milk ads a deep flavor with that extra creamy smooth finish. It is made like a traditional Gouda, in Holland, where the wonderful animals that make the milk, roam free and munch on fresh, nutritious grass all summer long. It’s a young gouda style cheese keeping the flavor mellow, the texture creamy and wonderful for melting.
In addition to the taste, we would like to tell you a little about the artwork and the name. It is a collaboration between a painter living in The Netherlands, Cheeseland’s owner, a first class cheesemonger, and a pretty darn good designer (yours truly). We all worked together to put a masterpiece on the masterpiece and are excited to share our story with you.
Artist
Ivan Mijatovic unites colors that transport you to another world. Abstract art with nature as inspiration, he uses a large brush and palette knife to build his paintings layer by layer. He adds sand and templates to the acrylic paint, building a spiritual world where everything seems possible.

Cheese Monger
When Cheeseland first brought Fourmage to the Fancy Food Show, it didn’t have a name. Our friend Andreas Levi, from Rainbow Grocery Co-op said, “Hey, you should call this cheese, Fourmage!”…so we did. I asked Andreas how he came up with the name, here is his grate story.
“Cutting the cheese all day long can become quite tedious. My fellow Cheesemongers and I here at Rainbow Grocery Cooperative in San Francisco like to pass the time by coming up with groan-worthy cheese songs using all the cheesey puns we can munster. Some of my flavorites include “Parmigiano Reggiano” (sung to the tune of Falco’s “Rock Me Amadeus”) and “Raclette Me Clear My Throat” by DJ Kool. The name “Fourmage” came to me quite naturally – seemingly out of the blue (d’Auvergne).”
Thank you Andreas, keep cutting the cheese
Dutch Newspaper
The local paper where Ivan Mijatovic lives and paints; The Huizer Courant, interviewed Jan Kos (Cheeseland’s owner) and Ivan. They asked how Jan came up with the idea to use Ivan’s painting, how the two came into contact with each other and what the painting represents.
Jan Kos, “I had the idea for several years to use a painting on one of our cheese labels but I never found the right painting. When I came across Ivan’s artwork on Facebook, the beautiful colors in each painting gave me a happy feeling. I always seek happiness to represent my cheeses and my company. The painting I chose for the Fourmage label is very appealing and the colors melding together remind me of this rich cheese. Fourmage is made from four types of milk, cow, goat, sheep and water buffalo. The painting expresses that mixture on many levels. Now the cheese knife cuts both ways, Ivan shares his painting internationally and I get to fulfill my creative idea while I sell my cheese.”

]]>Jan Kos, owner of Cheeseland continues to share his cheese tasting experience from around the world. Remember that wonderful Goat cheese Jan tasted from the lush tropical forests of the Philippines. He reached out to Gordon Edgar to see what he thought. Mark our Seattle sales rep wrote…
Hi Gordon,
The owner of Cheeseland just came back from visiting a German owned goat farm and cheese plant located on one of the tropical islands of the Philippines The goats are bred to thrive in this warmer and more humid climate. They eat an unusual rich lush mix of greens. Their milk is very rich and this enables the cheese maker to make a variety of some amazing goat cheeses. If you are interested in tasting one of their cheeses I can send you some. Let me know. The earlier the better.
Due to logistical challenges we can’t import them but I think it is worth it to try it just to get an idea what happens on the other side of our cheese world.
Thank you,
Mark
And what did he think…dun da dunn….
This is amazing cheese. Thanks so much! I wish we could buy it.

]]>Cheeseland Inc. exports over Forty Artisan Quality Dutch Cheeses. The owner of Cheeseland Inc. carefully picks only the finest quality cheeses from Holland to bring to his clients around the world. Always on the lookout for something different, he travels the globe talking with customers, chefs and cheese makers. Several of Cheeseland’s cheeses have been recognized as World Champions!
In addition to being curious, Cheeseland’s owner is uniquely creative. Working in collaboration with farmers in Holland to develop his own special cheeses. Born in the Netherlands and now living in the USA, his background and life experience lend to an innate understanding of both traditional quality cheese and what makes an excellent Gouda, along with the unquenchable desire to continue to bring to the world something new.
All of the cheeses represented by Cheeseland Inc. are made from the milk of animals which have been grazing on fresh herbs and grasses in outdoor pastures during most of the year and they are never given any growth hormones to unnaturally increase their milk production. This results in the highest quality, best tasting and most natural milk.
The taste and texture of any cheese is largely dependent on the quality of the milk which is used in the cheese making process. Just like fine wines, the quality of the final product is dependent on the soil and mineral content of the region. In Holland, where the cows, sheep and goats graze in outdoor pastures, they are taking in the vital nutrients of their natural environment. The resulting cheese that is made from this sweet, wholesome milk is natural, healthy and flavorful.
Have you ever heard of Vitamin K2? It is an important nutrient which helps us absorb Calcium. Without Vitamin K2, Calcium can be deposited as plaque in a variety of places, not all of them being beneficial to our health. Fortunately, pasture grazed animals produce milk which is a rich source of Vitamin K2. In addition to that, the process of making and aging cheese with the Gouda culture also produces Vitamin K2. The calcium our body needs, gets deposited in the correct place, with the help of Vitamin K2.
For the best quality, nutrition and taste, look for cheeses that are made from the milk of “grass-fed” or “pasture-grazed” animals.
