Turn Fresh Blueberries into a Healthier Homemade Ice Cream

One of our favorite ways to enjoy fresh blueberries from Autumn Harvest Orchard is in homemade blueberry ice cream. It’s a simple recipe that lets the natural sweetness and flavor of fresh-picked berries shine.

For the best results, start by thoroughly washing your fresh blueberries under cool running water. Remove any stems or leaves, then gently pat them dry before blending.

A Healthier Twist

Instead of relying on a large amount of added sugar and heavy cream, try these easy substitutions:

  • 4 cups fresh Autumn Harvest Orchard blueberries, washed and dried
  • ½ to ¾ cup honey or pure maple syrup (instead of 1½ cups white sugar), adjusting to taste depending on how sweet your berries are
  • 1 teaspoon pure vanilla extract
  • A small pinch of salt
  • 1 cup low-fat or whole milk
  • 1 cup plain Greek yogurt (replaces the half-and-half while adding protein and a creamy texture)
  • 1 cup heavy cream (instead of 2 cups, reducing saturated fat while keeping the ice cream rich)

Directions

  1. Wash and dry the blueberries, then puree them in a blender or food processor until smooth.
  2. Pour the blueberry puree into a medium saucepan. Stir in the honey or maple syrup and warm over medium-low heat just until the sweetener has dissolved. Avoid boiling the mixture, as gentle heating helps preserve the fresh blueberry flavor.
  3. Refrigerate the blueberry mixture until completely chilled.
  4. Stir in the vanilla, salt, milk, Greek yogurt, and heavy cream until well combined.
  5. Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.
    • Alternatively- After stirring in the vanilla, salt, milk, Greek yogurt, and heavy cream, pour the mixture into a shallow, freezer-safe container (a metal loaf pan works especially well because it freezes more evenly).
    • Cover with plastic wrap or a lid and place it in the freezer.
    • After about 45–60 minutes, remove it from the freezer. The edges will begin to freeze first.
    • Use a whisk, sturdy spoon, or hand mixer to vigorously stir and break up the ice crystals.
    • Return it to the freezer.
    • Repeat this process every 30–45 minutes for the next 3–4 hours (about 4–6 times total). Each stir incorporates air and keeps the ice cream smoother.
    • Once it’s firm enough to scoop, let it sit at room temperature for 5–10 minutes before serving.
  6. Transfer the ice cream to a freezer-safe container and freeze for 2–4 hours to firm up before serving.

Top each scoop with a handful of fresh blueberries, chopped walnuts or pecans, or a sprinkle of homemade granola for added texture and nutrition. The extra berries boost antioxidants and make every bite taste like summer.

If you took a stroll past the main building at Autumn Harvest Orchard, LLC yesterday, you might have caught a flurry of movement. Our front wildflower bed was absolutely buzzing with life! We snapped a few pictures of our local bees and butterflies hard at work among the blooms. They are the true backbone of our farm here in Norfolk.

As a USDA Certified Organic farm nestled in Litchfield County, we do not use synthetic pesticides or herbicides. Because we farm in harmony with nature, creating dedicated habitats like this wildflower bed is essential. These flowers provide an organic sanctuary for pollinators, who return the favor by pollinating our 400+ orchard trees and 300+ blueberry bushes. Without these tiny workers, we wouldn’t have our signature organic apples, pears, chestnuts, or summer vegetables. 

Why Wildflower Beds Matter in an Organic Orchard

  • Continuous Nourishment: Trees bloom for a short window, but our wildflower bed provides a steady stream of nectar and pollen from spring through autumn. [1]

  • Natural Pest Control: Wildflowers attract beneficial insects like syrphid flies and ladybugs, which help manage crop pests naturally as part of our Integrated Pest Management. [12]

ORGANIC TRANSITIONS

As a core partner in the ongoing Transition to Organic Partnership Program (TOPP), CT NOFA has provided support to six Connecticut farms during their successful pursuit of organic certification. We are proud to be one of those farms ; a veteran-owned, recently certified organic orchard, vegetable farm, and apiary. We grow over 400 varieties of apples, pears, chestnut, and nectarine trees, along with blueberries. We also offer a CSA program that runs from June to August.

Becoming a Part of Autumn Harvest Orchard CSA

Families and households sign up to purchase a “share” of the upcoming season’s harvest. Community Supported Agriculture (CSA) is a relationship between our farm and you as our customer. Rather than simply purchasing food, our customers become “members” of this CSA farm who receive a portion of the farm’s harvest. This commitment in advance, partners with us on the costs of running the CSA, including seeds, fertilizer, labor, equipment and insurances, most of which are incurred during the spring planting season.

Our CSA runs for 20 weeks, from June thru October.  Members are responsible for showing up at the farm each week to pick up their share.  Detailed information regarding pick-up is discussed below.  The starting week will be based upon production conditions and emailed to all members.
