With so much attention to cold brew and draft coffee on tap, that is - coffee poured from a beer tap, many people have already embraced the top of the trend, NITRO COFFEE which looks like a sophisticated draft beer, but tastes like silky smooth cold coffee.

If you are a coffee fan, it's likely that you have at least heard the term “nitro” or possibly even tasted nitro coffee at a coffee bar, or even at the coffee room at your workplace.

But after the bubbles settle and the caffeine kicks in, some still ask WHAT IS NITRO COFFEE?

Nitro cold brew coffee

In short, NITRO COFFEE is coffee infused with nitrogen gas (N2). The nitrogen is literally dissolved into the liquid coffee, under pressure, similar to the way carbon dioxide is infused into soft drinks and sparkling water.

The actual physics that allows this to happen is based in part on Henry’s Law, which is one of the scientific Gas Laws that explain the solubility of gas into a liquid.

There are a few ways to push N2 gas into the coffee.
One is to pressurize cold coffee in a keg to approximately 45 PSI (3 bars) of pressured and hold it for an extended time. Some agitation makes this happen faster.

A second method is to infuse the coffee with pressurized nitrogen using an infuser device, midstream, as the coffee is dispensed. This method is similar to the way a soda fountain machine infuses carbon dioxide into root beer.

Nitrogen is a little different than CO2 and it takes higher pressure to dissolve it into water-based liquids. The resulting bubbles are also finer which are what make nitrogenation so unique.

Once the nitro coffee is dispensed, it is effectively released out from under pressure, and it forms silky, microfine bubbles, which rise to the surface and create a beautiful, visual effect that is referred to as “the falling". Nothing is actually falling, but rather the bubbles rising cause the heavier particles in the beverage to be displaced and thus appear to be falling.

Not only is the visual effect of this phenomenon interesting to observe, but the effect of the microfine bubbles in the beverage on the palate is that it makes the beverage have a creamy mouthfeel which some equate to tasting softer or better than the same beverage would taste if it were still or flat.

Additionally, there is some science to support the idea that the nitrogen gas actually acts as a preservative as it displaces the oxygen in and around the beverage which helps to eliminate the natural but negative effects of oxidation.

What is the difference between a nitro coffee from a bag-in-box and nitro coffee from a keg?


A Bag In Box Coffee (BIB) is a container made from a combination of cardboard and flexible packaging. Inside, is a barrier bag (or bladder). It is fitted in an exterior cardboard box which protects it. There is a connection fitting welded to the bag and an access a hole in the outer cardboard box where a beverage machine can be connected to the BIB. A pump from the machine, sucks product out of the BIB and delivers it to the dispensing head, where it gets injected with Nitrogen Gas (and in some machines chilled) before getting dispensed into the cup. As it gets dispensed, the bag inside the box collapses and once its empty it leaves behind a low-carbon-foot-print minimal waste package. Since laminated barrier bags with valves are partially recyclable and the cardboard is, these two pieces can be easily separated and correctly disposed of with ease.


Additionally, BIB containers are rectangular which makes them easy to ship, store and handle. Due to their low cost, they are often used to package soft drink syrup and other beverages. However, with the development of better barrier materials some producers are packaging wine and liquid coffee in them. The sizes typically range from under 1, to over 20 liters.

 

As for the pros and cons of nitro coffee in BIBs verses nitro coffee in kegs, each container has its advantages and disadvantages. Most of the BIB coffee products that exist are created as concentrates. As such the product must be reconstituted by adding dilution water to bring it to the final strength ratio. This can be anywhere from a 1 :1 ratio to a 16:1 ratio of concentrate to water. The machines that dispense these products are designed to have a potable water supply plumbed to the machine. One pain-point to this dilution step is that the resulting beverage can pick up any off-flavors, such as chlorine, from the water supply. Also, the potential exists for concentration (brew strength) irregularities at the dispenser.

 

By comparison, coffee dispensed from a keg usually tastes better because the beverage is delivered in its final state, ready-to-drink. Similar to beer or wine, coffee in a keg is made as the master intended it and it doesn’t require any dilution at the service point. Also, since a keg is a rigid pressure vessel, it can be pressurized and pushed with Nitrogen gas and does not required a beverage pump to dispense it.


When it comes to storage and handling, one advantage that bag-in-box concentrates have is they take less storage space and are easier to transport. This is because much of the final beverage volume comes from  the dilution water added at the dispense point. This is often easier than the handling of kegs. However, as we already mentioned bag-in-box coffee usually requires a more complex dispensing solution to dilute and mix it properly and additional steps are necessary for making Nitro Coffee from. Since the BIB container can not be pre-nitrogenated and pressurized, a nitrogen infuser that injects nitrogen gas into the coffee at the dispense point is still required.

 

Contrast that with nitro cold brew coffee in a keg. The product is finished and complete. No further preparation or dilution steps are required.  Bona Fide manufactures its nitro coffee kegs fully nitrogenated. No post infusion is needed in order to pour beautiful nitro coffee on tap. Just hook-up the keg and start serving. It can be poured, either hot or cold, from a simple countertop dispenser. Moreover, BIK (bag-in-keg) type kegs don’t even require compressed nitrogen to pour them. They can be pressurized with any available gas, including air, since the bag inside the keg protects the product from interacting with the propellant gas.

 

Some may ask, can people who currently use bag-in-box coffee easily switch to coffee from a keg? The answer is yes, in many instances! With some simple adapters users can usually switch from a BIB system to a keg system. Two known exceptions could be the Bunn Nitron and the Cornelius, Nitro Coffee machines. Both use a unique container package design, keyed to that type of machine. They use a similar system to the reconstituted juice machines often seen at cafeterias.

 

However, if you use a kegerator, or a countertop draft dispenser with a delivery pump to dispense product from a BIB container, Bona Fide has compatible  products that will fit. For example, our BIK (bag-in-keg) mentioned earlier, is compatible with delivery pump systems used for BIBs. In most cases, only a few fitting changes are required to be pouring from a keg in a matter of minutes. Also, If the BIB system has a dilution feature for pouring concentrates, it may be possible to shut that feature off so that it direct dispenses the product at full strength.

Finally, if the dispenser in question has an inline nitrogen infuser, it can still be utilized and may only need to be readjusted to infuse the coffee correctly.

4. Reduces colorectal cancer risk – Drinking coffee moderately reduces the risk of developing colorectal cancer by up to 26%.

5. Protection against liver cirrhosis – Coffee has been proven to have liver protecting benefits. These help in lowering the risk of developing liver cirrhosis.

6. Reduces depression – A study by the Harvard School of Public Health determined that women who usually drink at least 4 cups of coffee on a daily basis are 20% less likely to get depressed.

7. It will help increase physical performance and burn fat – Caffeine has the ability to raise your metabolism and also increase the fatty acid oxidation. Caffeine has been proven to increase exercise performance by 11% to 12%.

8. Coffee can make you smarter – Through various controlled studies which have been used to observe the effects of caffeine on a human brain, it has been determined that caffeine has the ability to improve reaction time, mood, vigilance, general brain function, and memory.

Will Coffee Dehydrate You?

This is another frequent question related to how healthy coffee is. The simple answer is that coffee will not dehydrate you. As a matter of fact, drinking coffee will contribute to your daily fluid requirements. Drinking coffee will not cause you to lose more fluids that you are ingesting.

People usually fear that coffee will dehydrate them since it has a mild diuretic effect (causes the need to urinate). Coffee Trends That Will Dominate 2018

Coffee is an integral part of the food culture, in a landscape that is rapidly changing coffee trends as existing customers age and a generation of new customers take the stage demanding different products, broader services, and more interactive coffee experiences.

As millennials become the most significant spending demographic in the coffee market, they are forcing new coffee trends and changing the way the industry engages with it’s customers. These are closely related to millennial’s leading faster paced lifestyles, being less socially integrated and favoring social media more than older generations. For them, coffee is closely associated with social interactions, and their relationship with their favorite coffee shop or brand, involves an emotional connection. They are more health conscious and more supportive of indie and artisanal products and craft businesses. Brands are responding to this with new products, experiments in flavors, and trying to adapt to the blurring of lines between traditional market segments, such as at-home coffee and on-premise or out-of-home coffee.

Let us look at five key coffee industry coffee trends which are are expected to dominate 2018:

1. Millenials are the New Market Drivers

Millennials love coffee so much that they are driving a global surge in coffee demand. Millennials, who recently became the largest demographic in America after surpassing the baby boomers, consume 44% of all coffee consumed in America. While millennials born in the 80’s started drinking coffee at the average age of around 17, those born after 1995 started at an average age of 14. Unlike the preceding generations for whom coffee was merely a beverage that they drank at home to rouse them in the mornings, millennials drink coffee for the social experience, as well as a definition of personal self.

Millennials don’t just drink coffee; they share their expertise with their peer group through social media and online discussions with others who share their interest in coffee. While Starbucks initiated this cultural phenomenon, of late McDonalds and Dunkin’ Donuts, along with thousands of independent coffee merchants, are trying to cash in for the millennial’s love for java as well.

2. Ready-to-Drink Coffee Segment Becomes Significant

Canned and ready-to-drink (RTD) coffees are seen as the next frontier for coffee growth, and a great field to start a new business. As users eschewed frozen juices and fizzy drinks in favor of packaged coffee, sales of RTD or bottled coffee touched $2.4 billion in 2015 and have continued to mount, according to Bloomberg. One of the reasons for the rising popularity of bottled cold coffee is the increasing health consciousness of millennials which has caused a fall in popularity of sweetened, carbonated beverages. As they achieve higher purchasing power, millennials, who value mobility, are drawn to RTD coffee’s on-the-go convenience and natural functionality.

The coffee trend toward RTD’s still has a lot of untapped potential because of its capability to shift the paradigms of coffee consumption. Previously, breakfast, lunch or work breaks were the only times of coffee consumption. Coffee was closely associated with a break from work. Earlier coffee trends preferences like, flavors, styles and varieties, closely followed the these consumption periods. Similar to canned colas, RTD coffee can be consumed anytime and anywhere without the need to pause ones activity. Additionally, due to the dynamism of its customers, bottled cold coffee is fertile ground for experiments in flavor and ingredient pairings. RTD coffee also extends the cold coffee drinking season beyond just the summer months to any time of the year.

Recognizing the potential value of the ready-to-drink coffee market, most of the major coffee players have jumped into the fray. Dunkin Brands announced its plans for a new range of cold coffee beverages in 2018, entering a market already occupied by the likes of Starbucks, McDonald's, Peet’s and other chains.

3. Nitro Coffee on Tap

As RTD coffee makes it easier to consume coffee anywhere and anytime, on-premise coffee shops are trying to create unique drinking experiences to draw coffee drinkers back to their stores with innovations such as nitro coffee. Nitro coffee is cold coffee, usually from a keg and infused with nitrogen. The nitrogen makes the texture of the coffee creamier and gives it a rich head on the glass much like that of Guinness Stout. Like beer, it is brewed in advance, stored in kegs and served from a draft tap using nitrogen gas as a propellent. It looks like beer, pours like beer, and yet it’s coffee. The nitrogen introduces an beautiful visual effect as well as an interesting mouthfeel. Some drinkers even perceive a sweetness to the brew without sugar being added.

Nitro coffee on tap is also more sustainable then RTD’s due to its reduced landfill waste. Each keg has the potential to save 80 RTD containers from being thrown away. It is quickly being adopted as the drink of choice for health-conscious, coffee drinkers and proponents of sustainability. As nitro coffee grows in popularity, food service venues of all kinds are putting in draft equipment dedicated to Nitro Coffee. This trend appears to be sticking. Besides the obvious outlets, such as coffee bars, bakery’s, offices, hospitals, airports and even stadiums are tapping into the frenzy.

4. Cold Brews Displace Iced Coffee

For many coffee houses, summer is when customers substitute their hot cup of coffee for an iced coffee. Iced coffee sales have been known to exceed hot coffee sales in warm climates when consumers want a cool, vitalizing, refreshing drink. Traditionally iced coffee was yesterday’s leftover coffee stored in the fridge and served with ice. But now a trend is changing how many brewers prepare coffee for cold consumption, it’s called cold brew coffee. Water temperature is substituted for brew time during the brewing process. Traditional cold brew is made by steeping ground coffee in room temperature water for a period of 8 to 20 hours. The idea is that without the high heat, fewer compounds are extracted out from the coffee grounds, resulting in a less acidic and sweeter taste. This cold steeped coffee is then chilled and served cold. The jury is still out on the value of the process, but the cold brew space is ripe for innovation. Brewers are inventing new methods for extraction using both hot and cold methods or combinations of the two and it’s all loosely considered to be “cold brew”.

One such company, Bona Fide Brewing Company in California, has a patented process that produces food-safe cold, flat and nitrogenated coffee, packaged in tamper-proof beer kegs that are flavor stable at room temperatures for 90 days. They reportedly even sell kegs of nitro coffee on Amazon, a noteworthy industry first. Innovations like this will likely lead to continued growth in this category. Cold coffee is extremely popular, especially among millennials because it combines mass market appeal with indie craft. A Mintel report claims that sales jumped up 580% between 2011 and 2016. Cold brew and Nitro Coffee are both expected to grow briskly as a new coffee trends in 2018 with everyone from the large coffee chains to craft coffee bars serving up cold brews.

5. The (Continued) Rise of Specialty Coffee

Coffee drinkers are continuing the two generation trend to favor more high-quality coffee, with about 59% of coffee consumed daily in the US being specialty (gourmet). Unlike the past decades where one could only buy specialty coffee from a few companies, people are consuming coffees which have unique flavors, specific origins and come at a premium price. Consumer coffee trends, within the larger overall trend of specialty coffee, recognize the roles of the producer and the roaster in producing the perfect cup of coffee.

Specialty coffee sub-trends also emphasize direct relationships with coffee farmers, sustainable farming methods and even technology in order to recognize, and pay for, their effort and care. As coffee drinkers prioritize flavor and the drinking experience, the door has opened for specialty coffees chosen from a wide selection of sources and varieties from all over the world. An example of this is direct trade coffee where coffee roasters deal directly with the coffee producer to get access to the best of the coffee crop. This process is thought to eliminate the middleman and give the producer a larger share of the profits. As an increasing number of people see drinking coffee as a necessary luxury rather than a cheap fix to get through their day, growth in the consumption of specialty coffee products is expected to continue, according to the Specialty Coffee Association.
