I grew up going to dinner at a local family-owned Mexican restaurant in Scottsdale Arizona. My brother actually went to high school with the daughter who’s family owned it. They had a wonderful mariachi band play at your table as they served the best fried Pollo Fundido. I stopped eating animals when I was little but I would sub my chicken for beans.

Now I’ll show you how I make the baked vegan version for my family. They request this meal a lot. It’s my oldest daughter’s favorite.

Prep Notes: the tofu is best when marinated for about an hour. And the nuts will need to be soaked in water for a few hours if you’re not using a high-speed blender like a Blendtech.

Makes 6 Burritos

INGREDIENTS:

Filling:

  • 28 oz Extra Firm Tofu (that’s 2 of the 14 oz blocks, drained)
  • 1/4 cup soy sauce
  • 2 no-chicken bullion cubes
  • 1/2 cup hot water
  • Tofu Seasoning: 1 tsp garlic, 1 tsp onion,   1 tbs ground sage.
  • 8oz vegan cream cheese
  • Taco Seasoning (packet or 2 tsp cumin, 1/4 tsp pepper, 1 tsp onion, 1tsp garlic, 1 Tbs oregano, 1 Tbs chili powder, 2 tsp salt)

Burritos:

  • 6 large Flour Tortillas
  • Avocado Oil

Sauce:

  • 1 cup raw unsalted cashews
  • 1/2 cup raw slivered skinned almonds
  • 3/4 cup unsweetened almond milk
  • 1 Tbs lemon juice
  • 1Tbs Avocado Oil
  • 1 Tbs Salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 5 oz shredded vegan cheddar cheese (on top)

INSTRUCTIONS:

Filling:

  1. In a large mixing bowl add the bullion cubes with 1/2 cup hot water, mix. The soy sauce, and the tofu seasoning. Drain & cube the tofu into small pieces. Add the tofu and mix. Let marinate in this for about an hour while mixing ever so often. Then spread it out on a parchment lined baking tray and bake at 425°F for 20 minutes.
  2. In that same mixing bowl add the cream cheese and the taco seasoning and mash together. Then add the hot baked tofu and mix well.  Leave the oven on.

Burritos

  1. Oil a 9×13 casserole dish. Set the tortilla in the dish and add 1/6th of the filling. Fold into a burrito seam side down (it should be all oily on the outside now. This will make it crisp up when you make them). Repeat six times laying them next to one another. Put the casserole dish in the hot oven at 425°F for 20 minutes until the burritos are all browned. 

Sauce

  1. While the casserole is in the oven, make the sauce. If you don’t have a high-speed blender like a blendtech then you will need to soak the nuts in water in a bowl for a few hours until softened and swollen, then drain.  In a blender, add the nuts, the seasoning, the milk, the lemon, and the oil. *Not the cheese shreds, that’s for on top. Blend until smooth.
  2. Take the casserole out of the oven when browned (leave the oven on) and spread the sauce evenly and generously on top. Add the cheese shreds. Then back into the hot oven at 425°F for another 15 minutes until the cheese is browned and the sauce is melted.

Serve this meal with a side of Spanish rice and refried beans, pico, shredded lettuce, and hot sauce if you like. Enjoy!

Everyone loves this recipe. And when I say Everyone I mean Everyone; my meat-eating make fun-of me for being vegan doesn’t give compliments uncle, my brother, my mother, my father, my friends, kids, etc. They can’t believe how good it is. They get seconds, thirds, they take home leftovers. Even Garfield the cat would take this down in one gulp and lick his lips. And now I’ll share my secrets with you!

Makes one casserole. Serves 8 with a salad, bread, plant-balls, and dessert!

INGREDIENTS:

Nut Cheese

  • 1 Cup Raw Unsalted Cashews
  • 1 Cup Raw Slivered Skinned Almonds
  • 1/4 Cup Unsweetened Plant Milk (i use almond)
  • 1 Tbs Lemon Juice
  • 1 Tbs Sea Salt
  • 1 Tbs Avocado Oil

Ricotta

  • 2 Packages (14oz each) Extra Firm Tofu, drained
  • 1 Tbs Dried Parsley
  • 1 Tbs Avocado Oil
  • 1 Tbs Salt
  • Nut Cheese you made above (half)

Lasagna

  • 1 Lb Lasagna Noodles (cooked aldente)
  • 2 Jars of Marinara Sauce (24oz each)*
  • Baby Spinach
  • Handful of Fresh Basil and Italian Parsley if you have some!

*I use one jar Bertolli basil & garlic, and one jar Rao’s marinara.

Instructions:

Nut Cheese: If you don’t have a high-speed blender like a Blendtech, then you will need to soak the nuts in a dish or jar with water for a few hours until they swell and softened, then drain. In a blender add the nuts, oil, milk, salt, lemon. Blend. If you need more liquid because it got stuck then add a little bit of milk at a time, but not too much because you want it to stay thick. Blend until all the nut pieces are smooth and creamy. Set aside. You will use half in the ricotta and the rest on top of the lasagna.

Ricotta: In a big mixing bowl, put the drained tofu and smash it with a potato masher or fork. Do this until its very small and minced like ricotta looks like. Add the dried parsley, any of the minced fresh herbs you are using, salt, oil, and half the nut cheese you made.  Mix.  Set aside. You will layer this in 3 layers in the lasagna.

Lasagna: boil the noodles until aldente. About 7 minutes. Then in a 9×13 casserole dish, layer the Lasagna in 4 layers.

  1. Sauce
  2. Aldente Noodles
  3. 1/3 of Ricotta
  4. Spinach
  5. Repeat layers 1 through 4 again,  and once more to finish the ricotta.
  6. Top Noodles
  7. Sauce to cover well
  8. Nut Cheese

Bake: Cover with foil or an upside down stainless steel  baking tray. Bake at 425*F in a pre-heated oven for 30 minutes. Should be bubbly. Take the lid off and bake another 10 minutes. Let settle 15 minutes. Enjoy!

Simple easy delish!

Great to take to a potluck to share! Or for lunch for the week.

INGREDIENTS:

  • 1 lb tri-color rotini, cooked
  • 1.5 cups shredded carrots
  • 1.5 cups shredded purple cabbage
  • 1 bunch green onion
  • 1/2 cup raw ground peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 Tbs sesame oil
  • 1 Tbs Agave
  • 1/4 cup water (add more of the dressing needs thinned more. Depends on the peanut butter you use)
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Raw peanuts for garnish (optional)

INSTRUCTIONS:

  • boil pasta and drain. Put cooked pasta back into the pot.
  • Add the shredded carrots, shredded cabbage, and sliced thin green onion (i like to use kitchen scissors).
  • Mix the dressing ingredients together using a hand blender or wisk in a dish, then pour over pasta and veggies and stir well.
  • Put the whole thing in a lidded dish in the refrigerator for an hour and serve cold with a little chopped peanuts on top. Enjoy!

I have such fond memories of eating this soup as a little girl with my dad.
He would always sing “I’m Popeye the Sailor Man, I’m strong to the finich, Cause I eats me spinach… ” and then flash his muscles. At that time he had a double muscle just like Popeye in the cartoon.
I was a daddy’s girl. His little princess. And I wanted to do everything he did, so if this was his favorite meal, then I wanted to eat it too.

Well even though it’s so simple, it packs great micronutrients, and my girls just love it too.
They are happily eating spinach and I’m one happy mama.

So without further ado, here is my vegan version of this childhood recipe, Dad’s Simple Spinach Soup

Makes: 6 servings. Time: 30 minutes.
INGREDIENTS:

  • 12 cups water
  • 6 tsp concentrated veggie bullion paste (better than bullion or the like)
  • 1 cup carrot coins (about 3 carrots)
  • 16 oz orzo or other pastina
  • 3 Tbs nutritional yeast
  • 3/4 cup plant parmesan shreds *use the rest to serve
  • 3 cups chopped baby spinach-5oz container

Notes:
1.the sodium is high in the bullion, salt to taste only

2.Gluten free option- jovial cassava orzo or the like

3.the finer you chop the spinach the better for kiddos. But if you love spinach you can leave it whole. You can use frozen (chopped baby spinach)

Pro Tip: leftovers can absorb a lot of the broth,  just add a little broth when you reheat it and then just some salt. It will be fine. Delish. Mangia

INSTRUCTIONS:

  1. Bring the water, bullion, and carrots to a boil.  add the orzo,  stirring until the water comes to a boil again, lower the heat to a simmer. Add the spinach , nooch (nutritional yeast), cover for 15 minutes. Add the parmesan right at the end. Garnish with more parmesan and serve with warm garlic butter bread
  2. Enjoy

*after making this soup for my father. I have come to find out it’s a version of Stracciatella Soup. And you can add pastina in it if you like, which my dad always did.
I just made the soup exactly like he said to make it. So blame him if it’s not exactly right haha. Well, HE loved the way mine turned out for him on his 62nd birthday. And ate up the whole thing. And that makes my heart happy. I hope this soup does that for you too.

It’s grandpa’s birthday, my husband’s father Tom, and today he is 65! He’s usually here in Arizona from Indiana, visiting the kids on his birthday. I joke with him It’s because we make a big deal about birthdays around here and I’m always making him some kind of dessert from scratch.

This year he requested cherry delight. Now this was particularly challenging for me because I’ve never eaten cherry delight!! But i love a good challenge. So i did my research and decided to give it a go.

But did i decide to make it easy on myself and get the premade ingredients? No. What would be the fun in that?! So here is the recipe from scratch. Now if you would like to get the premade items I’ll make those suggestions in the notes section.

My favorite reaction thus far was the taste test i gave nana to tell me if the cream cheese whip was sweet enough. She said “oooh that’s perfect. So yummy. Tastes just like it! ” and she isn’t one to fluff anyone. Winning.

after we enjoyed my Chickpea Coconut Curry Soup (also on the blog), it was time for the big reveal.
The results were in and…. it was a slam dunk! I’m so elated. i just love making food for my loved ones, especially on their special day. i hope your family enjoys this too.


Here is a picture of snoring grandpa on his birthday with my youngest checking on him to see what all that noise it about.

Makes: 2 pies or 9×11 rectangular one.

Prep from scratch (if you buy the premade suggestions then there is no prep time):

  1. need to chill the canned coconut milk overnight 8 hours
  2. Defrost frozen cherries.
  3. Make the cherry filling the day before so it can cool in fridge and thicken overnight.
  4. Chill the glass bowl for the whipped cream for 15 minutes.
  5. The whole pie needs to sit in fridge for 4 hours before serving.

INGREDIENTS:

  • Cherry Pie Filling:
    • 3 cups frozen dark cherries *2 10oz bags
    • 1 cup organic vegan sugar (no bone char)
    • 1/4 cup corn starch with 3 Tbs cold water to make a slurry
    • 1 tsp lemon juice
    • The juice from the frozen cherries or water (about 1/4 cup) especially if using fresh pitted cherries instead of frozen.
    • Premade Notes: can buy 2 cans organic dark cherry pie filling from health food store instead.

  • Whipped Cream
    • 1 can chilled coconut cream
    • 1 tsp vanilla
    • 1 cup sifted organic vegan powdered sugar
    • Premade Notes: can buy 1 tub of coco whip from the health food store. I didn’t test this so i can’t advocate for the viscosity results. Could be thin. But you could play with adding tapioca starch to it to thicken it as you whipped in the cream cheese and sugar. See below.

  • Cream cheese whip
    • 8oz vegan cream cheese. *i used kite hill almond cream cheese.
    • The whipped cream you made or bought.
    • 1/2 cup sifted organic vegan powdered sugar

  • Graham Cracker Crust
    • 2 cups vegan graham cracker crumbs (20 whole crackers)
      • Nabisco Graham crackers from Walmart in the red box or the gluten free ones from kinnikinnik. These are both vegan options that are honey free.
    • 2/3 cup vegan sugar
    • 1 cup melted vegan butter (i used earth balance)
    • Premade Notes: Two premade vegan pie crusts from health food store. I found at whole foods. 365 brand.

INSTRUCTIONS:

  1. Cherry pie filling: in a medium saucepan add the defrosted cherries reserving the cherry liquid and adding that at the end if needed or if using fresh pitted cherries then adding the water. Let boil on low mixing often until about half the cherries burst. Then add the sugar and lemon and slurry you made up. (The slurry is made with the cornstarch and water in a little dish and mixed so there is no lumps). Stir all this and then remove from heat. Let cool a minute then transfer to glass dish and store in fridge overnight. Try not to snack on it if you can help it.
  2. Whipped Cream: use a large chilled glass bowl and dump the chilled coconut cream in it without adding the coconut liquid. Whip for at least 4 minutes until peaks form using a hand mixer. Add the vanilla and the sifted powdered sugar without the clumps. Mix on low careful not to spray sugar everywhere.
  3. Cream Cheese Whip: add the vegan cream cheese to the bowl of whipped cream, whip. Add one more half cup sifted powdered sugar. Store in fridge to let it cool and thicken more.
  4. Graham Cracker Crust: in a large bowl mix with a fork the crumbled graham cracker, sugar, butter. Press it into a greased 9×11 baking dish or two 8 inch pie dishes *set 4 spoonfuls aside to decorate the top with!
  5. Cherry Delight: on top of the crust scoop half the cream cheese whip and spread evenly. (Or 1/4 if using 2 pies) Then add the cherry pie filling and carefully spread without mixing it all up. Add a second layer of cream cheese whip. Top with extra crumbled graham crackers. Let chill in fridge 4 hours.
  6. Enjoy!

For this pot pie i made the whole thing in one big stainless steel pan that can go right into the oven. If you don’t have a pan like this (or cast iron) do not fret, you can just transfer it into a greased baking dish to bake.

I found this great vegan puff pastry from aussie bakery out of Washington. My whole foods market carries it. If you can’t get a hold of this you can do a few different things; you can use Cresent rolls (many are vegan, immaculate brand to name one), you can use filo paper, or make drop biscuits, or thinly slice potatoes for the top, or just omit all together, and eat the filling, like my 6 year old does!

Pan Pot Pie, Vegan

Makes: 6 servings. Timing: 45 minutes

INGREDIENTS:

  • 5 small red potatoes (size of kids fist)
  • 14 oz package extra firm tofu
  • 4 cups broccoli florets (i used frozen)
  • 2 cups frozen peas and carrots mix
  • 3 Tbs flour
  • 4 cups water
  • 4 tsp vegetable bullion
  • 2 tsp sage
  • 2 tsp onion powder
  • 2 tsp dried parsley
  • 3 tsp nutritional yeast
  • 3 Tbs vegan butter (divided 2/1)
  • Package of puff pastry (thawed but chilled)
  • Salt to taste

INSTRUCTIONS:

  1. In a large skillet in medium heat with some oil, add diced potatoes (diced very small) and the frozen peas and carrots. Heat for a minute or two.
  2. Then add the dry flour and stir. Turn up the heat and slowly add the water and stir. When it starts to boil a little lower back to simmer.
  3. Add the bullion and seasonings and 2 Tbs butter (reserve 1 Tbs butter to brush the top of puff pastry) mix. Then add the drained and cubed tofu (very small. I sliced the block in fours thick-wise and then cubed it) and add the frozen broccoli.
  4. Preheat the oven to 400°F while you set timer for 15 minutes on simmer for the pan on the stove.
  5. Flour your surface and cut your puff pastry how you like; triangles, lattice strips, etc and arrange on top how ever you want. Then brush with remaining melted butter (1 Tbs). Sprinkle with some salt.
  6. Bake for whatever time your puff pastry says (until puffed and golden brown).
  7. Let cool.

I’ve been vegan for many years but I always made smashed chickpea salad instead.
I never liked the idea of raw cubed tofu.

But I finally broke down and bought that black sulpher salt everyone talks about that makes tofu taste and smell like eggs! Something I think I really didn’t want, haha, since that is probably one of the grossest parts about cooking eggs. 
BUT…. I was wrong, because it really does do something in the brain to make the experience more like eggs. Especially for egg salad.

This recipe calls for sautéing the tofu, seasoning, mixing,  refrigerating.

It’s so yummy!

Makes: 5 sandwiches (note* make ahead since it needs to chill one hour)

INGREDIENTS:

  • 28 ounces extra firm tofu
  • 1/4 cup tamari/soy sauce
  • 2 Tablespoon nutritional yeast
  • 1/2 teaspoon course sea salt
  • 1 teaspoon black salt (eggy sulpher flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoon turmeric
  • 1 Tablespoon avocado oil for cooking
  • 4 ribs celery cut small
  • 2 Tablespoons vegan mayo
  • Options: tomato slices, lettuce, rye or whole grain bread lightly toasted, or wrap, or on top of greens, extra mayo for the toast and more black salt and black pepper when served

INSTRUCTIONS:

  1. Heat lightly oiled pan, medium. Drain tofu. Crumble (note* i use a wide masher like in the reference picture, or use your hands or fork, keep chunky.
  2. Add all the seasonings in the ingredients list minus the mayo and celery. Heat thru until most water is absorbed.
  3. Pour in a lidded container, with the diced celery (note* see reference photo for tips on how to cut small) and mayo. Mix. Refrigerate. Up to one hour.
  4. Lightly toast your bread, spread more mayo, add tomatoes, lettuce, black pepper, the tofu egg, more black salt. Or make a wrap, or over greens
  5. Enjoy!

This recipe is such a beautiful one to make for the family on Sunday for everyone to just enjoy at leisure all day long from the hot instant pot.

If you don’t have an electric pressure cooker, you can still make this without issue in one pot on the stove top. Instructions below.

This recipe is made without tomatoes or tomato sauce!

Notes:

1. to make this recipe nut free. Omit the cashews. And add a bag of plant based cheese shreds at the end of cooking in the ipot while it’s still hot.

2. To make this gluten free, opt for a brown rice pasta instead.

3. To make this SOS-free opt for no oil, no salt, and use the date option instead.

Vegan Chili Mac by Mama Bella

Makes: 8 servings (4 qts)

Cooking Time: total pressure cooker time is about 50 minutes of coming to pressure, cooking, then natural release. Stove top time is about 35 minutes.

INGREDIENTS :

  • 1 cans Red Kidney Beans ( drained& rinsed)
  • 1 package (12oz) Extra Firm Tofu (drained)
  • 1/2 cup Uncooked White Quinoa
  • 1 Bell Pepper (Red or Orange)
  • 1.5 cups Cashews* (raw)
  • 8 oz Cavatelli (or small pasta)
  • 16 oz Fire Roasted Red Bell Peppers (in water)
  • 2 Veggie Bullion Cubes
  • 4 cups Water
  • 1/2 cup Nutritional Yeast
  • 3 Tbs Chili Powder
  • 2 Tbs Garlic Powder
  • 2 Tbs Onion Powder
  • 1 Tbs Cocoa Powder
  • 1 tsp Sugar (or 1 medjool date)
  • 2 Tbs Salt
  • 2 Tbs Lemon Juice
  • 1 Tbs Avocado Oil (optional)
  • Notes:
    • *if you do not have a high speed blender, soak your cashews overnight in water in a open container on the counter. Drain.
    • the seasoning amounts are high because the tofu, quinoa, and pasta all need to soak up the flavors. Trust and believe.

INSTRUCTIONS:

  1. In a blender, add the jar of Roasted Bell Peppers including the salty water plus 2 Bullion cubes, oil, plus 4 cups water. (Total liquid should equal 24oz) add all the seasoning. the cashews and nutritional yeast and lemon juice. And the pitted date if using instead of sugar. Blend well until smooth.
  2. In the inner pot of an electric pressure cooker, add the drained tofu and smash with potato masher so that there is no chunks and it is completely minced into crumbles but not mush. Tip: think tvp texture
  3. Dice the bell peppers into small chunks but not too finely because you want this to add texture, add those to the pot, along with the drained and rinsed beans, the sauce you blended, the quinoa, and the pasta. Stir.
  4. Close lid, set the valve to sealing, and set pressure cooker time for 8 minutes with natural pressure release.
  5. Note: for pot on the stove. Follow the above steps and then set to high until boiling, stir then lower to simmer with lid on for 25 minutes.
  6. Serve with avocado, vegan cheese shreds, vegan sour cream, or tortilla chips, hot sauce.
  7. Enjoy!

I made up this recipe when my midwestern in laws came to visit to meet their newest grandbaby, our second child Tevy Lou “Baby Bella”. They stayed for 3 weeks, no not with us, thank goodness, haha, in their new rv nearby in the desert mountains complete with wild horses and coyotes howling at night.

I needed something hearty, filling, fast, easy, omni friendly, recognizable, but did i say easy? I mean i had just had a baby and didn’t have time to fuss.

I asked my sister (best friend over 25 years whom my kids call auntie) what do you think about this idea? She is vegan now too after the birth of her 4th child when he showed signs of a milk protein allergy through breastmilk. She helped me come up with this great casserole.

Well the dish was such a great success. They both ate seconds! And my mother in law exclaimed how good it was 3 times! And she never does that, ha. She actually said she would like to make it at home. And she loved the vegan sour cream better than a dairy one. (It was kite hill almond based one, the best!)

I’ve made this dish with either plant based chicken or brown/ green lentils as the filling. I’ve included both version below. I like to serve this with a side of sautéed spinach (in oil and garlic) to increase the nutrient value of the meal. It’s plenty filling on its own as a main dish.

Ready in under an hour start to finish… or prep it ahead and freeze it for a new mama or sick friend or holiday potluck

INGREDIENTS:

Cashew Green Chile Sauce

  • 1.5 cups raw cashews (*soaked in water overnight if you don’t have high speed blender, drain)
  • 1 Tbs lemon juice
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 3 tsp nutritional yeast
  • 2 tsp sea salt
  • 8 oz green chiles
  • 2 cups water

Casserole

  • 16 oz chopped Abbot’s Butcher plant based chick’n (or 4 cups cooked green/ brown lentils if gf)
  • 12 small flour & corn tortillas (or corn for gf)
  • 8 oz shredded vegan cheese (or double the sauce recipe instead of cheese for an oil-free version)
  • 4 oz diced green chile can
  • packet of southwest taco seasoning
  • Optional: served with vegan sour cream & hot sauce
  • Note: to add some veggies you can add baby spinach to this or diced bell pepper or simply serve it with a side of garlic sautéed spinach.

INSTRUCTIONS:

  1. Preheat oven to 425°F
  2. Blend the Cashew Green Chile Sauce ingredients together.
  3. In a well oiled 9×13 casserole dish layer the ingredients as follows
    1. Ripped tortillas (4)
    2. Chicken/ lentils (& any veggies if using)
    3. Seasoning
    4. Sauce (half)
    5. Ripped tortillas (4)
    6. Chicken/ lentils
    7. Seasoning
    8. Sauce (half)
    9. Ripped tortillas (4)
    10. Cheese shreds
    11. Green chiles
  4. Bake covered about 40 minutes
  5. Serve with vegan sour cream and hot sauce, side of spanish rice and some chopped lettuce with pico
  6. Enjoy!

Notes: to eliminate the use of foil i just turn my stainless steel baking tray upside down on top of my clear glass Casserole dish.

the sauce came out amazing!

everyone loved it, five year old, and even the baby!

we used abbots butcher pea protein ground beef. i like this product because the ingredients are super clean whole pea protein and nice seasoning. it’s soy free, gluten free.
(i didn’t realize till later it has a tomato paste inside the grounds, so if you truly need a no tomato option then i would go with green lentils for your joes and use this sauce!)
