
I grew up going to dinner at a local family-owned Mexican restaurant in Scottsdale Arizona. My brother actually went to high school with the daughter who’s family owned it. They had a wonderful mariachi band play at your table as they served the best fried Pollo Fundido. I stopped eating animals when I was little but I would sub my chicken for beans.
Now I’ll show you how I make the baked vegan version for my family. They request this meal a lot. It’s my oldest daughter’s favorite.
Prep Notes: the tofu is best when marinated for about an hour. And the nuts will need to be soaked in water for a few hours if you’re not using a high-speed blender like a Blendtech.

Serve this meal with a side of Spanish rice and refried beans, pico, shredded lettuce, and hot sauce if you like. Enjoy!










Everyone loves this recipe. And when I say Everyone I mean Everyone; my meat-eating make fun-of me for being vegan doesn’t give compliments uncle, my brother, my mother, my father, my friends, kids, etc. They can’t believe how good it is. They get seconds, thirds, they take home leftovers. Even Garfield the cat would take this down in one gulp and lick his lips. And now I’ll share my secrets with you!

Makes one casserole. Serves 8 with a salad, bread, plant-balls, and dessert!
INGREDIENTS:
Nut Cheese
Ricotta
Lasagna
*I use one jar Bertolli basil & garlic, and one jar Rao’s marinara.


Instructions:
Nut Cheese: If you don’t have a high-speed blender like a Blendtech, then you will need to soak the nuts in a dish or jar with water for a few hours until they swell and softened, then drain. In a blender add the nuts, oil, milk, salt, lemon. Blend. If you need more liquid because it got stuck then add a little bit of milk at a time, but not too much because you want it to stay thick. Blend until all the nut pieces are smooth and creamy. Set aside. You will use half in the ricotta and the rest on top of the lasagna.

Ricotta: In a big mixing bowl, put the drained tofu and smash it with a potato masher or fork. Do this until its very small and minced like ricotta looks like. Add the dried parsley, any of the minced fresh herbs you are using, salt, oil, and half the nut cheese you made. Mix. Set aside. You will layer this in 3 layers in the lasagna.

Lasagna: boil the noodles until aldente. About 7 minutes. Then in a 9×13 casserole dish, layer the Lasagna in 4 layers.



Bake: Cover with foil or an upside down stainless steel baking tray. Bake at 425*F in a pre-heated oven for 30 minutes. Should be bubbly. Take the lid off and bake another 10 minutes. Let settle 15 minutes. Enjoy!

I have such fond memories of eating this soup as a little girl with my dad.
He would always sing “I’m Popeye the Sailor Man, I’m strong to the finich, Cause I eats me spinach… ” and then flash his muscles. At that time he had a double muscle just like Popeye in the cartoon.
I was a daddy’s girl. His little princess. And I wanted to do everything he did, so if this was his favorite meal, then I wanted to eat it too.
Well even though it’s so simple, it packs great micronutrients, and my girls just love it too.
They are happily eating spinach and I’m one happy mama.
So without further ado, here is my vegan version of this childhood recipe, Dad’s Simple Spinach Soup

1.the sodium is high in the bullion, salt to taste only
2.Gluten free option- jovial cassava orzo or the like
3.the finer you chop the spinach the better for kiddos. But if you love spinach you can leave it whole. You can use frozen (chopped baby spinach)
Pro Tip: leftovers can absorb a lot of the broth, just add a little broth when you reheat it and then just some salt. It will be fine. Delish. Mangia

*after making this soup for my father. I have come to find out it’s a version of Stracciatella Soup. And you can add pastina in it if you like, which my dad always did.
I just made the soup exactly like he said to make it. So blame him if it’s not exactly right haha. Well, HE loved the way mine turned out for him on his 62nd birthday. And ate up the whole thing. And that makes my heart happy. I hope this soup does that for you too.

It’s grandpa’s birthday, my husband’s father Tom, and today he is 65! He’s usually here in Arizona from Indiana, visiting the kids on his birthday. I joke with him It’s because we make a big deal about birthdays around here and I’m always making him some kind of dessert from scratch.

This year he requested cherry delight. Now this was particularly challenging for me because I’ve never eaten cherry delight!! But i love a good challenge. So i did my research and decided to give it a go.
But did i decide to make it easy on myself and get the premade ingredients? No. What would be the fun in that?! So here is the recipe from scratch. Now if you would like to get the premade items I’ll make those suggestions in the notes section.

My favorite reaction thus far was the taste test i gave nana to tell me if the cream cheese whip was sweet enough. She said “oooh that’s perfect. So yummy. Tastes just like it! ” and she isn’t one to fluff anyone. Winning.
after we enjoyed my Chickpea Coconut Curry Soup (also on the blog), it was time for the big reveal.
The results were in and…. it was a slam dunk! I’m so elated. i just love making food for my loved ones, especially on their special day. i hope your family enjoys this too.

For this pot pie i made the whole thing in one big stainless steel pan that can go right into the oven. If you don’t have a pan like this (or cast iron) do not fret, you can just transfer it into a greased baking dish to bake.
I found this great vegan puff pastry from aussie bakery out of Washington. My whole foods market carries it. If you can’t get a hold of this you can do a few different things; you can use Cresent rolls (many are vegan, immaculate brand to name one), you can use filo paper, or make drop biscuits, or thinly slice potatoes for the top, or just omit all together, and eat the filling, like my 6 year old does!

I’ve been vegan for many years but I always made smashed chickpea salad instead.
I never liked the idea of raw cubed tofu.
But I finally broke down and bought that black sulpher salt everyone talks about that makes tofu taste and smell like eggs! Something I think I really didn’t want, haha, since that is probably one of the grossest parts about cooking eggs.
BUT…. I was wrong, because it really does do something in the brain to make the experience more like eggs. Especially for egg salad.
This recipe calls for sautéing the tofu, seasoning, mixing, refrigerating.
It’s so yummy!

1. to make this recipe nut free. Omit the cashews. And add a bag of plant based cheese shreds at the end of cooking in the ipot while it’s still hot.
2. To make this gluten free, opt for a brown rice pasta instead.

Vegan Chili Mac by Mama Bella

I made up this recipe when my midwestern in laws came to visit to meet their newest grandbaby, our second child Tevy Lou “Baby Bella”. They stayed for 3 weeks, no not with us, thank goodness, haha, in their new rv nearby in the desert mountains complete with wild horses and coyotes howling at night.
I needed something hearty, filling, fast, easy, omni friendly, recognizable, but did i say easy? I mean i had just had a baby and didn’t have time to fuss.
I asked my sister (best friend over 25 years whom my kids call auntie) what do you think about this idea? She is vegan now too after the birth of her 4th child when he showed signs of a milk protein allergy through breastmilk. She helped me come up with this great casserole.
Well the dish was such a great success. They both ate seconds! And my mother in law exclaimed how good it was 3 times! And she never does that, ha. She actually said she would like to make it at home. And she loved the vegan sour cream better than a dairy one. (It was kite hill almond based one, the best!)
I’ve made this dish with either plant based chicken or brown/ green lentils as the filling. I’ve included both version below. I like to serve this with a side of sautéed spinach (in oil and garlic) to increase the nutrient value of the meal. It’s plenty filling on its own as a main dish.

I’m huge fan of using the brand Abbot’s Butcher. Not only does it have such clean ingredients i feel good about feeding my kids, but it’s also woman owned! The slow roasted chick’n is made with whole pea protein and is soy free and oil free. This product is ideal for this casserole because the pieces are chopped up very small already.

we used abbots butcher pea protein ground beef. i like this product because the ingredients are super clean whole pea protein and nice seasoning. it’s soy free, gluten free.
(i didn’t realize till later it has a tomato paste inside the grounds, so if you truly need a no tomato option then i would go with green lentils for your joes and use this sauce!)

disclosure: I’m not eating tomato right now because we have noticed the baby doesn’t respond well when she gets it through my breast milk.
