Oh my veggies!!!
Tonight was our first time making walnut taco “meat” and boy – o – boy was it so good! Kids, hubs, and grandma all licked their plates clean 🤤
We made it with taco salad and used your cheez sauce too!

This is one of the best vegan dishes I’ve made since going vegan 4 years ago. I know, that is high praise for a simple rice casserole, but something about the cheese flavor was so spot on and I guess it triggered a memory for me. I haven’t felt deprived as a vegan, but the texture and flavor of this dish was just so reminiscent of food I “used” to eat. Husband loved it and I recommended it to all my friends. Next time will try adding some chickpeas.

Made this cheezy casserole for my Easter dinner. Holy guacamole did my kiddos love it! The pan was mostly emptied by the end of dinner (little did they know its like 96% veggies!) Definite mom win Thanks for sharing this grest recipe
