A couple of changes that I made: In addition to the red pepper, I add finely chopped sun-dried tomatoes. The dressing, combined with the kale, was a tad tart for me so I added a touch of raw melted honey and I happened to have macadamia nut oil on hand and found that it worked wonderfully with the kale and the pine nuts. Trader Joe’s often carries pine nuts at a lower price than you’ll typically find.
