Do you crave pasta but are worried about all the carbs? I bring you good news. You can eat noodles but not pile on carbs at the same time.

Meet shirataki, a zero-calorie, fat-free, gluten-free noodle — sold as NoOodle or Miracle Noodle — is ideal for people, who are seeking to restrict sugar, calories, and carbs.

Made from a water-soluble dietary fiber called glucomannan, shirataki noodles come from the root of the yam-like konjac plant native to Asia.

Often called shirataki or konjac noodles, these traditional textured noodles are thin, chewy, translucent, gelatinous, and have almost no flavor by themselves. 

Super low in carbs with zero calories, their key ingredient is a water-soluble dietary fiber called Glucomannan, which is derived from the root of yam-like Konjac plant grown in Japan and China.

It’s the one-year bookiversary of I Blew My Diet! Now What? To mark this joyful occasion, I’m pleased to share a new recipe from Chef Lizette Marx for a delectable, sugar-free, gluten-free, dairy-free dessert.

In this dish, chocolate macaroons meet sumptuous chocolate fudge and berries. What could be a better way to celebrate? Unlike most decadent treats that fill pastry cases, these mouth-watering tarts contain absolutely no sugar except for the natural sweetness of coconut and fresh berries. It’s a perfect Bounce Back Boldly dessert!

Makes 4, 3-inch tarts
Ingredients
Egg White Meringue
3 large egg whites
1/8 teaspoon sea salt
1 teaspoon vanilla extract
1/4 cup blanched almond flour
1 tablespoon unsweetened cocoa powder, sifted
2 cups unsweetened shredded coconut

Creamy Chocolate Fudge
1 tablespoon coconut butter
3 ounces unsweetened chocolate
Pinch of sea salt
1/2 teaspoon vanilla
1/4 cup coconut cream
1 teaspoon ghee

Garnish
1 ounce of unsweetened chocolate for grating on top of dessert, optional
1 cup fresh berries (choose raspberries, blackberries or blueberries or all three)

Directions

Preheat oven to 350º
Egg White Meringue

  1. Whip egg whites until foamy, add sea salt and vanilla and continue beating until stiff peaks form. To test this, stop the electric beater and then lift the whisks up and away from the beaten egg whites. If the whites make peaks and hold their shape, they are ready!
  2. Sift almond flour and cocoa powder together and gently fold into egg white batter. Once incorporated fold in shredded coconut. The mixture will look a little lumpy but keep folding until you don’t see any dried bits of coconut or almond flour and cocoa.
  3. On a parchment-lined baking sheet, form 4-inch round tart shells. The shells should have edges a little higher than the base so they can hold the chocolate fudge and berries. (If you have them, you can also use 4-inch round, non-stick tart shell pans.)
  4. Bake macaroon shells for 20 minutes turning the pan half way through baking time, so the tops and edges of the coconut become lightly toasted.

Creamy Chocolate Fudge

  • While macaroon tart shells are baking, make the chocolate coconut fudge. Make a double boiler by setting a metal or other heat proof bowl over a sauce pan of simmering water. Make sure the bowl does not touch the water. Break the chocolate into pieces and place in the bowl with coconut butter. Stir from time to time until melted. Remove from heat and add the coconut cream, pinch of sea salt, vanilla and ghee. Allow to cool slightly but not completely or the fudge will be too thick to spread into the tart shells. If the chocolate does get too thick, place over the simmering water again to melt slightly.
  • When the tart shells are done, spoon the chocolate fudge into the bottom of the tart shells. Cool until chocolate is partially set.
  • Top shells with berries and shave more chocolate on top if desired.

It’s time to celebrate love with your special Valentine or your Galentines. Here’s a yummy, sugar-free, dairy-free, gluten-free, KetoMod (modified ketogenic) recipe to whip up tasty, heart-shaped truffles made with fresh strawberries, coconut butter and coconut oil, dipped in melted dark chocolate. Special thanks to talented chef Lizette Marx for creating this scrumptious recipe for you.

Yield: Approximately 12 hearts
Serving size: 2 hearts


Ingredients
1/3 cup coconut butter
¼ cup coconut oil
4 medium-sized strawberries, chopped
2 tablespoons full-fat, unsweetened coconut milk
1 teaspoon lemon juice
Pinch of Himalayan sea salt
3 ounces unsweetened dark chocolate, broken into pieces

Directions

Add coconut butter and coconut oil into a small saucepan and melt over low heat. Pour the melted coconut butter and oil into a blender with strawberries, coconut milk, lemon juice, and sea salt. Purée until smooth.

Carefully spoon strawberry coconut mixture into small heart molds or ice cube trays. If you want a two-tone effect, fill each mold 3/4 of the way with this mixture so that you have room to add a layer of melted chocolate later. If you want to drizzle the top of each truffle with melted chocolate instead, fill them all the way with the strawberry coconut mixture.

Chill in the refrigerator for an hour or until set.

Once truffles are chilled and firm, start melting the chocolate.

Place chocolate pieces in a heat-proof bowl and set over a small pot of simmering water. Make sure the bottom of the bowl doesn’t touch the simmering water or you may scorch the chocolate. Stir gently until chocolate is smooth and glossy. Remove from heat and let cool slightly for 2 minutes.

Spoon melted chocolate into molds to cover truffles or drizzle chocolate across the surface. Place truffles back into the refrigerator for about 30 minutes to set chocolate. To serve, carefully remove each truffle from its mold. These treats taste wonderful with fresh strawberries or raspberries or you can enjoy one on its own. Store truffles in a glass storage container with a lid and keep in the refrigerator.

How to Choose & Approach Your New Doctor

Although you can get helpful guidance from the above organizations, make sure to find the right doctor for you – one who has the qualities you need. Here are some tips excerpted and condensed from The Do’s and Don’ts of Hypoglycemia: An Everyday Guide to Low Blood Sugar Too Often Misunderstood and Misdiagnosed by Roberta Ruggiero, founder and president of the Hypoglycemia Support Foundation.   • Choose your physician carefully – preferably not during an emergency situation.
  • When you call the doctor’s office, ask the person answering the phone, “Do you treat hypoglycemia, pre-diabetes or diabetes? How do you test for it?” (A 5-hour Glucose Tolerance Test could be helpful.)
  • Find out if your potential doctor offers nutritional counseling or can refer you to someone who does.
  • Learn the fee for your medical consultation and ask if the physician or practitioner accepts insurance.
  • Research your potential new doctor by asking people or doing research online.
  • Prepare a list of questions to ask, and don’t hesitate to ask them.
  • When you show up to see your new doctor, come prepared. Bring a diet/symptoms diary, which includes a list of everything you’ve eaten and medication(s) you’ve taken in the past 5 to 7 days. Make sure to jot down times you ate and any symptoms or reactions you had afterwards (within minutes, hours, or even the the next day.)
  • Write down any instructions you receive.
  • Discuss a complete prevention program.
  • Don’t let your doctor intimidate you. He or she is there to help you.

How to Find a Nutritionist

When searching for a knowledgeable nutritionist, make sure to ask questions ahead of time to find out if the nutritionist or dietitian has experience working with sugar addicts, hypoglycemics, and diabetics. Before meeting or talking via phone with that person, make sure that he or she agrees that it’s best to avoid sweets or simple carbs as much as possible. In addition to checking the organizations listed below, you may be able to find a good nutritionist by getting a referral from your local health food store. Again, always first verify the person’s references and point of view.

Exciting news! As of this writing, my new book, I Blew My Diet! Now What?, is # 1 on Amazon in Weight Loss Diets. My book, which came out May 20, has held this position for several days, if not longer.

The reason I’m not sure of the exact timing is that amidst all my promoting activities — including attending the National Publicity Summit at which I met some 75 producers, podcasters, and other members of the media — I simply forgot to check the Amazon rankings!
