We are delighted to share the third newsletter of the AI Cookbook project, marking a major milestone: the completion of the AI Cookbook, a comprehensive 200-page resource featuring more than 60 practical AI-powered learning recipes for educators working with migrant and refugee learners.
Developed and tested by partners across Europe, the Cookbook combines pedagogical innovation, inclusion, ethics, and accessible AI tools to support meaningful learning outcomes. Following a successful workshop in Athens, the project now moves into the translation phase, making these resources available in multiple European languages and extending their impact to VET and school education.

]]>Following a successful kick-off meeting in Berlin, project partners have been researching the opportunities and challenges of using AI in migrant education. Early findings highlight AIβs potential to personalise learning, enhance language practice, increase accessibility, and support educators in creating engaging learning experiences. At the same time, the project is addressing important issues such as digital skills gaps, access to technology, and the ethical use of AI.
The next phase will deliver an AI & Pedagogy Report, an AI Engagement Methodology, and an Inventory of Best Practices and AI Tools, providing educators with practical guidance for integrating AI into teaching in an effective, inclusive, and responsible way.
