This delicious Peruvian dish is prepared in three stages:
Put everything to boil at medium-high heat for about half an hour. Take out the chicken and let it cool, throw away the veggies and save the water for later. Shred the chicken.
Put everything in the mixer and mix until smooth
Heat a pan with the oil, onion, and garlic until the onion is transparent (5 minutes).
Add the chicken and aji amarillo and revolve for a minute. Add the cream and cook until it almost boils moving constantly. If it becomes too thick, add more chicken stock.
Towards the end, add the turmeric and revolve well.

Soak the bread in the milk for about ten minutes. Pour the bread with milk in a pan, add the sugar and start the heat at low for ten minutes, moving constantly. Once the bread starts loosing its form and break apart, add the eggs (and break the yolks immediately), the butter, the cinnamon, the salt and vanilla, and stir well. Pour into a rectangular greased mold and put into the oven (350F) for one hour.

Ingredientes1/4 taza Mantequilla
1 1/4 taza de harina
3 huevos
1/4 cucharita de extracto de vainilla
1/2 cucharita canela

Ingredients (dough):Pre-heat the oven to 350F.
Mix the flour, the salt and the butter with a fork. Then, add the yolks one by one and the water in small portions and continue mixing until all ingredients are one and the dough won’t stick to the hands.
Prepare a mincemeat with the meat, onions, peppers, raisins and olives. At the end add the chopped egg. Stretch the dough and cut pieces the size of a medallion. For this you can use cookie cutters or use your imagination (Have you tried to cut dough with your imagination before?
Place filling in center of the dough medallion and join the ends.
Place the empanaditas on baking tins and paint with yolk diluted in milk.
Put in the oven for 15-20 minutes.

Ingredients:Blend the corn and drain most of the water out with a fine strainer. If you are using fresh american corn (instead of peruvian corn), add a cup of Maseca Tamal to help with the consistency.
Fry the achiote to color the oil.
Throw away the achiote and add the onion. When the onion is golden brown (cooked), add the tomato sauce, the blended corn, salt, ground pepper and basil.
Add milk (if you are using peruvian corn) and cook the mixture until it is creamy. Form the tamales in the corn leaves and tie them closed with strips of the same leaves.
Place in a large pot in salted water and boil for a half hour (one hour if you used Maseca Tamal).
