Peel your cucumbers if they are waxed. The skin of a cucumber is coated in a protective wax. While you can eat this coating without much problem, the wax will distort the texture of cucumber juice.
Slice off the ends of your cucumbers using a sharp knife. The bottom and top stem are hard, inedible parts that you should not attempt to turn into juice.
Chop the cucumbers into large chunks. The pieces can be up to 1 inch (2.54 centimeters) in height, width, and depth. Smaller pieces will also work, but you should avoid using pieces that are much bigger than that.
Place the cucumber chunks into a food processor or blender. You should leave a couple of inches in between the top cucumber pieces and the rim of the machine. Do not fill the food processor to the top.
Blend the cucumber pieces on medium or high speed. Run the machine for approximately two minutes. The mixture should be pulpy, but it does not need to be smooth.
Place a mesh strainer over a large bowl.
Place cheesecloth inside the strainer. The cloth will allow you to strain out more pulp. You can also line the strainer with coffee filters to create the same effect.
Slowly pour the blended cucumbers through the strainer. Pour as much of the cucumber puree into the strainer as possible without causing the puree to overflow.
Stir the puree with a rubber spatula or metal spoon, occasionally pressing down into the cheesecloth or mesh. By stirring the cucumbers, you encourage the juice to seep out and flow through the strainers, into the bowl. Continue stirring and pressing until no more juice comes out. Or just let sit overnight.
You can store fresh cucumber juice in a sealed container inside the refrigerator for one week.

Charred, sweet and savory with a tender interior, this is about as good as salmon gets.
DIRECTIONS
Whisk together miso, sake, soy sauce, oil, and sugar.
Rub mixture over every surface of salmon fillets.
Transfer to a plastic zipper lock bag or sealable container.
Proceed immediately to next step, or for best results, marinate for about 30 minutes or up to 2 days.
Preheat a broiler (toaster oven or regular oven) to high. Cover a small broiler pan with aluminum foil.
Rub excess marinade off of salmon and place on broiler pan.
Broil until top surface is well charred and salmon is barely warm in the center, about 5 minutes, using the foil to protect any areas that threaten to burn.
Serve immediately.

For a delicious and festive holiday drink you can make quickly, simply combine the ingredients in advance and shake them up when guests arrive.
DIRECTIONS
Place the cranberries and 2 tablespoons water in a small bowl, cover and microwave for 30 seconds. Set aside until completely cool, about 15 minutes.
Meanwhile, combine the cranberry juice cocktail, vodka, Triple Sec and ice in a large cocktail shaker, put the lid on and shake for a full 30 seconds. Place a tablespoon of the cranberries in each of 2 martini glasses and pour in the cocktail mixture.

Cranberry Infused Vodka

Rinse the cranberries thoroughly under cold water
In a food processor, pulse cranberries until they are big chunks
Place chunked cranberries in a wide mouthed jar and pour vodka into the jar over the cranberries. Be sure to completely cover them.
Cap the jar and give it a good shake. Store on the counter and shake every day for five to seven days.
Line a strainer or sieve with cheesecloth and place it over a large bowl. Pour the contents of the jar over the sieve and throw away the cranberries
Pour cranberry infused vodka in a large bottle with a lid or smaller jars with lids
NOTESS
Do not think you have to sweeten this cranberry infused vodka. There is absolutely no reason to do so. The mistake that people make is thinking that just because cranberries are tart, they need to balance them out in the vodka instead of when adding sweetener to the cocktail that you will make with it. See the difference?
Use the freshest cranberries you can find.
Use a food processor but only process 3/4 of the cranberries, leave the rest whole.
Do not eat the cranberries after they’ve been soaking in vodka because all you will taste is vodka.
You don’t need to use premium vodka, though you can. I use Absolute as it is a solid budget brand.
Buy some fine mesh cheesecloth to strain the cranberries out of the vodka. If you don’t have cheesecloth, a non-bleached coffee filter will work, although it will take longer for the vodka to strain through the filter. You could also use a sturdy paper towel, but I wouldn’t recommend it as most paper towels are bleached to make them white. Getting a fine mesh strainer is also a good alternative.

Cut tofu into 1 inch cubes. Drain well on paper towels.
Put hot sauce, soy sauce, and white miso paste in a blender with 3 chopped scallions and garlic cloves. Blend with 1/4 cup water until smooth.
Marinate tofu overnight in the sauce.
Soak skewers in lemon water, at least 30 minutes.
Cut remaining scallions into 1 inch pieces.
Thread tofu onto skewers alternating with scallion and cherry tomatoes. Shake off excess sauce as you thread; keep for basting.
Grill tofu 3-5 minutes, brushing with sauce. Or cook under the broiler in an oven. Cherry tomatoes should be on the edge of bursting.

These are great served at a cocktail party or a garden party, passed around on a platter with small demitasse spoons. They’re bright yellow and taste of citrus with the unmistakeable anisey twang of Herbsaint. Herbsaint is a New Orleans creation that debuted right after the repeal of Prohibition, crafted to take the place of outlawed absinthe and imported Pastis.

Pour 1/2 cup of cold water into a small bowl, sprinkle the gelatin on top, and set aside.
Bring the sugar and an additional 1/2 cup of water to a boil in a small saucepan and immediately turn off the heat.
Stir the club soda, lemon juice, and Herbsaint together in a medium bowl.
Stir the gelatin mixture into the warm sugar water, whisk until dissolved, and then pour into the bowl with the club soda, stirring to combine.
Pour the mixture into an 8-inch-square baking dish or small shot glasses, cover with plastic wrap, and refrigerate until set, about 3 hours or overnight.
Set a glass with hot water on your work surface. Dip a paring knife into the hot water and use it to cut the pan of jelled Herbsaint into 1-inch squares. Place a burner on low heat and hold the baking dish over the burner for a split second to release the cubes from the pan. Invert the pan onto a cutting board or platter; the cubes should pop right out (if serving the Herbsaint Poppers in shot glasses, serve as is with a small spoon.)
NOTES
Store the poppers in the refrigerator in an airtight plastic container or in the baking dish covered with plastic wrap for up to 1 week.
